What Type Of Steak Should You Use For This 3

How to Marinate a Steak

When it comes to choosing the best steak for grilling, look for a tender cut of beef. The most tender cut is beef tenderloin, also called filet mignon. The filet comes from an underused muscle in the beef, so it has very little fat or connective tissue. It cooks up very quickly, and it takes well to marinades. Another grilling favorite is the ribeye steak. This steak has plenty of fat and marbling, which protects it from drying out as it cooks.

You don’t have to go with an expensive steak, either. Top sirloin the steak we cooked to test this 3-ingredient steak marinade recipe is inexpensive and it has a great, beef-forward flavor. Other steaks that take well to acidic marinades like this one include flank steak and skirt steak. These steaks have more connective tissue than traditional grilling steaks, but they cook up quickly and become tender when marinated for up to 12 hours.

How To Cook The Steaks In A Skillet

If you dont have a grill handy, you can also cook these steaks in a hot skillet on the stove. I recommend a cast iron skillet, if you have one, but if not, any heavy-bottomed skillet will work.

  • Place the skillet on the stove and turn the heat on the stove to high. Wait for the skillet to get hot before adding the steaks. Just like when cooking steaks on the grill, adding them to a hot skillet will ensure that perfect seared crust on the outside of the steaks.
  • Add a small amount of oil to the skillet to prevent sticking and give the steaks a nice sear. Depending on how large the skillet is, 1-2 teaspoons will do.
  • Pat the steaks dry before adding them to the skillet. When placing steaks on the grill, any excess marinade will drip through the grill grates. When cooking the steaks in a skillet, the marinade has no where to go, so it will stay in the skillet and you wont get that beautiful sear on the outside of the steak.
  • For a perfect medium rare steak, cook a 1 inch thick steak in the skillet for 4-5 minutes per side. For a steak that is 1 1/2 inches thick, add 1-2 minutes to the cooking time per side.
  • Insert an instant read thermometer into the steak. Remove the steak once it reads 130°F for a medium rare steak. For a medium steak, wait until it reaches 140°F and for a medium well steak, wait until it reaches 150°F.

    Why Should You Marinate Steaks

Ribeye steaks are well marbled with fat, making them less in need of enhancements. However, the additional flavor is what makes ribeyes so special. The exterior surface of the meat is well flavored, but the seasoning is not overpowering. Keep this marinade in mind for leaner cuts of beef and turn them into a memorable and amazing meal.

Bottled marinades are often too salty for me, even though they may have good flavor. This recipe has just the right amount of salt to be effective and flavorful. That makes this recipe a good choice for people trying to cut back on sodium.

    BEST Steak Marinade Recipe

The whole purpose to marinate is so that the meat will be absorbed with a mouthful of flavors. The longer you leave the meat in the marinade, the more of the salty seasonings will emanate from your cooked steak. If you are wonderng how to marinate meat quickly, Otto recommends the vaccum-seal method. If you have the right equipment, you can vacuum seal your meat and marinade to shorten the time you need to wait before grilling. Some even swear it enhances the taste experience even more than the original way.

    • Mix together mustard, garlic and onion powder. Then mix in remaining ingredients.
    • Place beef in a ziplock bag with Marinade and marinade overnight .
    • Remove from the fridge 30 minutes before cooking to bring to room temperature – key for even cooking of steaks. Shake off excess marinade.
    • Brush BBQ Grills with oil, then heat on high heat until is really hot – you should see wisps of smoke. Or heat a heavy based skillet on high until very hot, then add oil – it will heat almost instantly.
    • Add steaks. For 2cm / 3/4″ thick steaks, cook the first side for 2 minutes, then turn and cook the other side for 2 minutes .
    • Remove from skillet onto a WARM plate, cover loosely with foil and set aside for 5 minutes.
    • Serve! I couldn’t resist garlic butter – see recipe in notes.

How Long To Marinate A Steak

Tender steaks like ribeye or sirloin should marinate for a maximum of 4 hours. As theyre already tender, you dont want to marinate longer than that or the meat will break down too much and the texture can become unpleasant.

A tougher cut of steak like a flank steak, skirt steak, or even chuck can marinate longer, up to 24 hours .

    Does Red Wine Tenderize Steak

    How to Marinate a Steak

It actually does! If you leave this red wine marinade on the steak for around 2 hours or less, it will help make the steak more tender. However, its also important to note that if you do leave this marinade on for longer than 2 hours, the wine can have a reverse effect and make the meat a bit tougher, too.

