We’ve also covered how to pick the best steak for grilling. The good news is, the perfect steak doesn’t need to be the most expensive. If breaking the bank isn’t part of your barbeque plan, consider less spendy sirloin, hanger, flank steak, and skirt steaks.

Choose cuts that are at least 1-inch thick. If the steak is too thin, the interior gets cooked well-done before the exterior can develop the crave-worthy crust. Typically, steak tips come from two parts of the cow. One kind comes from tender, expensive cuts in the middle of the cow, such as the tenderloin. While these are a superior cut, they are not what you typically find labeled as “steak tips” in the grocery store. More often, true steak tips come from various muscles in the sirloin and round and cost about $5 per pound.     Before the fun grilling part, we need to choose the meat. First of all, you can throw pretty much anything on a grill but whether it will taste the best, thats not exactly true. There are some cuts that just perform better on the grill.

    When choosing a cut, go for loins like sirloins and rib eye steaks. The pretty piece of meat that you see in the picture above is Wagyu strip steak from a T-bone steak.

    The main thing that I look for to make the steak extra special is lots of fine marbling. Marbling is an intramuscular fat that you see throughout the meat, not on the outside of it. You want to look for those fine lines of fat within the meat.

    The finer the fat, the better. Fine marbling is what will give your steak juiciness, tenderness, and lots of flavor. You dont want to have lots of thick fat in the middle of your meat.

    You also dont want the steaks to be too fat or too thin. Its best to choose the steaks that are 1.5 inches thick, with 2 inches being absolute thickest.

    Understand Direct And Indirect Heat

    For perfect steak tips on the grill, youll want some direct and indirect heat. If youre a grilling beginner, heres what that means: Direct heat is how youll sear the steak, while indirect heat keeps it cooking through without being directly over the flame. When you first put steak tips on the grill, youll want them directly over the hottest area of the grill for a crisp sear. Once youve seared both sides for 30 seconds to a minute, you can move them from direct heat to indirect heat to keep them cooking.

    Cooking Steak Tips To Perfection

    When you’re ready to cook your marinated steak tips, preheat a skillet over high heat, adding a little bit of oil. Transfer the steak tips from the marinade to skillet and sear the outsides, then turn down to medium and continue to cook, turning over a few times with tongs to ensure even cooking.

    Another option is to broil the steak tips, laying them out in a single layer on an oiled broiler pan or baking sheet around 3 inches away from the heat source.

    Don’t rely on just how the steak tips look to know when they are safe and ready to eat. The goal is to get the middle of the meat up to the minimum temperature consistent with food safety, which the U.S. Department of Health and Human Services advises is 145 degrees Fahrenheit. This way the steak tips will be safe to eat, while still being succulent.

    Leftover marinade can be used as a sauce for steak tips. But if you do so, the Academy of Nutrition and Dietetics is very specific about the need to thoroughly boil any marinade that has been in contact with raw meat for food safety reasons.

    Dont Forget The Thermometer

    If you dont have one yet, consider investing in a digital read thermometer specifically designed for meat. Its difficult to tell if steak tips are done cooking just by looking at them, so a thermometer can come in handy to tell you if the inner area of the tips is done cooking. Temp the meat before pulling it from the grill and again after it rests. For medium-rare, youll want to take the steak off the grill when it reaches around 125 degrees. It should come to 135 degrees after resting.

    • Make ahead: You can prepare the marinade in advance and leave it in an airtight container in your refrigerator for up to 1 week.
    • Allow at least 30 minutes for the steak tips to marinate. If it’s more convenient, you can leave the steak tips in the marinade overnight.
    • Leftover grilled steak tips will keep in an airtight container in the refrigerator for 3-4 days. Tuck the meat inside sandwiches the next day, or slice it and use it to top a steak salad!
    • Howto freeze grilled steak tips: Wrap the grilled meat tightly and store in the freezer for up to 2 months.
    • To reheat the grilled steak tips: If reheating the cooked meat, you’ll want to be careful that you don’t cook it for too long and dry it out. To reheat the steak, place the grilled sirloin tips on a wire rack over a baking sheet. Warm in a 250 degree F oven just until the internal temperature of the meat reads 110 degrees F. Total warming time will vary depending on the size, shape and thickness of your steak.

    According to the USDAs official list of retail beef cuts, there is no technical definition for what constitutes a steak tip. Because of this, any sort of beef trimming can fall under this broad category.

    However, typically when people think of steak tips, they have two ideas in mind. The first is the more expensive version. This type comes from the middle of the cow and is known as the tenderloin.

    While these tips might be the superior cut, you arent likely to find them in your average grocery store. Unless you know and trust your butcher, youre probably instead getting cuts from the sirloin or round part of the cow.

    However, the difference can also be regional. For example, in New England, where steak tips are very popular, the tips often come from the chuck part of the cattle.

    Regardless of what part of the cow your steak tips originate from, they should look like thin flap meat, with longitudinal grain and distinct beefy flavor.

    How To Braise Steak Tips

    Grilling isnt the only way you can cook steak tips you can also try braising them. This method allows the meat to simmer in the liquid for a few hours until it is so tender it practically falls apart.

    Add some neutral oil to a dutch oven and turn the heat to high. Then, sear it on both sides until a nice brown crust forms. You should notice some brown build-up at the bottom of the dutch oven.

    Deglaze this flavorful material by pouring your marinade mixture over it. Then, add the steak tips back, cover the pot, and let them simmer on low for a few hours.

    Alternatively, you can also add them to a 350-degree oven instead of a stove. Once you remove them from the heat, then let them rest for 30 minutes before serving. This helps seal in all of the delicious marinade flavors.

    What Is The Best Steak For Steak Tips

    True steak tips come from various muscles in the sirloin and round and cost about $5 per pound. After tasting 50 pounds of cheap steak tips, tasters had a clear favorite: a single muscle that butchers call flap meat and that is typically labeled sirloin tips. A whole piece of flap meat weighs about 2 1/2 pounds.
