Background On My Meat Knowledge

Much of my meat knowledge has come from reading the Niman Ranch Cookbook. Besides having amazing recipes it has a lot of information on everything you wanted to know about meat and how it is produced.

I cannot recommend this book enough. It changed the way I looked at meat and helped me turn out some mouth watering meals in my kitchen. If you are interest in some really top notch beef and other meat recipes, I highly recommend picking up the Niman Ranch cookbook.

Is A Tomahawk Steak Worth The Money

From a financial standpoint the Tomahawk is the biggest waste of money in the world of steak. This is a tricky cut to find and you will pay a premium when you find it.

The steak I cooked for this Reverse Seared Tomahawk Steak recipe weighed 3.5 pounds and, at a price of $16 per pound, cost me almost $60.

When you do the obvious math it gets even worse.

The bone in my 3.5 pound steak weighed about a pound which meant that I only got about 2.5 pounds of meat on the Tomahawk. This means that I was paying closer to $22 per pound of meat which is almost twice the cost of a regular ribeye.

The absolute only reason you should ever grill a Tomahawk steak is if you want to put on an awesome display. If you are just looking for a great steak to feed your family and friends then stick with regular ribeyes.

Where To Buy Tomahawk Steaks

Tomahawk Rib Eye Steak

Lets start with some truth: Tomahawk steaks are ridiculous and paying that much for a lot of bone is a waste of money. But you know what? There isnt a steak on the planet that will look more impressive on your plate than a tomahawk steak. If you have wanted to try a tomahawk steak or give one for a gift your main problem is probably where to buy tomahawk steaks. Unless you have an epic butcher counter at your local grocery store you are out of luck buying local but luckily there are some great, reputable online retailers where you can buy tomahawk steaks.

The Importance Of A Meat Thermometer

When cooking steak, especially one that costs north of $100, a meat thermometer is essential. I recommend an oven probe that beeps when the target temp is hit. They can be really cheap, wireless app driven, or something in between. Personally I always go with the cheap option. If all you have is an instant read, be sure to check often to make sure the steak doesnt get overcooked.

How To Cook Steak On Grill

This one definitely needs a meat thermometer but also produces the best flavor in my opinion, espcially if doing charcoal. Move your coals to one side, or if using gas, only light up one side of the grill. Leave your steak as far away as possible from the coals or the burner on the other side of the grill and close it. Flip once in awhile to make sure youre getting even heat.

Are They A Total Scam

Youre inevitably going to hear from someone that tomahawk steaks are a total scam, pound-for-pound overpriced, and that youre just paying for a bone. Its not totally wrong: a tomahawk steak absolutely goes for a premium over a regular bone-in ribeye steak at a restaurant. And, yes, they do taste more or less the same as a bone in ribeye.

But any thick cut steak also often goes for a premium over a smaller steak of the exact same kind. Fewer people buy them, and that raises the price. I love tomahawk steaks because their popularity means theyre so much easier to come by than a good 2.5 thick cut bone-in ribeye.

If youre making them at home, the price premium is much smaller and makes sense for a special home celebration or weekend meal. The moment you pull out out that giant tomahawk steak for the grill, everyone instantly smiles.

When we ordered our first tomahawk, we were so in love that we asked the waiter if we could take it out of the dark restaurant to take a photo with it. As we all know, love makes things taste better.

Can You Sear It On The Stove Instead Of The Grill

Yes, absolutely, especially if you use a cast iron skillet. The issue there is that these babies are pretty large with the bone extending out, and a grill has a lot more surface area to ensure you get a good sear. If you decide to go forth and use the stove, be sure you preheat your pan over high heat.

How Does The Price Of A Tomahawk Steak Compare To A Normal Ribeye

How much you are paying for your Tomahawk Steaks depends on the quality of the beef you are buying and who you are getting it from.

However, you should expect to pay up to three times more than your normal bone-in Ribeye.

The Chicago Steak Company is selling two USDA Prime dry-aged Tomahawk Ribeyes for $239.95 when you can get four USDA Prime dry-aged Bone-in Ribeyes for $274.95.

DeBragga will sell you a pair of dry-aged Prime Tomahawk steaks for $285.00, which is more than their Culinary Olympics winning 24oz Miyazaki Wagyu Ribeye.

While it might seem like that is a reasonable increase when you are moving from a 24-ounce Ribeye to a 40-ounce Tomahawk, it is essential to bear in mind that a lot of that weight is going to be bone and not meat.

You can expect to spend an average of about $100 on a quality Tomahawk Steak, and the reality is that around $50 to $80 of that is paying for a considerable length of bone and a more Instagram ready steak.

Another reason why its so expensive? The rib cage muscles where the ribeye steak is cut from are barely used by the cow. That means the meat is incredibly tender and rich in flavor. The most common places to get a tomahawk steak would be at your local steakhouse or butcher.

How To Store And Reheat

Does your Costco mechanically tenderize prime steaks too ...

