  • Heat butter with flour. Add butter to a small sauce pan on medium heat. Once butter melts, add flour by whisking it in slowly so it doesnt clump. Cook flour and milk for about 1 minute until it turns light brown and the air smells nutty.
  • Add milk to white pizza sauce. With the sauce pan on medium heat, slowly pour cold milk into the roux, whisking as it incorporates. Turn the heat of the burner to high, and once the milk bubbles , reduce the heat to medium. Then add cooked garlic olive oil mixture to the roux. Continue to whisk ingredients as they bubble for 1 minute. Turn off the heat of the burner .
  • Add the rest of the white pizza sauce ingredients.Add seasonings to the mixture . Add parmesan cheese and whisk until combined and the sauce becomes smooth. Remove from the burner, stir in the fresh chopped parsley, and set aside while making the pizza . Or store in the refrigerator and reheat on low if making the pizza sauce more than 20 minutes in advance.

    PIZZA DOUGH: If youre a pizza purist, you can definitely make your own dough. If Im short on time I will use this no rise pizza dough recipe, or even a store bought refrigerated pizza dough. Ive also started making or buying a white whole wheat pizza dough to add a little bit of nutrition to our weekly habit.

    PIZZA SAUCE: I think the only point of contention Ive seen with a Philly cheese steak pizza is what sauce is on the Philly cheesesteak pizza. Some like a cheesy alfredo Philly cheese steak pizza sauce, others go with a simple garlic butter. Honestly, I really like marinara sauce. There is so much cheese on the pizza, I dont feel like it needs a cream sauce, and I like the marinara flavor with the steak.

    GOAT CHEESE: I use some big dollops of fresh chevre on the pizza because it gives some of that same creaminess you would get from a cream sauce, but with a wonderful tangy flavor. I dont recommend skipping these one, its a MUST!

    MOZZARELLA, CHEDDAR, PROVOLONE, AMERICAN: Between the goat cheese, mozzarella, and cheddar, this Philly cheese steak pizza has a good variety of cheese flavors. That said, you can also swap them with your favorite cheesesteak sandwich cheeses.

    Maybe sub American cheese for the cheddar , and use provolone instead of mozzarella. You could even go half mozzarella half provolone, or throw in some Swiss as well.

    Prep And Sear The Steak

    For the best Philly Cheesesteak Pizza, the steak must be on point.

    To prep the steak for searing, use paper towels to pat away the excess moisture from the surface of the steak. Then find the direction of the grain, grab a good, sharp knife, and cut the steak into very thin slices, moving against the grain with the blade of your knife.

    Once the strips are ready, drizzle them with oil and sprinkle with salt and pepper. Toss the oil and the seasoning all over the steak strips and set them aside while you prepare your pan.

    Add about 2 tablespoons of olive oil to a large skillet over medium-high heat and allow the oil to come to temperature. Once the oil in the pan is hot, add your steak strips and cook them in the pan for about four minutes, stirring often. Then, remove it from the pan and transfer it to a bowl or plate.

    Now Ill walk you through using a pizza stone to cook Philly pizza, but you can find directions on cooking pizza on a sheet pan in the recipe at the bottom of this page.

    Help pizza dough rise in advance The morning-of making the pizza, move the dough from the fridge to a countertop. At a minimum, take the dough out of the fridge a couple of hours before making this pizza recipe .

    Step 1. Preheat oven to 460ºF and preheat pizza stone. Consult your pizza stone to ensure the cooking temperature is safe and appropriate for your particular brand.

    Step 2. Stretch the pizza dough. Check out the Sip Bite Go guide to stretching pizza dough for visuals or watch this pizza recipe video at the bottom of this page. There are also tips for you in the recipe card notes.

    Step 3. Assemble pizza. Take the pizza stone out of the oven and brush half the olive oil on the pizza stone. Carefully add raw pizza to the hot pizza stone. Add the pizza toppings right on top of the raw pizza dough.

    First, brush olive oil on the outside crust of the pizza in a circle shape. Then add sauce to the center of the raw pizza dough leaving 1 on the outside for the crust.

    Sprinkle on the cheese. Top with cooked steak slices and sautéed onions and peppers.

    Step 4. Bake pizza. Add pizza to the oven and bake at 460ºF for 10-15 minutes . Pizza is ready when cheese has completely melted and is starting to bubble. The bottom of the dough should be golden brown.

    In constructing the dough for this recipe, I wanted to create a crust that would remind me of the familiar roll that serves as the vehicle for my beloved sandwich. I needed something light, yet chewy and substantial enough to withstand the weight of all that steak and cheese.

    If you havent attempted to make pizza crust before it can be a bit intimidating. But, Im here to preach that it is beyond worth the trouble. Heres a few tips to get you started:

    Give the Dough Sufficient Time to Rise

    The time your dough spends rising is time spent developing flavor and texture. Rushing the process will only result in a dull dough that wont properly rise during cooking. Be patient.

    Flavor Your Dough

    This dough recipe is simple but that doesnt mean you cant jazz it up. I love adding a couple dashes of seasoning to create dimension. Try onion powder, garlic powder or dried oregano! Add in your seasoning during the stretching process.

    How to Stretch the Dough

    Dont be stingy with the flour! Coat your surface heavily and add more as needed. Gently use a floured rolling pin to roll out your dough. Then, use you hands to gently work your dough to get your desired shape.

    Make Ahead of Time

    If you find yourself wanting to make pizza but dont always have the time I would suggest making your dough ahead of time.

    To thaw, place the pizza dough in the refrigerator overnight and roll it out when youre ready!
