Should You Traditionally Sear Or Reverse Sear When Grilling Steak On A Pellet Grill

Which type of searing will net you the best results? Honestly, thereâs no clear-cut winner between traditional and reverse searing â except for you and your hungry guests.

Now that you know how to cook steak on a pellet grill, you have no excuse not to pick up some ribeyes, T-bones, New York Strips or sirloins for dinner tonight. Perfect isnât always possible when it comes to grilling steaks. But when youâre cooking on a Grilla, youâre well on your way.

How To Season Kansas City Steak

Anything more than salt and pepper on a steak makes me a little skeptical. Before you season the steak, pat the steak with a paper towel to remove any excess moisture from it. We don’t want to steam the steak and it will be harder to get a clean sear if there is any moisture.

Once the steak is dry, sprinkle the steak with some coarse kosher salt and rub it into the meat on both sides and the edges. Then apply freshly cracked pepper to both sides. If you do want to apply any other seasoning or fresh herbs, you could apply that now. When I use a nice cut of meat, I really want the steak to be the hero of the flavor profile, not an overload of other seasonings.

What Is The Best Wood For Cooking Steak On Pellet Grill

Wood Pellet comes in various flavors, and this will go a long way in affecting the outcome of whatever is grilled with it, especially your steak. Here are some of the best-flavored wood pellets for a steak that you can choose from.

  • Mesquite
  • Hickory
  • Oak

Mesquite and hickory produce a prominent flavor on the steak. Mesquite has more potent smoke than hickory. Because of the beefy nature and strong cut of steak, it can hold up nicely to strong smoke flavor, and this also helps to cook the meat.

If you want to spice things up, then you have Pecan at your service. It is less smoky compared to mesquite and hickory, therefore less appreciated for grilling and smoking. It has this vanilla and nutty finish that just made the steak flavor awesomely complex.

Some people have also testified to using oak wood pellets for their steak and complimented the medium smoky result you can give it a try as well.

How To Make A Pellet Grill Cowboy Steak:

  • Prepare your pellet grill for 225 degrees F. Combine the rub ingredients listed in the recipe below. Brush steaks on both sides with a little oil, and season liberally with the rub.
  • Place steaks into your pellet cooker, close the lid, let the steaks cook for about 45 minutes, or until the internal temperature reaches 125 degrees F. If youd like them more cooked through, pull them at 130-135 degrees. Please refer to my steak temperature guide to determine the right doneness. I recommend removing them about 5-7 degrees before they reach your target temperature.

When we developed the recipe for these pellet grill cowboy steaks, we were fortunate to have a flat-top grill at my disposal. Of course, we wanted to test the searing capability of this Cuisinart 360 XL. We were pleasantly surprised. However, if you have a Traeger or another pellet grill that can reach high temperatures, then definitely stick with the same cooker, or finish the job on the stovetop in a cast-iron skillet.

  • Pull the steaks about 5 degrees before your desired doneness, and place them onto a clean plate. Crank up your grills temperature to 500 degrees F.
  • Once its good and hot, place your steaks back onto the grates and sear them for 2-3 minutes per side.
  • If using your stovetop or a flat top grill, melt a pat of butter on the surface right before adding the steak. Sear for 2-3 minutes, turn over and repeat the process.

    What Exactly Is Reverse

Reverse-searing is simply the process of finishing a piece of meat with a high-heat sear after initially bringing the internal temperature up very slowly. The low-and-slow portion can take place in an oven or smoker, while the searing is typically done with a grill or cast iron pan. The versatility of a pellet grill allows you to handle the whole process with one piece of equipment, and your steak will end up with a deliciously subtle kiss of smoke.

    Should You Marinate Steaks

Its not required to marinate a steak. But most cuts of beef can benefit from the marinating process.

A good marinade will add make the steak more flavorful. Plus a good marinate can help tenderize the meat if you have a tough cut.

I recommend marinating your steak for a minimum of one hour and no more than 24 hours.

How Do You Smoke A Ribeye Steak On A Pellet Grill

Trim the fat off a ribeye steak before rubbing it with a neutral oil and spice mixture. You can use a simple seasoning of salt and pepper. As soon as your Traeger is up to temperature, set your steaks directly on the grill grate and cook for 6 minutes on each side, rotating halfway through. Cook the steaks until they reach an internal temperature of 132 degrees Fahrenheit, then serve.