What Cut Of Steak Is Best For Marinating

Though this marinade will work on any cut of steak, its true that some are better than others, depending on your personal tastes. I tend to go for a leaner cut of beef, like t-bone, top loin, tenderloin, or ribeye. But, that doesnt mean I dont purchase other cuts of steak.

Chuck steaks, hanger, skirt, and flank will taste great after 20 minutes in the perfect steak marinade but you can also lean toward leaving it in the bag longer to really seal in that flavor and make your steak as tender as you prefer, up to 24 hours.

How Long Should You Marinate Steaks

How long should you marinate steaks? Steaks should rest in the marinade in the refrigerator for at least 30 minutes and up to 8 hours. I do not recommend marinating anymore because the acidity in the marinade begins to break down the proteins and turn the outer layer where the marinade penetrates softly.

How Long Should You Cook The Steaks On Each Side

Every steak is different, which means each steak’s cook time will differ slightly. The timing also depends on how well-done you like your steak. Omaha Steaks recommends cooking times based on the thickness of the steak. For a one-inch-thick steak, they suggest cooking it over high heat for four to five minutes per side for medium-rare .

Of course, the best way to know not guess when your steak is done cooking is to use an instant-read digital meat thermometer. When the thermometer hits 135 degrees Fahrenheit, your steak has reached medium-rare. Keep going to 145 degrees for medium, or 160 for well-done.

If you’re cooking a very thick steak, you’ll have to do things differently. Instead of cooking it over high-heat temperatures, start it over indirect heat on the grill instead. When the steak is within 10 degrees of the desired temperature, move it to the direct heat side of the grill and sear it for a few minutes on both sides to give it a caramelized, golden-brown finish.

    • First, decide what steak marinade recipe youre going to make. Weve listed several of our favorites homemade recipes below, but a quick online search will result in hundreds of recipe options. If youre pinched on time, you can buy one too .
    • Next, make the steak marinade recipe. Most marinades use very simple pantry ingredients like olive oil, soy sauce, and Worcestershire sauce.
    • If you want a deeper flavor, prick the surface of the meat with a fork before marinating. Less tender cuts should be marinated for anywhere from 20 minutes to 24 hours. The longer you marinade the beef, the stronger the flavor will be.
    • Then, place the steak marinade and steak in a sealed plastic bag or glass container. Immerse the beef in the liquid, and refrigerate until its time to cook. Dont use a metal container for the marinade since the acidic ingredients can react with metal.
    • Once youve placed the steak in the steak marinade mixture, place it in the refrigerator for anywhere from 20 minutes to overnight. Never marinate beef at room temperature for health safety reasons.

What Should The Internal Temperature Of My Grilled Steak Be

It really depends what you want for the doneness of your steak. Make sure you have an inexpensive instant read thermometer on hand!

If you are looking for a rare steak you will want the internal temperature to be 120 125 degrees F. Medium is cooked to 135 degrees to 145 degrees F. If you want a well done steak it is cooked to 155 degrees or hotter.

    But, please dont do that!

We aim for a steak around 135 degrees!

Remember that the temperature will rise another 3-4 degrees F while it rests after cooking so factor that in.

What Steak Cut Is Best For Marinating

What cuts of beef to use a marinade on is a matter of personal preference and the recipe youre making.

Generally, marinades should be used on tougher cuts of beef from hard-working muscle groups, like flank, hanger and skirt steak.

If youre cooking a high-quality, flavorful cut of beef like a ribeye steak, we recommend not marinating it so that the beefs natural flavor can shine. However, if you want to use a marinade on a ribeye or filet, you can. Its entirely up to you.

But pounding is a quick and easy way to tenderize a steak. Pounding also has the advantage of flattening the meat, which allows it to cook more quickly and more evenly. The longer a steak spends over the heat, the drier it gets. And since dry meat is tougher, preserving the juices will produce a more tender steak.

Salt For Even More Tenderness & Extra Flavor

Salt further aids in tenderizing the meat, while also adding an important flavor aspect. Interestingly, the salt also plays an important role by drawing existing moisture out of the steak. This might seem like the opposite of what a marinade is supposed to do, but it actually helps to make the meat more flavorful. When the moisture thats already present is removed, the meat responds by soaking up more of the liquid from the marinade. This is one reason to make sure that the meat is completely submerged while marinating. We always recommend using a high quality salt like sea salt, kosher salt or Himalayan pink salt. You can also use a salty liquid like soy sauce or tamari.
