How to Marinate a Steak

When it comes to choosing the best steak for grilling, look for a tender cut of beef. The most tender cut is beef tenderloin, also called filet mignon. The filet comes from an underused muscle in the beef, so it has very little fat or connective tissue. It cooks up very quickly, and it takes well to marinades. Another grilling favorite is the ribeye steak. This steak has plenty of fat and marbling, which protects it from drying out as it cooks.

You don’t have to go with an expensive steak, either. Top sirloin the steak we cooked to test this 3-ingredient steak marinade recipe is inexpensive and it has a great, beef-forward flavor. Other steaks that take well to acidic marinades like this one include flank steak and skirt steak. These steaks have more connective tissue than traditional grilling steaks, but they cook up quickly and become tender when marinated for up to 12 hours.

How To Cook The Steaks In A Skillet

If you dont have a grill handy, you can also cook these steaks in a hot skillet on the stove. I recommend a cast iron skillet, if you have one, but if not, any heavy-bottomed skillet will work.

  • Place the skillet on the stove and turn the heat on the stove to high. Wait for the skillet to get hot before adding the steaks. Just like when cooking steaks on the grill, adding them to a hot skillet will ensure that perfect seared crust on the outside of the steaks.
  • Add a small amount of oil to the skillet to prevent sticking and give the steaks a nice sear. Depending on how large the skillet is, 1-2 teaspoons will do.
  • Pat the steaks dry before adding them to the skillet. When placing steaks on the grill, any excess marinade will drip through the grill grates. When cooking the steaks in a skillet, the marinade has no where to go, so it will stay in the skillet and you wont get that beautiful sear on the outside of the steak.
  • For a perfect medium rare steak, cook a 1 inch thick steak in the skillet for 4-5 minutes per side. For a steak that is 1 1/2 inches thick, add 1-2 minutes to the cooking time per side.
  • Insert an instant read thermometer into the steak. Remove the steak once it reads 130°F for a medium rare steak. For a medium steak, wait until it reaches 140°F and for a medium well steak, wait until it reaches 150°F.

    How Long To Marinate A Steak

    Tender steaks like ribeye or sirloin should marinate for a maximum of 4 hours. As theyre already tender, you dont want to marinate longer than that or the meat will break down too much and the texture can become unpleasant.

    A tougher cut of steak like a flank steak, skirt steak, or even chuck can marinate longer, up to 24 hours .

    Savory Garlic Marinated Steaks

    This beautiful marinade adds an exquisite flavor to these already tender steaks. The final result will be so tender and juicy, it will melt in your mouth.

    • 2 teaspoons ground black pepper
    • 1 teaspoon Worcestershire sauce
    • ½ teaspoon liquid smoke flavoring
    • 1 pinch cayenne pepper
    • 2 rib-eye steaks

    Steps:

    Every steak is different, which means each steak’s cook time will differ slightly. The timing also depends on how well-done you like your steak. Omaha Steaks recommends cooking times based on the thickness of the steak. For a one-inch-thick steak, they suggest cooking it over high heat for four to five minutes per side for medium-rare .

    Of course, the best way to know not guess when your steak is done cooking is to use an instant-read digital meat thermometer. When the thermometer hits 135 degrees Fahrenheit, your steak has reached medium-rare. Keep going to 145 degrees for medium, or 160 for well-done.

    If you’re cooking a very thick steak, you’ll have to do things differently. Instead of cooking it over high-heat temperatures, start it over indirect heat on the grill instead. When the steak is within 10 degrees of the desired temperature, move it to the direct heat side of the grill and sear it for a few minutes on both sides to give it a caramelized, golden-brown finish.

    What Should The Internal Temperature Of My Grilled Steak Be

    It really depends what you want for the doneness of your steak. Make sure you have an inexpensive instant read thermometer on hand!

    If you are looking for a rare steak you will want the internal temperature to be 120 125 degrees F. Medium is cooked to 135 degrees to 145 degrees F. If you want a well done steak it is cooked to 155 degrees or hotter.

    But, please dont do that!

    We aim for a steak around 135 degrees!

    Remember that the temperature will rise another 3-4 degrees F while it rests after cooking so factor that in.

    What cuts of beef to use a marinade on is a matter of personal preference and the recipe youre making.

    Generally, marinades should be used on tougher cuts of beef from hard-working muscle groups, like flank, hanger and skirt steak.
