Grilling Ribeye And New York Strip Steaks

Rastelli’s (6) or (12) 9-oz Black Angus Ribeye Steaks on QVC

Both ribeye and NY strip steaks are excellent when cooked over fire or smoke. The seasoning should be kept simple due to the rich beefy flavor of these steaks. I like grilling high quality beef steaks over charcoal, but you will get great results with gas as well.

Cooking to medium rare at 130°F is really perfect. If you prefer medium well, cook to an internal temperature of 150°F.

There are two methods of grilling premium steaks. One is the two-zone method and the other is the direct grill method. We like the two-zone method for ribeye steaks and direct grilling for NY strip steaks. Well explain both in the recipes.

Is Sirloin Or Rib Eye Healthier

Most red meat is loaded with vitamins and minerals that are excellent for heart health and other body functions. Red meat is a significant source of protein, which is necessary for muscle health, and both of these steaks are loaded with protein in each serving. Steak is also a good source of Vitamin B12, Vitamin B6, iron, phosphorus, and zinc vitamins and minerals your body needs every day to work its best.

Where the problem lies with steak is that most people tend to eat more than one serving, which is just 3 ounces. The more helpings you eat in one sitting, the more calories and fat youre consuming . Steak has quite a bit of saturated fat, especially in fattier pieces, like the ribeye. Because sirloin steaks have less fat content than a ribeye, its safe to say that the sirloin is the better option if youre following a low-fat diet.

How To Cook Prime Ribeye Steak

Prime ribeye steak tastes best when cooked just to the point of juiciness, between rare and medium. This is usually accomplished by searing both sides of the meat on super high heat. There is no need for fancy ingredients all you need is ribeye steak, oil, seasonings, and some butter for perfection.

Ingredients:

  • ¼ tsp ground black pepper

Instructions:

  • To begin with, pop a cast-iron skillet in the oven while its preheating to 450 °F.
  • Meanwhile, rub the meat with your preferred oil on both sides and season it with salt and pepper. Once the oven is hot, carefully transfer the empty skillet to the stovetop over moderate heat.
  • Next, place the meat in the pan. Sear for a couple of minutes before flipping and topping with semi-crushed garlic and thyme.
  • Return the skillet to the oven for about 6 minutes more.
  • Pop the pan back on the stovetop, this time reducing heat to a minimum. Flip the meat before drizzling it with butter. Carefully tilt the skillet while continuously coating the steak with the contents of the pan. Cook until an internal temperature of 120 °F for medium-rare .
  • Let rest for a few minutes. Before serving, coat the ribeye steak with browned butter from the skillet.

How To Cook Ribeye Steak In The Oven

    • Rinse and pat the steak As with any raw meat, I always rinse and pat my ribeye steaks dry with a paper towel.
    • Season the steak Now drizzle a generous amount of olive oil over the rib eye steak and massage the pressed garlic over the entire steaks. Now season them with your favorite steak seasoning. I love using Webers Chicago steak seasoning for this rib eye steak recipe.
    • Pan sear and finish in oven Sear each side of the rib eye steak in the cast iron pan then finish them off in the oven with a slice of butter on top.

    Other Names For This Steak

The name tomahawk is rather fitting, due to its tomahawk ax-like appearance. Just like many steaks and cuts of meat, this mouth-watering goodness also has a few other names:

    • Rib Steak Since this steak comes from the rib primal and still has the bone attached, its only natural that itll be referred to by this name.
    • Cowboy Steak Once you shorten the bone on a tomahawk steak, it is then classed as a cowboy steak .

Chances are, your butcher will know what this steak is.

    Are These Steaks Worth It

Beauty is in the eye of the beholder, and in this case, the steak-holder. If you want to look at the steak from a technical point of view, that big bone marrow doesnt add to the flavor of the meat.

Whether you plan to grill or cook up your ribeye at home or dine out at restaurants, youre paying a lot more for the presentation vs what youre actually going to taste.

The biggest joy of this impressive steak is how it looks. If youre an Instagram foodie or youre looking to throw a caveman-themed BBQ, then you may happily be willing to pay this price.

What Is Better Ny Strip Or Ribeye

The main difference between a ribeye and a NY strip is that the ribeye has more internal marbling or fat. The New York Strip has a thick band of fat running down one side that you cant really eat. The Ribeye is a great choice if you are looking for a tender steak with plenty of flavor and a buttery smooth texture.

Dry Aged Ribeye From Porter Road

Rastelli (12) or (24) 5.33-oz Reserve Ribeye Steak Burger on QVC

Sometimes you may want to treat yourself or loved one to the best.

If you are looking for a truly delicious ribeye experience, might I suggest you check out the dry aged steaks from my good friends at Porter Road. I got to meet one of the co-founders James Peisker in Nashville and loved his passion for offering the best meat while making an impact in the life of small farmers.

Their ribeye comes from pasture raised cows and has great marbling and a beautiful fat cap. I couldn’t imagine a finer looking ribeye.

This is THE steak you want to splurge on for your special occasions. The one with the “wow” factor. Choose bone-in for $36/lb or boneless for $39/lb .

What Is A Good Price For Ribeye Steak

Find out what is a good price for a ribeye steak. Is it really an expensive steak that most people can afford or can you source a good deal? See list of what popular grocery stores charge for Ribeye steaks.

I think it’s safe to say John Wayne ate steak.

These are the famous first words uttered by Mr. Alton Brown in the very first moments of television’s greatest show of all the times – Good Eats.

