Is A Tomahawk Steak Worth The Money

From a financial standpoint the Tomahawk is the biggest waste of money in the world of steak. This is a tricky cut to find and you will pay a premium when you find it.

The steak I cooked for this Reverse Seared Tomahawk Steak recipe weighed 3.5 pounds and, at a price of $16 per pound, cost me almost $60.

When you do the obvious math it gets even worse.

The bone in my 3.5 pound steak weighed about a pound which meant that I only got about 2.5 pounds of meat on the Tomahawk. This means that I was paying closer to $22 per pound of meat which is almost twice the cost of a regular ribeye.

The absolute only reason you should ever grill a Tomahawk steak is if you want to put on an awesome display. If you are just looking for a great steak to feed your family and friends then stick with regular ribeyes.

What Is The Best Way To Cook A Tomahawk Steak

How to cook the perfect Tomahawk steak. Prepare your grill. Youre going to be using a two-zone heat method here, which sounds way more complicated than it actually is. Prepare & season the Tomahawk. Set up your two zone heat and start the cook. Flip the meat regularly. Check the temperature. Rest before sear. Sear your Tomahawk. Slice, and enjoy.

When cooking steak, especially one that costs north of $100, a meat thermometer is essential. I recommend an oven probe that beeps when the target temp is hit. They can be really cheap,wireless app driven, or something in between. Personally I always go with the cheap option. If all you have is an instant read, be sure to check often to make sure the steak doesnt get overcooked.

This one definitely needs a meat thermometer but also produces the best flavor in my opinion, espcially if doing charcoal. Move your coals to one side, or if using gas, only light up one side of the grill. Leave your steak as far away as possible from the coals or the burner on the other side of the grill and close it. Flip once in awhile to make sure youre getting even heat.

Are They A Total Scam

Youre inevitably going to hear from someone that tomahawk steaks are a total scam, pound-for-pound overpriced, and that youre just paying for a bone. Its not totally wrong: a tomahawk steak absolutely goes for a premium over a regular bone-in ribeye steak at a restaurant. And, yes, they do taste more or less the same as a bone in ribeye.

But any thick cut steak also often goes for a premium over a smaller steak of the exact same kind. Fewer people buy them, and that raises the price. I love tomahawk steaks because their popularity means theyre so much easier to come by than a good 2.5 thick cut bone-in ribeye.

If youre making them at home, the price premium is much smaller and makes sense for a special home celebration or weekend meal. The moment you pull out out that giant tomahawk steak for the grill, everyone instantly smiles.

You can cook a tomahawk steak just like a normal one, the most important factor is to make sure its well tempered so youre getting the inside up to temp fast enough before the outside burns. Its much better to get the inside right up to medium rare so you can sear without worrying. There are a bunch of ways of doing that, here are my favorites.

Reverse Searing Your Tomahawk Steak

  • If you are using a gas grill, bring one of the burners, but not all of them, up to medium-high heat. If you are using charcoal, heap your coals over to one side of your grill to create a hot zone and a cool zone.
  • Season your Tomahawk Steak to taste, bearing in mind that some of that seasoning is going to shed onto your grill.
  • Put your Tomahawk Steak onto the cool side of the grill and let the indirect heat start to cook it.
  • Use your ever-handy meat thermometer to keep an eye on the temperature of your steak.
  • Once it reaches a temperature that is about 15-20 degrees away from your desired level of doneness, move it over to the hot side of your grill and turn it every 30 seconds or so to keep the cooking temperature even.

But if you want high quality at a lower price per pound, aren’t worried about dealing with excessive quantities, obscure origins or blade tenderizing and you can get in to shop at a Costco, then make haste to their meat department.

    How To Cook A Perfect Tomahawk Steak

    Cooking this steak cut at home might daunting due to its size, but it’s easy enough to pan-sear it and finish in the oven if you follow these steps:

  • Preheat your oven to 425 degrees.
  • Season the steak liberally with salt and pepper while it comes to room temperature on your counter.
  • Wrap the bone with aluminum foil.
  • In a large cast iron skillet, heat oil over medium-high heat just until it starts to smoke. Add steak to skillet and sear for about 2 to 3 minutes per side.
  • Transfer steak to baking sheet and place in oven. Roast for 7 to 10 minutes, or until it reaches desired doneness .
  • If desired, while the steak cooks, add butter, fresh thyme and garlic to the skillet and cook on low for about 2 minutes. Return steak to skillet and baste with butter and garlic.
  • Transfer steak to a cutting board and let rest for about 10 minutes before slicing against the grain.
  • After dining, don’t forget to save the bone. You can use it in soups or to make beef broth for future meals. Leftover steak is also great for other meals like beef Stroganoff or a breakfast steak and eggs.

    So is the tomahawk worth all the hype and the high price tag? It just depends. If you don’t mind dropping that much cash for a ribeye, by all means, go for it. Just know that pound-for-pound, you’re paying mostly for presentation. If you don’t care much about that, just stick with a bone-in ribeye and call it a day.

    USDA Prime and Certified Angus are both easily as good, if not better, so theres no need to hunt any specific cow down. With any steak, even and consistent marbling is often a great sign of how good that steak will be. Grass fed is better than Grain or Corn fed/finished, as well, in my opinion.
