Is It Better To Grill Or Pan Sear Wagyu Steak
In a perfect world, you would use both. By that I mean pan sear the steak in a cast iron pan heated on the grill. I dont recommend putting a wagyu steak directly over the flame on the grill. Theres way too much fat in wagyu beef to grill it without some major flare ups.
Those flare ups are caused by the fat dripping onto the flames and you dont want to lose any of that amazing wagyu beef fat flavor to your fire. Instead, you want your steak to cook in its own rendered fat.
Can this be done on the stove top? Absolutely, but that brings drawbacks namely the mess it will create due to the fat popping all over your stove. Add to that, your house is going to smell like a meat candle for a day or so. So, if you can use the grill, I recommend that.
If a grill isnt an option, a griddle surface can be used as well. Outdoor griddles are very trendy these days and make a great cooking surface for cooking a wagyu steak.
Prep: How To Store Wagyu Prior To Cooking
Before proper cooking technique comes proper storing technique. Knowledge of the storing process is just as critical as the entire cooking process. Nobody desires freezer-burnt, sinewy meat. Wagyu beef is meant to be tender to the touch, so be sure to store it correctly to maintain optimum freshness. If youve ordered your meat online, then it should have come frozen, or at least partially-frozen.
You can either choose to thaw the beef out in your refrigerator or refreeze the beef in their sealed-packaged bags . When you thaw the meat, leave the cuts in their sealed packages and allow hours of thaw time based on the pounds purchased. Once the beef is thawed, leave it outside the fridge for about an hour prior to seasoning and cooking.
How To Make Steak Seasoning

Although you can adjust the ratio of each spice to suit your taste, I advise you to follow these measurements, taste, and adjust afterward.

Imagine being told that more than a thousand dollars worth of beef was about to land in your lapsome of the world’s rarest and most sought-after steak, including the famed Japanese “Snow Beef” of Hokkaido and true wagyu from Kobe. Now imagine eating all of that prized beef. Amazing, right?
Nope. It was awful. I mean, the beef wasn’t awful the beef was stupendous. But not eaten like that, in one sitting. Not in those quantities.
There’s a video of our tasting, but we’re not going to show it to you because it’s too hard to watch. The effects of the beef hit us early and hard, right after the first round of steaks came off the plancha, with five more rounds still to go. Our energy levels dropped, our jokes became even more forced and less funny, our cheeks became flushed, and our bodies groaned under the oppressiveness of all that fat.
And this gets right to the most important lesson about indulging in real-deal, highest-quality, ultra-fatty Japanese wagyu: You can not, you should not, you must not eat a lot of it. We did it because we had to. No one should make the mistake of doing it voluntarily.

Why Is Wagyu Beef So Expensive
One of the main factors that makes the Wagyu Beef so expensive is the effort and work required to grow and produce such kind of beef.
The difference of Wagyu Beef with other common beef is the selection, care, feeding and obsessive efforts of Wagyu breeders. They can create special feeds out of grasses, forage, rice straw, corn, barley, soybean, wheat bran and sometimes even beer or sake.

Wagyu Beef Marbling
All this effort and breeding methods from the breeders turn out to produce a high marbling beef.
Wagyu fat can easily melt at lower temperatures compared to other cattle’s beef, giving it a very rich, buttery flavor, very different from other kind of beef.

How To Serve Wagyu Steak
Very simply. Season the steaks with salt, maybe finish them with a little more salt afterwards let the meat speak for itself.
For the Japanese A5 wagyu, plan to serve about one to two ounces of meat per person. That means a 13-ounce steak can feed anywhere from six to 12 people! If you’re interested in setting up a flight to compare the steaks, you’ll want more tasters present. As we found, it became increasingly difficult to appreciate the subtleties between the Kobe and Hokkaido Snow Beef because we were drowning in too much cow. If you don’t keep portions limited, you’ll find it similarly difficult to appreciate your investment.
If you don’t have that many tasters available, and if you can’t get smaller portions of A5 Japanese wagyu from your vendor, you’ll want to divide up your steaks into smaller pieces, only cooking a little at a time and keeping the rest frozen. Even if your wagyu arrives frozen, the good news is that its high fat content makes it easy to divide while still frozen, just like fatty pork. You may need to let it soften just a bit, but there’s no need to defrost it fully before cutting it into smaller pieces. Then tightly wrap or vacuum seal the pieces you won’t be cooking right away in individual portions, and save them for later.

How Should I Cook My Wagyu Steaks
Get a grill you can trust know your hot spots, cool spots, flare zone, etc.
When steaks get ruined, its usually because of poor fire and heat management. If grilling on a standard propane grill, run it as hot as you can and make sure it is clean to minimize flare ups because Wagyu will drip fat as it cooks. If on a higher-end gas grill or charcoal grill, shoot for the 500°F range at the grate level . You can cook steaks on a pellet grill but we recommend using a cast iron griddle or Grill Grates with your pellet grill to help give the steaks surface more bark and texture.
For a 16oz ribeye, a good rule of thumb is about 4-5 minutes per side at high heat, or 8-10 minutes total for medium rare / medium. A 12oz steak should be 6-7min total but remember that the best way to judge time is by thickness. The thicker a steak is, the longer it will take. So a 2 filet that is 8oz may take longer than a 1 chuck eye thats 10oz. And time is only a rule of thumb to help you out because:
You can ONLY cook the perfect steak by internal temperature.
We know your uncle told you about touching the steak and comparing it to your palm, but that doesnt work. You can cook a Wagyu steak to well done and it will always feel rare because it is tender. Invest in a good instant read thermometer instant not quick, 1-2 seconds is all it should take for an accurate read. We recommend Thermapen dont bother using anything with cords, you will burn your hands!
How Do You Bbq Wagyu Steak
If youre going to cook your Wagyu steak on a BBQ, then your first step will be to remove your steaks out of the refrigerator before you begin cooking them as they shouldnt be put on high heat straight from a cold environment.
Youll want to get your BBQ going now so you can give it some time to heat up to the required temperature.
Then youll want to rub in the salt and pepper into your Wagyu steak to your desired taste. If the Wagyu is a thicker cut, then you might want to use a bit more salt than normal. Dont forget to season the edges of your steaks.
We recommend using fine kosher salt for seasoning as itll absorb quickly into the meat before you begin cooking and give the steak a rich flavor.
When the BBQ is heating up, place your steak down onto the surface, but not directly next to or on top of the flames, and then place the lid on, making sure the lid vents are open where the steaks are placed.
Once your internal temperature of the BBQ has reached 120 degrees, remove the steaks from the grill and let them rest for 10 minutes whilst you get the coals super hot.
Then when its hot enough, place your streaks back onto the BBQ directly on top of the flames and sear the steak on each side for 30 seconds before removing them from the heat and letting them rest before serving.
