How Long To Cook Steak

  • Blue: Should still be a dark colour, almost purple, and just warm. It will feel spongy with no resistance.
  • Rare: Dark red in colour with some red juice flowing. It will feel soft and spongy with slight resistance.
  • Medium-rare: Pink in colour with some juice. It will be a bit soft and spongy and slightly springy.
  • Medium: Pale pink in the middle with hardly any juice. It will feel firm and springy.
  • Well-done: Only a trace of pink colour but not dry. It will feel spongy and soft and slightly springy.

Its very important to consider the size and weight of your steak before calculating the cooking time. If youre unsure, take advantage of the expert eye of your butcher who should be able to tell you how long you need to cook your meat.

If you only go by the ingredients required for making a steak, you will find that they are very easy.     Which Cut Of Steak Is Best For Grilling

    When I first started working on this recipe, my top contenders for the steak were the ribeye , the rib steak , the porterhouse, and the T-bone.

    Any of those cuts will taste great grilled due to the significant marbling of fat, which leaves the meat tender, and flavorful. Let’s take a closer look at each:

    • Ribeyes vs. Rib steaks: A ribeye has the bone taken out a rib steak, also known as a bone-in ribeye, is a ribeye with the bone in. Due to its extensive marbling, this cut cooks beautifully on the grill, bone in or out. Trim the thick fat from the outside edgeleaving it on will cause flame flare-ups that can give your steak an unpleasant burnt flavor. Don’t worry, trimming it off won’t result in lost flavor!
    • T-Bones vs. Porterhouses: People often confuse these two cuts, which is understandable because both cuts come from the loin and both have a T-shaped bone with meat on both sides. But porterhouses are larger and actually have more of the tenderloin than the T-bone. The U.S. Department of Agriculture’s Institutional Meat Purchase Specifications say the tenderloin of a porterhouse must be at least 1 1/4 inches thick at its widest, while that of a T-bone must be at least 1/2-inch.

    Ultimately, I chose to use ribeye steak for its flavor, size, and the lack of bone — I wanted to slice and serve this steak family-style, and the fact that it doesn’t have a bone makes that easier.

    • ¼ cup Worcestershire sauce
    • 1½ tablespoons garlic powder
    • 3 tablespoons dried basil
    • 1½ tablespoons dried parsley flakes

    How To Grill Steak:

    1. Season the meat and allow it to rest before grilling!

    You can use a wet marinade , or a simple dry seasoning to add flavor to your steak. Allow the steaks to rest at room temperature at least 15-20 minutes before grilling and season them about 10-15 minutes before grilling.

    2. Clean and oil your grill.

    Turn your charcoal or gas grill to high and heat it for about 10-15 minutes before you start cooking. If you have a temperature gauge on your grill, look for it to reach about 450-500ºF. Otherwise, observe the coals or gas heat level to see if the coals are barely covered with ash or hold your hand over the heat and you shouldnt be able to handle it for more than about 3-4 seconds.

    Use a grill brush to brush away any chunks of charred meat and drippings. To prevent the steak from sticking to the grill, soak a paper towel with some vegetable oil and use tongs to rub it gently over the grill rack.

    3. Sear and cook: only flip once!

    The cook time of your steak will largely depend on the thickness of the steak. Heres a rough guide but use a thermometer for more accurate internal temperatures.

    • 1 inch thick : grill 3-7 minutes per side depending on desired doneness.
    • 1 ¼ inch thick : grill 8-10 minutes per side depending on desired doneness.

    Only flip steaks one time during cooking.

    4. Use a thermometer to check for doneness.

    5. Let it rest.

    Dont Be Stingy With Salt

    Whether you opt for a rub, marinade or just salt and pepper, one lesson you definitely learned from grandmas cooking is to not be stingy with salt. When preparing your steak, make sure you coat the entire thing generously in salt before it goes on the grill, this will give it that restaurant-quality flavor youre looking for. Just like with the rub, you can salt it in advance to mimic the dry aging process or just before you grill.

    Tips For Grilling The Perfect Steak

    • Season, then chill: I apply the same technique I use for getting crispy chicken and turkey skin to grilling this steak: season, then let it chill in the fridge uncovered for up to 48 hours.     • NY strip super popular option thanks to its beefy flavor. Since this cuts isnt the most tender cut, I highly recommend cooking it to medium rare for the maximum tenderness.
    • Porterhouse/T-bone steaks meat-lovers favorite, these two cuts actually have 2 cuts in one: NY strip on one side and filet mignon on another!
    • Top sirloin lean yet, tender this cut is affordable, yet flavorful!

    Hot Steak Is Tasty Steak

    A steak is a relatively small piece of meat compared to a brisket or roast, so it heats and cools quickly, allowing only for a few degrees of carryover cooking, if any. In between the resting, slicing, and moving to the plate and table, most home steaks get pretty cool before we actually eat them. The pleasure of eating a hot steak is manyfold: the crust is still incredibly crisp, the butter from cooking is still warm and dripping, and the juices pool on the plate into a playground for dipping.

    In a side-by-side taste test of a rested steak and a steak that was cut just moments out of the pan, I barely noticed a difference in the tenderness and juiciness in the hot steak. It was just more pleasurable to eat! Side by side, Id pick the hot steak every time.

    If you need a few minutes to make a pan sauce or to sauté some spinach in the still-hot pan, go ahead and let your steak rest. If you followed the other three hallmarks of this recipe buy a great steak, season it well, and cook it hot and fast then you already did all the important stuff to make a perfect steak.     Fourth Position And Testing For Doneness

    As you prepare to turn the steak for the last time, it’s time to start checking for doneness. The steak should show no red around the side and the top side should have a rich brown color. As you pick the steak up to rotate it 45 degrees , feel the density of the steak. A medium-rare steak should be firm but still have a good amount of give. Close the lid of the barbecue and continue grilling.

    After this last position, turn down the heat on your grill and, if needed, test the temperature of the steak. The internal temperatures for different levels of doneness are:

    • Rare: 120 to 130 F
    • Medium Rare: 130 to 135 F
    • Medium: 140 to 150 F
    • Medium Well: 155 to 165 F
    • Well: 170 F or higher

    If your steak needs more cook time, leave it where it is and continue grilling on medium heat until done.
