Oven-roasted tri-tip is the best way to cook tri-tip in colder months when you can stay cozy and enjoy the mouthwatering aromas indoors. To roast tri-tip, start by choosing a roasting pan that’s the right size for the job. It should be a large shallow pan with a rack inside. The pan sides should be 2 to 3 inches tall. If you don’t have a roasting pan, you can use a 13×9-inch baking pan with an oven-safe wire rack set inside.

These instructions for cooking tri-tip roast are for how long to cook tri-tip in the oven at 425°F, which allows for a nice medium-cooked middle and browned exterior. As this cut is fairly lean, we don’t recommend cooking it beyond medium doneness.

  • Preheat the oven to 425°F.
  • Place the roast on a rack in a shallow roasting pan. Insert an oven-going meat thermometer into the thickest part of the roast. Do not add water or liquid and do not cover.

    For medium-rare you want 135 degrees F. For medium its 145 degrees. Be sure to take into account the 5-10 degrees from carryover cooking . I dont recommend going over 145 degrees for this cut, but if you like well done meat, thats up to you.

    I always find that it rises 10 degrees after removing the tri tip from the oven, so I take it out at 125 degrees, so it rises to the perfect medium rare. I prefer medium rare for tri tip, so it will rise to 130-135 degrees F after removing from the oven.

    How To Oven Roast Tri

    We dont recommend oven-roasting tri-tip steaks. Home ovens dont get hot enough, so this cooking method just isnt quick enough to cook the steak properly. The steak will become dry on the inside without a proper sear on the outside, so we suggest looking to other cooking methods.

    If you find yourself with a whole tri-tip roast, thats another story. The whole roast tastes fantastic when its cooked in a 400° oven for about 35 to 45 minutes. Be sure to use a meat thermometer to determine when the roast reaches 135°.
