How Long Should You Grill Steaks

The cooking time for steaks varies with your desired level of doneness and the thickness of the steak. Also, you should flip the steak just once, and when it is halfway through its grilling time.

  • Cook a rare steak for 6 to 8 minutes, 3 to 4 minutes per side
  • For a medium steak, grill for 7 to 10 minutes, 3.5 to 5 minutes on each side
  • Grill a medium steak for 10 to 12 minutes, 5 to 6 minutes on each side
  • Cook a medium-well steak for 12 to 15 minutes, 6 to 7.5 minutes per side
  • For a well-done steak, grill the meat for 15 to 18 minutes, 7 to 8 minutes per side

Moisture Is The Enemy

The Maillard reaction gives grilled steak its irresistible aroma.

Thats why we cook it over fire rather than boiling it something thats boiling in water can never get over 212 degrees Fahrenheit, because thats the highest possible temperature of the water.

But some people do effectively boil their steaks on the grill by throwing them on when the surface of the meat is moist with condensation or a marinade.

GRILLING WET STEAK IS LIKE STARTING A RACE GOING UPHILL.

Grilling wet steak is like starting a race going uphill. Your grill cant cook your steak until it first evaporates the water which takes a lot of energy. Your steak cant get past the 212 Fahrenheit marker and toward Maillard levels, until all that water is gone. Meanwhile, the internal temperature of the steak is rising because of the ambient heat around it.

You can end up with the worst of both worlds no browning on the surface of the steak, and overcooked meat within it.

What Temp To Cook A Steak On The Grill

Everyone knows the importance of temperature to cooking food, but for a steak, is there a temp thats best? Beef, chicken, pork or fish? Well, for beef, its done rare. Meaning a steak should be cooked on low, until a meat thermometer inserted into the thickest part of the steak registers between 130 and 135 degrees F . This ensures the meat is cooked to the proper doneness without drying it out. Most people would agree that a steak cooked medium-rare is somewhere around 140-145 degrees F . On the other hand, salmon is best served slightly less cooked, at about 115 degrees F .

But, my absolute favorite is a ribeye. There is just enough fat marbled through it that it marinates itself as it cooks and stays incredibly moist and tender. The flavor is amazing. It is my go-to. Go grab a 1 inch ribeye for you and whoever else you are having over..

    Next, after you go out and grab your cut of meat, you are going to want to let it come to room temp before you season your meat. Just salt and pepper people. You dont need to reinvent the wheel. But first, take a fork and pierce the meat all over fat and everything. Then sprinkle with salt and ground black pepper on both sides enough that it will be nicely seasoned, but not over-powered with either.

    After you have cleaned your grill thoroughly with your brush, spray it with a grill-worthy non-stick spray and then turn it up to 450-500.

    How To Cook Steak On A Charcoal Grill

    Grilling steak over charcoal can be tricky. Its difficult to know the exact temperature of the cooking surface, and that temperature can vary depending on the type of charcoal you used and how evenly you spread the charcoal.

    Briquette charcoal can give you temperatures of around 500 degrees Fahrenheit. Lump charcoal may be able to generate higher temperatures. You can check for a high temperature on your charcoal grill using the hand test. Hold your hand at grate level, and if you can only keep it there for 2 to 3 seconds before it gets too hot, you have a 400 to 500 degrees Fahrenheit surface to grill.

    If youve got that heat, you can grill using the timing instructions above. But beware your charcoal grill may have hot or cool spots that can affect the cooking time. Youll have to keep a close watch and you wont be able to set it and forget it like you can with a Traeger.

    For wood smoke flavor, you can use wood chips. Typically, you add wood chips directly to charcoals, but this can affect the heat youre generating.

    If you add dry wood chips, they could flare up and burn your steak. If you add soaked wood chips, they will cool down the charcoal. A foil pack added before cooking is probably your best bet.
