Using A Grill And A Pan For Preparing Your Tomahawk Steak

This is another suitable way to prepare the Tomahawk steak, which starts by following the low and slow instructions from above, and then instead of placing the streak on the hot zone of the grill, to finish cooking it in a hot pan.

This is a good idea if you have set up your smoker to a low and slow setup and dont want to reset it to a high temperature for searing.

Here are the steps for this hybrid cooking of the Tomahawk steak:

  • Follow the steps for the low and slow cooking form above (following steps from 1 to 4, until the internal temperature of the steak has reached about 15-20 degrees Fahrenheit from the desired doneness temperature.
  • Set the steak aside.
  • Heat up a cast iron pan until it starts smoking from the high temperature. If possible, do this outdoors so that you dont fill your home with smoke.
  • Put the steak in the hot pan to start the browning reaction , and turn it over frequently to avoid scorching its surface.
  • When the steaks temperature reaches about 5 degrees from the desired temperature, remove it and set it on a wire rack with a tray or plate underneath to rest.
  • Let it rest for 5-10 minutes, so it finishes cooking itself and reaches the perfect doneness temperature.
  • Before you serve it, it is recommended that you heat up the sauce from your pan and the sauce from the plate or tray under the wire rack and drizzle it all over the steak.
  • Reverse Searing Your Tomahawk Steak

  • If you are using a gas grill, bring one of the burners, but not all of them, up to medium-high heat. If you are using charcoal, heap your coals over to one side of your grill to create a hot zone and a cool zone.
  • Season your Tomahawk Steak to taste, bearing in mind that some of that seasoning is going to shed onto your grill.
  • Put your Tomahawk Steak onto the cool side of the grill and let the indirect heat start to cook it.

    Cooking this steak cut at home might daunting due to its size, but its easy enough to pan-sear it and finish in the oven if you follow these steps:

  • Preheat your oven to 425 degrees.
  • Season the steak liberally with salt and pepper while it comes to room temperature on your counter.
  • Wrap the bone with aluminum foil.
  • In a large cast iron skillet, heat oil over medium-high heat just until it starts to smoke. Add steak to skillet and sear for about 2 to 3 minutes per side.
  • Transfer steak to baking sheet and place in oven. Roast for 7 to 10 minutes, or until it reaches desired doneness .
  • If desired, while the steak cooks, add butter, fresh thyme and garlic to the skillet and cook on low for about 2 minutes. Return steak to skillet and baste with butter and garlic.

    You can follow one of two avenues to prepare the cut using the oven the classic or the reverse sear techniques.

    Classic. Here the Tomahawk is hard seared in a skillet or on the grill after which its transfered to the oven to finish cooking to the desired temperature, rested and served.

    Reverse Sear. As the name implies, this method reverses the order of the steps. To reverse sear Tomahawk steak first it is cooked it in the oven, until its internal temperature reaches 100-110 F. Next it is seared over a hot grill or in a suitably sized skillet with cooking oil and/or butter until the temperature for the desired doneness is reached.

    NOTE: The best results are achieved when the oven is set at a lower temperature, we like 300 F, some people go as low as 225 F. However, in a restaurant setting when diners generally do not have the patience to wait for their food, oven temperatures are often set much higher Chris says that at the various restaurants he has worked at they regularly cook the steak in a 425-450 F oven.
