Blue Island gets their oysters primarily from seafood grower/diver and business partner, Chris Quartuccio who owns Blue Island Oyster Farm, on Long Island. Its one of the U.S.s top oyster and clam farms and distributors from its private oyster beds. You may have had their oysters and clams at a James Beard or Michelin-starred restaurant around the country. The restaurants owner, Sean Huggard, is devoted to responsibly-sourced, high-quality seafood that includes lobster, crab, and caviar. They have their own, private-label caviar and signature oysters like the Blue Island No. 9, Blue Devils, Mermaid Cove and others.
With the only meat on the menu being Filet Mignon Medallions at dinner and a burger slider at lunch, the focus is whole heartedly on seafood. Its brought in daily and freshness is key and obvious.

Fine by us because that meant we could try a variety of things and not stuff ourselves to the gills . The dinner menu offers plenty of shareables but has more items that could be considered entrees like a Scottish Salmon Oscar, Paella, and grilled fish.