OK. I know a lot of you are rolling your eyes and thinking of a handiful of shows that better belong among the greatest. For me, Good Eats has had the biggest impact of any show on my life. I may not be writing a food blog right now if it wasn’t for Alton and his cast of characters and puppets.

Back to the point. Today we are talking about steak.

The very same steak that was the topic of that first ever Good Eats episode – the Ribeye. I love a Ribeye steak. Ribeyes are flavorful, tender, and juicy. Very hard to beat good rib eye steaks.

I don’t eat Ribeye a lot. Why? They aren’t cheap eats. It’s more of a special treat thing – the kind of meal I save for a day like father’s day, the first cook-out of the year, bringing home a baby from the hospital, any kind of momentous day can be a Ribeye day.

Supermarkets Say Shoppers Are Seeking Out Lower

Americans are cutting back on steak as rising grocery prices squeeze spending.

Supermarkets say shoppers are buying more store-brand meat products and trading down from beef to less-expensive alternatives such as chicken or pork, after prices for products such as rib-eye climbed about 40% from a year ago, according to research firm IRI. Some consumers are replacing boneless chicken breast with cheaper bone-in chicken, retailers said.

Best Wine Pairing With A Tomahawk Ribeye Steak

A full-bodied, moderately robust wine like a Cabernet Sauvignon is recommended for such a highly marbled steak.

We might suggest a young Cabernet Sauvignon, or one that is equally agreeable through its maturity like a wine from Napas Caymus Vineyards. Other suitable brands include a Newtown 2013 Unfiltered Napa Valley, Canvasback 2013 Red Mountain, and J. Lohr Hilltop Paso Robles.

Our award-winning wine list has a wide variety of bold Cabernets available by the bottle or glass, so feel free to ask one of our servers for a particular recommendation – or test your own taste and select a variety yourself.

If you prefer a lighter, more gentle red variety, a Pinot Noir would also be a great fit. Other suitable alternatives to a Cabernet would be a Zinfandel or a nice Malbec from Chile or Argentina.

Tips For Making Steak Tender And Juicy

For cooking center-cut steaks on the grill, stove or oven, here are some tips to ensure tender steak every time:

    • Choose thicker steaks for maximum tenderness.
    • Use room temperature steaks for even cooking, especially for thicker cuts.
    • Pat dry the steak before cooking to help get a good sear.
    • to help tenderize the meat.
    • Cook thick cuts on indirect heat and finish on direct high heat .
    • Use an instant-read thermometer to check internal temperatures and avoid overcooking.
    • Rest your steak for 5-10 minutes covered with foil or a plate after grilling, allowing juices to retreat back into the steak for maximum tenderness.
    • Cut against the grain when serving.

How To Cook A Tomahawk Steak On A Grill Or Smoker

Looking to cook a tomahawk steak? Look no further.

Since the steak is so big, when it comes to cooking methods, we need to slowly apply heat rather than sear it straight off. We wouldnt want burnt edges and a raw inside.

Many people choose to oven cook or skillet their meat, but in my experience, that isnt the best heat method available. Popping your tomahawk ribeye on the grill will do wonders for the flavor.

Their thickness makes it all too easy to end up with a burnt exterior and a cold, raw middle A prewarmed steak will sear much faster, minimizing the amount of overcooked meat under the surface.

    The Food Lab, Kenji Lopez-Alt

Take a look at our grill cooking process:

  • Give your steak piece 1 or 2 hours outside of the fridge. Depending on the size of the meat will determine how long it needs to adjust to the room temperature. Pat dry and add the seasoning.
  • Light the coals inside your chimney. Once theyre at a good temperature, slide them to one side of the grill. This should leave one side empty, where you can place your steak on the grate above.
  • Every 5 minutes, flip your steak. This includes the sides too.
  • Use your meat thermometer to check the inside after 15 minutes. Once the temperature has reached 115 120 F, pull it off the grill and cover it in foil. Leave to rest for 15 minutes.
  • Now its time to sear. Add more coals to your chimney to bring the temperature heat up. Leave the grate for 3 to 5 minutes, and once hot, place your steak above the coals.

    Are Ribeyes Expensive

Ribeye is a little expensive than sirloin most probably because of its rich marbling, hence tender feeling. Because of its rich marbling and leaner texture, the ribeye has higher chances of being rated USDA prime cut, something that makes it a little expensive. However, several factors may affect the price of a steak.

    What Is A Sirloin

When you consider the difference between ribeye and sirloin steaks, its important to note that sirloin refers to a large cut of steak that gets cut into several other types of steak. Sirloin comes from the back of a beef animal, behind its ribs but ahead of the rump area. This same area is where T-Bone and top sirloin cuts originate. Sirloin cuts are often the leaner parts of a steak, with high protein and low fat content.

Although they taste delicious, cuts of sirloin arent quite as robust in flavor as a ribeye because of their lower fat content, and they wont have the same tender texture, either. The sirloin might be a lean cut of steak without as much marbling compared to the rib eye, but its anything but dry. Top sirloin is one of the most beloved sirloin cuts, with bones and tougher muscle removed for a more tender and juicy steak.

However, bottom sirloin also has a place in the steak world. While you wont see it as much for sliced steaks in a steakhouse, it is perfect as a roast requiring several hours of slow cooking, as its much tougher than top sirloin because of the muscley area its in. Tri-tip is an area of the bottom sirloin that people love to eat after slow cooking in its own juice. Add tri-tip atop some mashed potatoes drizzled with gravy, and youll have a hearty, satisfying meal.
