How To Cook Rib
The rib-eye, sometimes known as scotch fillet or entrecôte, is one of the most popular steaks in the world. It comes from the Longissimus Dorsi muscle, which runs down the spine and doesnt do too much work, giving it a lovely tender texture. What makes it really stand out, however, is all the wonderful marbled fat running through the meat , which when cooked melts and renders into the steak. This provides extra beefy flavour and a juicy, moist and tender texture.
A rib-eye steak can come anywhere from the sixth to the twelfth rib, and which end it comes from should dictate how it should be cooked. The centre cut is the most common . It contains some of the fat cap along with a nice amount of marbling. Then we have the two ends: short loin and chuck. The short loin end has little to none of the cap and less marbling, which is more suited to people who prefer less fat. The chuck end, however, contains more marbling and has the largest part of the cap attached. To get the most flavour out of a rib-eye, ask your butcher for steaks cut from the chuck end.
You can also get ribeye attached to the bone or the increasingly popular tomahawk steak, which is attached to the whole French-trimmed rib bone .
When buying your steak, look for a nice deep red colour with lots of marbling. Select 2.53cm thick steaks that have been aged for maximum flavour. Buying organic and free-range will also result in better quality meat.

The real key to seasoning a ribeye is the timing. The best method is to season the steak liberally and let it sit for 1 to 3 days. Then put it in the fridge, uncovered, until you’re ready to cook. Seasoning early gives the salt time to work its way into the meat. Although not necessary, it gives the steak more flavor.
If you’re buying and cooking on the same day, salt the steak at least 45 minutes before cooking, or right before you put it on the grill. Salt draws moisture out to the surface of the steak, and moisture is the enemy of high-temperature grilling.
When you put a steak on the grill, any moisture on the surface must evaporate before the surface actually starts to cook. Salting well in advance — and patting the steak dry before it goes on the grill — will eliminate that moisture and help your cook go better.

The second is donât try and cook the whole thing in two minutes over high heat. The best ribeyes are thick around an inch to an inch and a half thick and take a little while to cook right.
We recommend grilling pretty much every cut of steak over medium heat to make sure it cooks evenly all the way through because who wants to eat a steak that is charred on the outside and cold on the inside.
Also, thereâs no reason to go through the bother of searing a steak over a super hot grill and then reducing the heat. As long as the grill has been preheated long enough for it to come up to temperature, it will do a fine job of searing the steak.

How To Serve Juicy Steak
Once your ribeyes reach your perfect level of doneness, remove them from the Ninja Grill and let each steak rest for at least 5 minutes before slicing into it.
This allows the active juices to settle back into the meat. Those juices equal flavor. If you cut the steak too soon, the juices will still be active and will just drip all over the cutting board, instead of back into the meat.
When you slice a ribeye, remove the cap from the steak and slice it against the grain. Then, slice the filet against the grain. This will result in the most tender bites.
Rest Meat Before Carving
Its crucial to let ribeye roast rest for 10-15 minutes before you slice it to eat. The resting process gives the meat more time to cook without being in direct heat. During this time, the meat soaks up juices it loses while cooking, boosting its overall flavor and texture. To rest ribeye roast, place a sheet of aluminum foil over the roast, tented loosely. Then, wait up to 15 minutes before slicing the roast against the grain.

What Is A Chuck Eye Steak
Lets start with the basics: The chuck eye steak comes from the shoulder portion of the cow, known as the chuck. It actually touches right up against and shares a bit of muscle with the ribeye portion, which is usually a sought-after cut for its high fat content and resultant rich flavor. The ribeye usually comes from between the sixth and 12th ribs, whereas the chuck eye steak comes from ribs five and lower.

Heres how to cook Ribeye steak in an air fryer:
- Preheat your air fryer. Set temperature to 400°F. Allow your air fryer to preheat for approximately 23 minutes.
- Place your steak in the center of the air flyer and begin frying. We recommend using the grill rack option if available.
- Flip your steak halfway through your cooking time, listed in the Cooking Times Chart below.
- Remove the steak from the air fryer and allow it to rest for 5 minutes. The temperature of the meat will continue to rise about 5°F during this time .
- Resting steak is important because the heat of cooking pulls the juices in the meat toward the surface if you slice into it immediately after cooking, those flavorful juices will end up on your plate, not in your steak. Allowing your steak to rest will give the juices time to sink back in and throughout the meat, keeping it moist and flavorful. To check the degree of doneness, use a meat thermometer to measure the internal temperature of the steak.

Which Cut Of Steak Is Best For Grilling
When I first started working on this recipe, my top contenders for the steak were the ribeye , the rib steak , the porterhouse, and the T-bone.
Any of those cuts will taste great grilled due to the significant marbling of fat, which leaves the meat tender, and flavorful. Lets take a closer look at each:
- Ribeyes vs. Rib steaks: A ribeye has the bone taken out a rib steak, also known as a bone-in ribeye, is a ribeye with the bone in. Due to its extensive marbling, this cut cooks beautifully on the grill, bone in or out. Trim the thick fat from the outside edgeleaving it on will cause flame flare-ups that can give your steak an unpleasant burnt flavor. Dont worry, trimming it off wont result in lost flavor!
- T-Bones vs. Porterhouses: People often confuse these two cuts, which is understandable because both cuts come from the loin and both have a T-shaped bone with meat on both sides. But porterhouses are larger and actually have more of the tenderloin than the T-bone. The U.S. Department of Agricultures Institutional Meat Purchase Specifications say the tenderloin of a porterhouse must be at least 1 1/4 inches thick at its widest, while that of a T-bone must be at least 1/2-inch.
Ultimately, I chose to use ribeye steak for its flavor, size, and the lack of bone I wanted to slice and serve this steak family-style, and the fact that it doesnt have a bone makes that easier.
