How Long Is Steak Good For
- Use steak you bought by the good by date on the package. If you wont be able to use it by then, follow the instructions in my how to freeze steak article. I also show you how to thaw steak fast in this other article.
- Once you cook a steak, it should be good if kept covered in the fridge for up to 5 days.
- Dont allow steak to sit out for more than 2 hours.
- Please dont thaw a steak by letting it sit out on the counter all day either. That can be dangerous.
Seasoning The Steaks Before Grilling
If you are willing to season the steaks before cooking, let them place at normal temperature for about half an hour. Then sprinkle both sides along the edges with Kosher salt and fresh ground pepper. Now press the salt and pepper granules gently into the meat. You can also brush it with the help of a little bit of refined high-heat oil or a mixture of various oils before grilling.
However, the debate when to season the salt is just a debate. Because the worlds best chefs do not agree on which method is the best. Although both will work well. The latter one is easier and even juicier, so do both of them and decide yourself which one you would prefer.

If you leave the steak out for too long, the whole steak gets warm and you give yourself less margin for error. It’s better to undercook a steak than to overcook one.

Steak that has been marinated has more surface moisture which causes it to cook slower over direct heat. You may have a hard time getting decent grill marks and surface browning on a marinated steak compared to one that is dry before cooking.
When To Salt The Steak
When to apply the salt is a common seasoning question. Some chefs like to salt a steak well in advance of cooking, even up to 24 hours in advance. Others say salting it right before cooking is best. The main drawback of seasoning in advance is that salt applied to the outside of something tends to pull water from the center of it onto the surface. If the thing in question happens to be a steak, it will necessarily be less juicy. In fact, any steak you hold in the fridge, salt or no salt, is going to lose juices overnight.
Another drawback is that it extends your prep time. Seasoning your steaks 24 hours in advance of cooking, means you’re in the kitchen 24 hours before dinner working with the steaks. You also need to make room in your fridge for these steaks for an additional 24 hours.

This step is crucial to ensuring you develop a great crust when searing your steak.
Diamond Crystal Kosher Salt is the best, in my opinion, because of the size of the salt granules. It allows you to season your steak appropriately without fear of it becoming too salty.
Always use freshly cracked pepper to coax the most flavor from your peppercorns.
Add steak to preheated skillet and allow to cook, undisturbed, for about three to four minutes before flipping.
After about three to four minutes, the steak should be deeply caramelized and ready to flip. Cook for an additional two minutes on the other side for medium-rare. Adjust cook times for desired doneness and thickness of the steak.
Once the steak has been seared on both sides, add a few tablespoons of unsalted butter and flavorings of your choice.
Once the butter has melted, baste steak with butter and seasonings for about a minute. This technique is done at the end of cooking to prevent the butter from burning. If added too early on in the searing process, the milk solids in the butter will burn, resulting in a bitter-tasting steak.
Remove steak from the skillet and allow to rest on your cutting board. Loosely tent your steak with foil while resting to keep it warm.