    How Your Cooker Works

Ribeye Steaks on A Pellet Grill

Many people do not realize that pellet grills are actually convection cookers. The firepot where pellets are ignited is covered by a deflector plate. A fan then distributes air and heat around the cooking chamber in a convection-style manner.

Because of this, you might logically think that a pellet grill cant sear since direct heat grilling isnt used. While thats somewhat true, its certainly possible to get a sear and beautiful grill marks on a pellet grill steak.

Searing A Steak: Grilled Outside Juicy Inside

Most pitmasters follow a simple formula when grilling steaks the traditional way â a cooking method called searing. The secret to a mouthwatering steak is in this step, which involves cooking a steak on high heat for a short cook time. Below are the steps youâll want to follow:

    • Let your steaks rest for an hour at room temperature. Pat them dry with a paper towel to make sure theyâre not moist at all.
    • Season your steaks as desired. Some pitmasters like to add very little to their steaks. Others rub seasonings into the meat before searing.
    • Bump up the heat to 500 degrees.
    • Place your prepared, rested steaks on the hottest part of your pellet grill. When searing on a pellet grill, you want to hear that sizzle of the steak making contact with the heat of the grill.
    • Sear each side of the steak for about three minutes, or until the steaks have reached your desired internal temperature.
    • Remove the steaks from the pellet grill, slather them with about a tablespoon of unsalted butter, place them under a foil tent and wait 10 minutes.

What could be more straightforward? Of course, if you want to get fancy, you could also try whatâs called a reverse sear.

The Simplest Steak Recipe For Knockout Taste

How To Smoke STEAK on a Pellet Grill

If you are seeking the simplest steak recipe that is good enough to serve in front of your guests, then you are in luck. You can make great tasting steak using nothing more than kosher salt and pepper. This is a true and tried recipe that is deeply admired by BBQ lovers.

You can prepare the meat cuts by dry brining them. Simply put, you have to cover the exterior of the meat cuts with kosher salt and let them rest for a few hours.

The legendary celebrity chef, Judy Rodgers , who personified simplicity in cooking popularized this steak cooking method. This is much better than submerging the steak in 10 percent brine solution, which happens to be wasteful and unnecessary.

For each pound of meat, you need only half a teaspoon of kosher salt. You should refrigerate the meat cuts for at least two hours before allowing them to thaw for another two hours. Thawing ensures that the cuts are at uniform room temperature. This is the ideal starting point for smoking steak over the course of several hours.

When you take your salted cuts of the refrigerator, there is no need to rinse any excess salt away. The really cool thing about this method is that the meat sucks in the salt during the time that it rests.

The salt denaturing process changes the consistency of the meat and its color. The meat is now naturally tenderized without any addition of artificial chemicals.

Why Cook Steak On The Traeger

If you are looking for a black and blue steak with a dark purple cool center, you need to sear that at 900°F for a minute per side. You can’t get that on the Traeger. Because the Traeger grill cooks indirectly, a dark charred sear is not achievable without completely overcooking your steak. But that is ok. If you are most interested in flavor and looking to find new wrinkles of flavor, this one is for you. It doesn’t get more simple than steak, salt, pepper, and your Trager grill.

How To Pick The Best Steak

The very first thing you should look at when buying your steak is the USDAs grading system for quality. Prime is the best quality, Choice is 2nd in line, and Select is on the bottom rung. Go for Prime or Choice for steak whever you can.

Prime steak can be hard to find in regular grocery stores, but weve had good luck at Costco.

You should always choose your cut of meat according to how you plan on cooking it.

If youre cooking meat well-done you should choose a cut that will remain tender.

Choose tougher cuts of meat for stewing and roasting, as the longer cook time will allow time for the meat to tenderize as it breaks down the connective tissue.

Dont be afraid to ask your butcher questions, thats what theyre there for!

Steaks are best grilled, but you can pan fry if you have to at a high temperature, and usually a medium-rare temperature allows for a tender, juicy piece of meat.

Tenderloin, or Filet Mignon, has less marbling and fat than the ribeye and is considered to be the most tender cut, but can be wallet-busting, and in my opinion has less flavor than a ribeye.

Sirloin is a leaner cut of meat that is better on your budget but be careful if cooked too long can tend to be tougher and chewier.

Im also a big fan of the flat iron.
