How Steaks Come To Temperature

How to Grill the Perfect Steak | Weber Genesis II Gas Grill | BBQGuys Recipe

Steaks cook fast from the outside in, meaning the outside of the steak will always cook faster than the middle. This is great for achieving a nice crust on the outside, but it means theres a high chance of overcooking while youre waiting for the inside to catch up.

What equates to a steaks doneness is the finishing internal temperature of the steak. This means you have to stop the cooking process prior to your desired doneness.

When steak rests on a plate or cutting board, the heat will rise and continue to cook for a few minutes. By the time its rested, it should be pretty close to where you want it to be.

To bring the steaks back up to the desired temperature, you can finish them French style back in the pan with a bit of butter and herbs. You can also finish them in the oven.

Reheat Steak Safely And Enjoy Deliciousness

When it comes to rehydrating steak, there is no one-size-fits-all solution. To cook steak, place it in a low-temperature oven at 300 degrees for 30 minutes. As a result, the steak will remain juicy and evenly heated. If you have a few minutes on your hands, you can reheat steak in an air fryer, microwave, or skillet. Although you can reheat steak in a variety of ways, it is best to let it sit at room temperature before doing so. As a result, the steak will juicier faster as the internal temperature rises. Finally, you can add a splash of salt to the steak after it has been cooked to add flavor to it. It is permissible to eat steak that has been re-thawed after being cooked to the proper temperature at the time and stored correctly. Steak is recommended to be cooked at 145 F for food safety. As a result, you will be able to enjoy a delicious steak every time with the right preparation and reheating techniques.

The Key To A Juicy Grilled Steak: Faux Dry Aging

The first thing I do after I bring steaks home is start a little faux dry age treatment.

I first learned the value of faux dry aging from Alton Brown way back in the day & Ive been using it ever since. It couldnt be easier & it makes a BIG difference in the cook of the steak. Heres what you do:

  • Generously season the entire surface of your steak with kosher salt. A good rule of thumb is 1 teaspoon per pound.
  • Place a rack on top of a rimmed baking sheet, then loosely wrap the steak with a paper towel & place it on top of the rack.
  • Set everything in the coldest area of your fridge for at least 2 hours or up to 2 days.

Why faux dry aging works The salt draws out the steaks natural water content, which drips into the baking sheet below or gets absorbed by the paper towel. Moisture is the natural enemy of charred grill marks, so removing the water helps create a beautiful crust on the grilled steak as it cooks. Less moisture also concentrates the meats natural flavor for an even tastier grilled steak. Double win!

2-zone grilling is key to getting juicy, meltingly tender steaks on the grill. Fun fact! I recipe tested two steaks side-by-side, one with a 2-zone approach & one cooked solely over direct heat. Even with the same doneness & flavor, the grilled steak that started over indirect heat was much more tender. TL DR? 2-zone grilling is definitely the best way to grill steak!

Full Recipe Directions, including step-by-step photos, are included in the Recipe Card, below.

Before you begin! Take a moment to clean the grillgrates so no other charred flavors interfere. At this point, take the steaks out of the fridge so they can come up to room temperature, too. Room temp steak is also essential for getting a perfect char.

Light the grill with 2 zones of heat. The best grill temp for steak is actually 2 temperature zones! Preheat your grill with one zone of low indirect heat & one zone of high direct heat. If you have a gas grill, simply light half of its burners to the highest setting. If you have a charcoal grill, distribute the lit charcoal to one side of the grill. The half of the grill over the heat source is in the direct high heat zone, while the other half is in the indirect heat zone. Related Reading!Learn all about 2-Zone Grilling.

A Few Words About Grilling

Grilling is a great way to cook steak, but its not the only option. Though grilling gives you that delicious, smoky flavour that cant be replicated on the stovetop or in the oven, there are some benefits to cooking your steak in an indoor grill pan.

For example, if youre cooking for a crowd and you dont have room on the grill for all of your steaks, a grill pan is a much better alternative than risking food poisoning by overcrowding your grill. Its also much easier to use than the typical outdoor grill, and it has much less fat content than grilling outside.

Another benefit of using a grill pan is that it reaches higher temperatures than an oven. Its perfect for searing meat and caramelizing those tasty juices which give your steak that mouth-watering colour and flavour.

Always Pat Your Steak Dry

The golden rule to achieving steak with a deep-brown, flavorful crust? Eliminating as much moisture as possible from its surface. Moisture is the enemy of crispiness. Thats because moisture slows down Maillard reactions, the process responsible for turning steak brown and crispy. Whether youve marinated your steak or not, youll want to blot it all over with paper towels before you season it. Doing so prevents seasoning from melting and inhibits steam from forming when you cook the steak.

The steak sat uncovered in the refrigerator and the surface dried out really nicely. If you didnt have time for that, pat it dry with paper towels before hitting the grill.

  • Check temp with a meat thermometer. A probe thermometer works best, but a traditional meat thermometer works fine as well.

