The best grade of beef is Prime, and organic grass-fed is premium in terms of meat quality, taste & health. Unfortunately prime beef is only available in small quantities to grocers like Wegmans or Whole Foods Market due to low demand due to its premium price. But the best nationwide grocer for steaks is Whole Foods.
What Does It Cost
Below you will find a list of Flat Iron steak prices from a few stores in Ann Arbor, Michigan. Some places sold them already seasoned which I didn’t include in the list below. I wanted to only include steak that was just steak in the package.
One other quick thing to note is that I have not seen any flat iron steaks at Costco, so you won’t see them on this list.
What Is A Flat Iron Steak
Flat Iron steaks is the steak that all the cool kids are having. But what is this steak?
First thing you need to know is that a flat iron steak comes from the chuck primal. This region of meat comes from the area near the head and neck of the cow. Imagine walking around on all fours. Your neck is probably the first thing to get sore as you are using lot of those muscles. The more a muscle is used in an animal the tougher it is. That is why the cuts from the chuck primal are normally roasts that need a long time to cook, not really steaks.
The Flat Iron steak comes from the Top Blade area of chuck. It normally has been cut into roasts. But if you cut it just right, removing the gristle as you go, you end up with a flat iron steak. With the gristle gone, the cooking time is lower and you can throw it on the grill like any other steak.
The good thing about coming from the chuck primal is that this area contains some flavorful meat. Flat Iron steaks have a lot of beefy flavor.

On Wednesday, Terry Buchholz, 62, of Rapid City, scanned the meat cooler at Wal-Mart where lean ground beef was selling at $5.86 per pound. She turned away when she couldn’t find anything within her price range.
In April of 2011, the national average price of ground beef was just $2.95 per pound, according to the USDA.
“It’s outrageous, almost $6 a pound for hamburger,” Buchholz said. “I can almost eat steak at that price.”
Shopping is a twice-a-week task for Buchholz, who hopes to take advantage of any deals she can get to feed her family. Her squeaky cart was filled with Chex Cereal, Banquet Frozen Meals and sliced deli meat, but no hamburger this time.
“We’ll get it if we can find it reasonably priced or in a deal, but that’s getting harder and harder,” Buchholz said. “We’ve cut back a lot on eating hamburger.”
But Buchholz seems to be an anomaly among consumers, as demand for beef hasn’t fallen much as prices have rises, said Becky Goosen, owner of Cutting Edge Meat Market in Rapid City.
“It’s slowed down a little bit, but not much,” Goosen said. “We have our regulars still coming in, and it seems that there are always new people coming in.”
Despite having to raise prices, Goosen hasn’t seen any real drop in sales, she said.
“A whole bunch of things have converged all at once that nobody expected, to push higher,” Olson said.