Cover and refrigerate leftover steak for up to 4 days. Its always best eaten the day you make it, but if you do end up with leftovers, make sure you reheat it gently. Ill often just let it come to room temperature and call it a day, but you can add it to a preheated skillet on medium-low heat just to warm it.

How To Cook Tomahawk Steak

You can cook a tomahawk steak just like a normal one, the most important factor is to make sure its well tempered so youre getting the inside up to temp fast enough before the outside burns. Its much better to get the inside right up to medium rare so you can sear without worrying. There are a bunch of ways of doing that, here are my favorites.

Reverse Searing Your Tomahawk Steak

  • If you are using a gas grill, bring one of the burners, but not all of them, up to medium-high heat. If you are using charcoal, heap your coals over to one side of your grill to create a hot zone and a cool zone.
  • Season your Tomahawk Steak to taste, bearing in mind that some of that seasoning is going to shed onto your grill.
  • Put your Tomahawk Steak onto the cool side of the grill and let the indirect heat start to cook it.
  • Use your ever-handy meat thermometer to keep an eye on the temperature of your steak.
  • Once it reaches a temperature that is about 15-20 degrees away from your desired level of doneness, move it over to the hot side of your grill and turn it every 30 seconds or so to keep the cooking temperature even.
  • Once your steak is about 5 degrees away from done, remove it from the grill and set it aside.

So Should You Buy Your Steaks At Costco

The answer is that famous cop-out that also happens to be true: Only you can decide!

If money is no object , getting your steaks and other meat from a trusted, skilled, local butcher is probably always the best bet. But if you want high quality at a lower price per pound, aren’t worried about dealing with excessive quantities, obscure origins or blade tenderizing and you can get in to shop at a Costco, then make haste to their meat department.

How To Cook A Perfect Tomahawk Steak

Cooking this steak cut at home might daunting due to its size, but it’s easy enough to pan-sear it and finish in the oven if you follow these steps:

  • Preheat your oven to 425 degrees.
  • Season the steak liberally with salt and pepper while it comes to room temperature on your counter.
  • Wrap the bone with aluminum foil.
  • In a large cast iron skillet, heat oil over medium-high heat just until it starts to smoke. Add steak to skillet and sear for about 2 to 3 minutes per side.
  • Transfer steak to baking sheet and place in oven. Roast for 7 to 10 minutes, or until it reaches desired doneness .
  • If desired, while the steak cooks, add butter, fresh thyme and garlic to the skillet and cook on low for about 2 minutes. Return steak to skillet and baste with butter and garlic.
  • Transfer steak to a cutting board and let rest for about 10 minutes before slicing against the grain.
  • After dining, don’t forget to save the bone. You can use it in soups or to make beef broth for future meals. Leftover steak is also great for other meals like beef Stroganoff or a breakfast steak and eggs.

So is the tomahawk worth all the hype and the high price tag? It just depends. If you don’t mind dropping that much cash for a ribeye, by all means, go for it. Just know that pound-for-pound, you’re paying mostly for presentation. If you don’t care much about that, just stick with a bone-in ribeye and call it a day.

    Seasoning Beef From Costco

What Prime Steaks (Beef) Can You Buy at Costco?

I could not end this post without taking a moment talk about seasoning. When it comes to beef there is nothing more important than salt. A great salt can really make your food extraordinary. Costco does sell salt but nothing that really stands out.

My favorite salts can be found from Thrive Market, which it is great site to use in junction with your Costco membership. Thrive has items that Costco doesn’t have and vice versa. Get an extra 25% OFF your first order + a 30 day free trial membership when you sign up at Thrive Market!

The best salts from Thrive Market include Redmond Real Salt, Light Grey Celtic Sea Salt, Maldon Sea Salt Flakes, and HimalaSalt Himalayan salt. A once a year or every 6 months stock up on various salts is a huge gain for your pantry.

    What Is American Wagyu

American wagyu is Japanese cows, hopefully Japanese Black Cows that are raised and pastured in America. They can be full-blooded or cross bred with other breeds. Ive had a lot of it and it can definitely range in quality from ordinary to amazing. Its a good signifier of quality thats come a long way from the 90s lies of Kobe beef everything.

USDA Prime and Certified Angus are both easily as good, if not better, so theres no need to hunt any specific cow down. With any steak, even and consistent marbling is often a great sign of how good that steak will be. Grass fed is better than Grain or Corn fed/finished, as well, in my opinion.

    Where To Buy Tomahawk Steak

You can buy tomahawk steaks in several places, and where you buy it determines how it is prepared. If you purchase it at your favorite steakhouse, a skilled chef prepares it for you. If you buy it from a butcher, you have to prepare it. No matter where you buy them, you should expect to pay a hefty sum.

Butchers sell them in their brick-and-mortar shops and online. These notable butchers sell them online:

The cowboy steak is a bone-in ribeye, just like the tomahawk. But it has a smaller frenched bone in it. Cowboys reportedly cooked this steak with the bone so they could use it as a handle while grilling it.

Both cuts have well-marbled meat with plenty of flavors. The cowboy steak is usually about half the weight of the tomahawk cut.
