How To Choose The Perfect Skirt Steak

- outside skirt steaks less than 4 inches wide and 1 inch thick
For the highest possible quality beef, also look for these qualities in your skirt steak:

How To Make The Marinade

Step 1. Add skirt steak marinade ingredients to a large bowl. Whisk to combine the olive oil, soy sauce, red wine vinegar, lime zest and juice, brown sugar, minced garlic, jalapeno, and ground black pepper.
Step 2. Set aside sauce for later. Remove ¼ cup of the skirt steaks marinade for later. Make sure to take out this portion of the marinade before adding the raw steak to marinate.
Step 3. Add skirt steak to marinade for 2-24 hours. Do this in the large bowl or add marinade and beef to a large ziplock bag. Refrigerate and marinade for at least 2 hours or up to 24 hours.
Step 4. Remove steak from marinade and discard liquid.

Since skirt steak is a thin, tough cut of beef, it does best when only cooked to a medium-rare or at most, medium .
In order to make this steak nice and tender on the grill, we need to cook it at a HIGH heat.
Im talking, as high as your grill can go. 500 degrees+.
My grilled Skirt Steak recipe only needs a few minutes per side, just enough to quickly caramelize the outside, while still remaining nice and tender on the inside. If you overcook the steak, the fibers running throughout will get tough and chewy.

Ways To Cook Skirt Steak
Skirt steak is thinner than other steaks you might be used to cooking, like ribeye and strip steak. Still, you can cook it using the same methods just be sure to keep a close eye on it to avoid overcooking.
Before cooking skirt steak, be sure to season with salt on all sides and leave at room temperature for about 45 minutes, allowing a natural brine to form for crispier edges.
Prepare And Marinate The Skirt Steak
Get your skirt steaks ready by trimming off the excess fats from them. You can also cut them into smaller pieces if you want I usually divide the skirt steaks into three equal pieces for this.
Slicing the skirt steaks ahead of time allows the steak to absorb more of the marinade later on. You will also disconnect some of the tendons that can be hard to chew on when cooked.
After removing the excess fats, you can then marinate the skirt steaks. Put them in a large resealable bag and then pour the marinade in the bag with the skirt steaks, then close the bag.
From there, press onto the skirt steaks with your fingers, so the marinade goes deeper into the meat. Put the bag in the refrigerator and let it marinate for at least two hours.

Directions For Cooking The Perfect Skirt Steak:
Step 1: Set your sous vide water bath to 130 degrees F
Step 2: Using a sharp boning knife, trim any excess fat and silver skin off your steaks.
Step 3: Season steaks with a pinch of sea salt on both sides.
Step 4: Seal steaks in a vacuum bag or zip top bag, removing as much air as possible.
Step 5: Drop into water bath and cover with lid. I dont use the lid for shorter sous vide cooks but without a lid over 36 hours youll constantly be adding water due to evaporation.
Step 6: Remove steaks from water bath after 36 hours and place immediately in the refrigerator for about 20 minutes.
TIP: Placing in refrigerator for 20 minutes allows the center of the steak to cool just slightly before the sear, preventing an overcooked steak. I dont recommend skirt steak cooked to over medium temperature. If medium well is your preference, I recommend just baking a piece of chicken.
Step 7: Get a cast iron pan, grill or salamander style broiler if you have one set to high heat.
Step 8: Remove steaks from fridge, pat dry on both sides and coat both sides with a very light coat of avocado oil.
Step 9: Place steak as close to heat source as possible and sear for one minute on each side.
Step 10: Remove from heat source, season with pinch of salt and slice immediately. No rest required on this cut.
Step 11: Serve with a healthy portion of chimichurri for optimal flavor high.
Smoke The Skirt Steaks
Once the skirt steaks cool down, you can even season them again with a dry rub. From there, you can place them directly on the grill grates and let them smoke for a good 45 minutes.
Close the grills lid, and unless necessary, do not open the grill so that the smoke can get into the skirt steaks. Let them slowly cook and measure the temperature inside.
Keeping the temperature on track is easy for most pellet grills because of their advanced digital displays. So check if the grill is constantly putting up the set temperature for smoking.

How To Cook Skirt Steak In A Slow Cooker
In order for you to cook a skirt steak in a slow cooker, you will need a total of 15 minutes of preparation time and about 8 hours of cooking time.
Step 1: Season the meat with salt, pepper, and any other preferred ingredient and place it into a slow cooker.
Step 2: Set the setting to High and cook it for 4 hours. After 4 hours, turn the steak in the other side and press down into the liquid and continue cooking until a fork easily passes through the meat, usually for another 4 hours.
