In the company’s century-long history, Omaha Steaks has remained a Simon family enterprise the current CEO and owner, Bruce Simon is the great-great-grandson of Omaha Steaks founder J.J. Simon. Simon has grown up in the family business and used to accompany his father to the plant as a child before working there during summer breaks from high school and college. Nice In Airport Location
A very nice airport location. A small kiosk store, outside of security on the terminal A side. Friendly staff, lots of product. They’ll ship for you too.
I think that in the past, this was better.I ordered a huge amount around christmas time. Some items were good..Others we had BIG problems with, such as bones in the boneless chicken breasts, and some grisly meat, and chicken fried steaks had big pieces of fat and unfamiliar grossness in it!I would say skip it!They do have good customer service though, as they gave options to replace, or whatever we wanted.
I bought a package of four Private Reserve ribeye steaks that normally sell for $200. Since it was July 1st, I got their Private Reserve discount and a $50 gift card made the price even more palatable. I grilled them as I have for any steak — medium to medium rare for the four of us after having salted and peppered each on both sides. I expected to taste a phenomenal steak worthy of the exorbitant price – what I did taste was less enjoyable than ribeyes I’ve purchased at a supermarket. I’ve learned my lesson.

How To Tell Flank Steak Is Cooked
Flank steak tends to be chewy if overcooked: watch the side of your steak as it cooks, the color will begin to change and creep up the side of the steak when it reaches about 1/4 inch up the side, its time to turn the steak over. Continuing cooking until desired doneness. Because this cut gets tougher the more well cooked it is, the less well done the better. Rare to medium-rare is 125 to 130 F with an instant read thermometer.

What Is Flank Steak Where Does It Come From
The name gives it away. Flank steak comes from the flank of the steer below the loin and sirloin.
It sits in the abdominal area of the animal near the bottom. It helps the cow to twist and walk, so the muscle works A LOT. It is tough, lean and has long thick muscle fibers.
One end is about Â¾ to one-inch thick tapering down to about 1/2 inch on the thinner end. Sometimes youll see some fat on the thinner end. The muscle sits in an area surrounded by fat, but itself is very lean.
Interesting Facts About Flank Steak
Flank steak is the only whole cut that comes from the flank primal basically, the abs of the animal. The steak must be trimmed away from the cut as it is sheathed in a layer of fat. The flank primal also contains some longer, tougher muscles which are used to make ground beef.
The muscle that makes up flank steak is the 19th most tender on the animal. It is one of the toughest cuts that is still recommended for grilling.
The French call this cut âbavette de flanchet.â Bavette means bib. In Spain and some other Spanish-speaking countries, the cut is called âbife de vacio.â Vacio means empty or gap.
Carne asada, a popular Mexican-style preparation for taco or burrito meat, is made with flank or skirt steak.
The National Cattlemenâs Beef Association identifies the cut with UPC number 1581. You may see this number in the UPC code on the beef package label at the supermarket.

Dry Ice Plays A Key Role With Omaha Steaks

When the company began its mail-order operations in 1952, they settled on using wax-lined cartons filled with dry ice to keep the meat cool essentially mimicking a refrigerator. As polystyrene and vacuum packaging became more popular and mainstream, Omaha Steaks ditched the wax-lined containers and began using those, in conjunction with dry ice as the means of keeping the meat cool.
Vacuum packaging, combined with the dry ice, ensures that the meat has no exposure to air and thus, bacteria while the dry ice keeps the temperature down low without requiring any electricity.

Omaha Steaks Ran Into Trouble Over Their Website
When you hear about the Americans with Disabilities Act, it’s usually in reference to physical entities you know, things like wheelchair ramps, parking spots, or restroom accessibility. But one little known fact about the ADA is that websites also have a vague set of rules they must follow in order to be in compliance with the act.
Some advocacy groups have been known to take businesses to court if their websites aren’t easily accessible for blind users. However, because these rules aren’t quite set in stone , these cases are often gauged on a case-by-case basis.
See, if a business’s website isn’t rendered properly so that it can be easily read using text-to-speech software, that essentially leaves the website useless and inaccessible for someone who’s visually impaired or blind. Then along came the Food Network with its roster of cooking shows and charismatic chefs introducing regional flavors and specialities to a national audience, and we got more ideas.
In the case of flank steak, we learned how to marinate and slice the bargain-priced cut of meat to make sizzling fajitas and overstuffed burritos. Gradually, we expanded our horizons to incorporate flank steak into Asian-inspired dishes like Mongolian beef and Italian braciole . And the rest, as they say, is history.
Fast forward a few decades and that once lowly cut of meat with an equally low price point is now one of the most popular beef cuts in the United States. In most major markets, youâll find it priced at, or near, the cost per pound for grill-favorite sirloin strip steak.

Find The Right Temperature
Use a digital meat thermometer to find the accurate temperature of flank steak. Because this cut is thinner than others, it might look not quite done enough on the outside but done more than youd like it on the inside. Once you become more familiar with grilling it, youll get a good idea of its look and feel for the level of doneness you like, but the only way to know for sure what temperature it is inside is with a meat thermometer.
Check flank steak on the grill by inserting the probe into its thickest part and comparing that temperature to the remove from heat temperature in the chart above to determine when to pull it from the grill. Then, temp the steak again after resting to ensure that its reached your ideal doneness temperature.
