How Long Can You Marinate Steak

Steak can be marinated for up to a day, though the sweet spot is about 6 to 8 hours. Anything more than a day and you run the risk of the marinade breaking down the meat. The 6 to 8-hour spot is great for putting it all together in the morning and coming home to steak ready to marinate at night. Dont have several hours? No worries. You can almost marinate a steak to perfection in just an hour.

The Best Steak Marinade For Grilled Rib

Before grilling, set the steak out for 30 minutes so it can come to room temperature.

Prepare your grill, I highly suggest a charcoal grill. But, alternatively, you can use a gas grill or grill pan on the stove.

Sear the steak on both sides until cooked to your liking. About 5 minutes on each side. For medium, pull steak off the grill at an internal temperature of 140°F degrees.

Remove from heat, add butter, cover with foil and let rest for 10 minutes. Serve with a garnish of parsley, optional.

How To Marinate Steak

I always marinate my steak in ziplock bags which I acknowledge is not environmentally friendly, but it is the most effective way to marinade steak because it keeps the steak evenly coated with a relatively small amount of marinade.

If you want to use a container instead, use a glass or other non reactive container and I would recommend doubling the marinade.

12 to 24 hours is best. You can also freeze it immediately then it will marinate as it thaws!

    Once the steaks are marinated, I highly recommend cooking them on a grill for the best flavor. To grill the perfect sirloin steak, follow these simple steps.

  • Heat a grill over medium high heat, between 350-400 degrees Fahrenheit. Wait until the grill is hot before adding the steaks, to give them perfect sear marks.
  • Remove the steaks from the marinade and discard the marinade. Add the steaks to a hot grill.
  • For a perfect medium rare steak, grill a 1 inch thick steak for 4-5 minutes per side. For a steak that is 1 1/2 inches thick, add 1-2 minutes to the cooking time per side.

    Though this marinade will work on any cut of steak, its true that some are better than others, depending on your personal tastes. I tend to go for a leaner cut of beef, like t-bone, top loin, tenderloin, or ribeye. But, that doesnt mean I dont purchase other cuts of steak.

    Chuck steaks, hanger, skirt, and flank will taste great after 20 minutes in the perfect steak marinade but you can also lean toward leaving it in the bag longer to really seal in that flavor and make your steak as tender as you prefer, up to 24 hours.

    Having a good, quick steak marinade recipe is essential during grilling season.

    Although we think most cuts taste amazing with only a little salt and pepper, a good steak marinade recipe is great when you want to give the beef an added flavor.

    Since we raise beef cattle, we eat a lot of steaks.

    There are a few steak marinade recipes that we repeatedly use because theyre easy to make, theyre versatile for multiple recipes, they use common pantry ingredients, and they infuse flavor quickly.

    For some of these steak marinades, the steak needs to marinade for as little as 15-minutes to get the flavor.

    Sides For Steak Dinner

    • Mix together mustard, garlic and onion powder. Then mix in remaining ingredients.
    • Place beef in a ziplock bag with Marinade and marinade overnight .
    • Remove from the fridge 30 minutes before cooking to bring to room temperature – key for even cooking of steaks. Shake off excess marinade.
    • Brush BBQ Grills with oil, then heat on high heat until is really hot – you should see wisps of smoke. Or heat a heavy based skillet on high until very hot, then add oil – it will heat almost instantly.
    • Add steaks. For 2cm / 3/4″ thick steaks, cook the first side for 2 minutes, then turn and cook the other side for 2 minutes .
    • Remove from skillet onto a WARM plate, cover loosely with foil and set aside for 5 minutes.

    When your grill is ready for cooking, remove the steak from the marinade and give it a good pat down with paper towels. Make sure no bulky flavorings like slices of jalapeño are stuck to the meatthey’ll just burn on the grill.

    Your cook time will depend on the heat of your grill and the cut of steak you’re using, but generally speaking all thin cuts fare well cooked over high heat. They won’t take long, so have your thermometer and tongs at the ready and keep flipping them over high heat and checking the internal temperature until your steak reaches your desired doneness. Aim to pull it off the grill at 120125°F for medium-rare, or 130135°F for medium. If you don’t have a thermometer, simply slice into the steak a bit to have a peek at the color in the center to know if it’s done to your liking.

    You can make the marinades themselves and keep them in mason jars in the fridge up to one week in advance. I wouldn’t recommend any longer than that, especially for marinades with fresh herbs as they can lose their flavour. But creating the marinades ahead of time is a great way to cut down on prep time if you like to do a little bit of meal prep earlier in the week before cooking.

    Use Salt As A Tenderizer

    Some science folks insist that salt makes meat tougher, not tenderer, but the best chefs and true foodies know better. If you give it time, salt can blast the protein strands and dissolve the muscle fibers of tough meats.

    According to most cookbooks and sources, including Cook’s Illustrated and America’s Test Kitchen, salt is the secret to juicy roasts. Since brining works only for extremely lean cuts, instead they recommend rubbing roasts with salt and then refrigerating for 24 hours before cooking.     How should I apply the salt?

  • Place the meat on a pan, board, or plate and sprinkle its entire surface with a generous layer of salt. Turn it over and salt the other side, as well. You can massage it a little if you want to.
  • Leave it laying there untouched, at room temperature. How long depends on how thick the cut of meat is. Give it an hour for each inch of thickness. So if you have a 1 1/2 inch steak, let it sit for an hour and a half.
  • When the proper amount of time has passed, thoroughly brush or wash off the salt on the surface of the meat. This step is important because you don’t want to eat all that salt.