How Long Should I Cook A Steak On The Grill

I always cook steaks on the grill. I do this because I like to serve them with a juicy, hot steak and my favorite side dishes. There are two things I dont like about cooking steaks on the grill. First, you dont get the grill marks. Second, you dont get a grilled flavor. Grill marks add character and flavor to a grilled steak and make them taste amazing. Ive cooked steaks in the oven many times before, but I always get the same results. Ive read a lot of recipes that say you can cook steaks on the grill, but the results were disappointing. Ive found that you really need to cook them on a grill for the full 12 minutes in order to get the great grill marks and the grilled flavor.

Barbecuing The Steak To Cook A Good Steak Without A Grill

While the chuck steak can be barbecued like some other steak. To enjoy your meat its ideal to marinate your chuck steak for somewhere around a few hours before it hits the barbecue.

Yet any of the chuck steak cooking techniques will profit from marinating or tenderizing before cooking to add delicacy and dampness to this solid cut of meat.

With barbecuing this progression is particularly significant. Since the barbecue cooks completely with dry hotness, this can make your chuck steak turn dry and intense.

To start, add a basic marinade of olive oil, garlic, thyme, salt, and pepper to a Ziploc pack with your steak and permit it to marinade for 2-3 hours.

At the point when youre prepared to barbecue, remove your steak, dry completely with a paper towel, and season with salt and pepper. Preheat your barbecue to high and brush with oil to forestall staying. Cook your steak for 5 minutes on each side for medium rare.

What’s The Best Cut For Grilling

While personal preference is certainly a big factor when choosing the right cut, steaks with significant fat marbling are always going to be preferable for grilling because when it comes to steak, fat equals flavor.

You’ll also want to pay attention to the thickness of the steak. Thicker steaks about 1 ½ to 2 inches are the best choice for beginners because they’re harder to overcook. Thick, well-marbled cuts recommended for grilling include ribeye, strip , and filet mignon .

Cheaper cuts like skirt and hanger steaks are also good for grilling, but there’s more room for error with these, as they are thinner cuts. For best results, marinate overnight and use a meat tenderizer to break down the muscle fibers.

Youll see these terms in supermarkets, at the butchers or on restaurant menus heres what they mean.

Grass-fed beef: Grass-fed cattle get to walk around and graze on pasture, which means the meat is leaner with a richer, gamier flavour that tastes of the environment it was reared in. This is why Scottish grass-fed beef will taste different to Irish.

Wagyu: Wagyu is a generic name for four breeds of Japanese cattle. They are fed foraged grass and rice straw, then supplemented with corn, barley, soya bean, wheat bran and, in some cases, even beer or sake. Wagyu cattle produce meat with heavy marbling but this comes at a hefty price.

Ageing: The ageing process improves the taste and tenderness of meat. There are two methods: dry ageing, which is the traditional process where carcasses are hung in a cool place for 30-60 days to intensify the flavour and cause the meat to shrink, while wet ageing is when the meat is butchered and vacuum-packed, which stops the meat from shrinking.

How To Reverse Sear Steak On A Grill

If you are completing the reverse searing process for perfectly grilled steak on your grill, you need to utilize two-zone cooking. This means that your grill is set up with a high temperature zone with direct heat, and a low temperature zone with indirect heat. You want your low temperature zone to be around 225 degrees F. I like to use my smoker for this step for smoked steaks, but the process also works beautifully on a gas or charcoal grill. Here is how to perfectly grill a steak:

  • Preheat your grill. Preheat your grill or smoker for two zone cooking. Your target temperature in your grill is 225 degrees F. If you are smoking, I recommend using oak or hickory wood.
  • Season the steak! Season liberally on all sides with Beef Seasoning, salt and pepper, or your favorite steak seasoning. Press or pat the seasoning into the meat.
  • Cook indirect. Place your steaks directly on the grill grates and close the lid. Using a reliable meat thermometer, smoke until the internal temp of the steak reaches 115 degrees F.
  • Prep for the sear. Open the lid to your grill to heat up your charcoal, crank the heat to high on the direct heat side of your gas grill, or preheat a cast iron skillet to high heat. If using a skillet, drizzle the pan with high temp cooking oil .
  • Sear the steaks. Place your steaks directly in the hot pan or on the high heat side of your grill and sear each side for 2-3 minute until the internal temperature of the steak reaches your preferred doneness.
  • Is It Best To Grill Steak

Grilling steaks is a great way to add flavor to your steak. Grilling gives your steak a great smoky flavor that can be hard to get from other cooking methods. However, this process is a lot of work. Your meat has to be cooked correctly so that it doesnt burn. There are many different types of grills to use, each with their own strengths and weaknesses. Some grills are very easy to use, while others are much more complicated. Some require large amounts of space, while others can be set up right in your kitchen. One of the most popular grills is the open grill. Open grills are great for parties and for grilling large amounts of food at one time. They also offer a great visual effect, with lots of smoke coming out of the top of the grill.
