I love Top Sirloin.

What is not to love? Good flavor. Not too expensive.

It’s typically the cheapest, tender steak you are going to get before you start sacrificing flavor, tenderness, or both.

When I find myself at a steak house, which I don’t go into often, I will order the Top Sirloin and be quite happy when my bill comes that I didn’t order a more expensive cut.

Philly Cheese Steak Cups

  • Serving: 12 Appetizer Portions
  • tsp canola or vegetable oil
  • small yellow onion thinly sliced
  • bell pepper, yellow or red, seeded and cut into thin strips
  • tsp salt
  • 12-count standard muffin tin
  • tubes crescent dough sheets
  • slices provolone cheese cut into thirds
  • Non-stick cooking spray
  • All purpose flour for dusting


  • Preheat oven to 400°F. Heat oil in a large frying pan on medium high heat. Sear top sirloin steaks 2-3 minutes per side to develop a deep brown crust transfer to cutting board.
  • Turn the pan heat down to medium and sear peppers and onion, stirring often until slightly soft and browned on edges, about 3 minutes transfer to a mixing bowl. Cut steaks into super thin 1/2-inch wide ribbons toss with peppers and onion and season with salt and pepper.
  • Lightly spray muffin tin with cooking spray. Lightly dust work surface with flour. Lay out crescent dough and cut each into 6 squares then round corners. Press discs into muffin tin and place a piece of provolone at the bottom of each dough cup.
  • Discard excess liquid from steak mixture evenly divide within each dough cup and top with remaining provolone.
  • Bake for 8 minutes, rotate pan and bake 5-6 more minutes until dough is golden brown and cheese is bubbly on top. Cool steak cups at least 10 minutes in tin before serving.

    How To Cook The Perfect Steak

    1. For steaks that are 1-inch thick or greater: grill or sear for 3 minutes per side for medium-rare, 4 minutes per side for medium.

    2. For steaks that are less than 1-inch thick: grill or sear for 2 minutes per side for medium-rare, 3 minutes per side for medium.

    3. Use a meat thermometer to properly cook your steak. Just insert it horizontally into the side of the cuts center while making sure not to touch any bones or fat.

    What Is A Top Sirloin Steak

    The Top Sirloin steak comes from the sirloin primal of the cow. It is one section up from the round primal which is the back end of the cow. Beyond the sirloin is the short loin, rib, then chuck.

    The sirloin is not as tender as beef from the short loin primal but it is more tender than from the round. This is why it makes for a good value steak. To Sirloin is not quite as tender as the more desired cuts from the short loin.

    The sirloin primal itself can be divided into 2 sections – top and bottom. Clearly the top sirloin is cut from the top portion of the sirloin. The bottom sirloin is where Tri-Tip comes from.

    Top Sirloin steaks can be cut further into Top Sirloin Filet steaks. These are the most tender parts of the sirloin and looks like tenderloin. It can be a good replacement for tenderloin, but I don’t find it sold at too many places.

    How To Cook A Top Sirloin Steak

    Grilling a Top Sirloin Steak or any steak really is always a good idea. However there is a way I like to prepare a Top Sirloin that it often overlooked. Sirloins do really well broiled. Broiling a steak is like grilling, expect the heat is coming from above instead of below. I learned this method from Alton Brown’s book I’m Just Here for the Food. I have had success with this method many times.

    There are other steaks that have the name sirloin in them – Petite sirloin, sirloin tips, etc. These cuts are not as tender and as prized as the top sirloin. They may require different cooking methods. For this post we are just taking about top sirloin steaks.

    The grading system used by the United States Department of Agriculture determines the quality of beef based upon a complicated inspection system that measures the amount of marbling in the ribeye muscle portion, then combining that marbling with the maturity of the beef to determine the USDA grade. The more marbling and the younger the beef, the higher the grade and quality as the fat marbling is what determines tenderness, juiciness and flavor, while the age of the beef determines texture as well as flavor. The highest grade is Prime, and Choice is the second highest, followed by Select.

    What Is A Good Price For A Sirloin Steak

    You can expect to pay between $5.99-$7.99 a pound for Top Sirloin steak. Watch for sales at Whole Foods. I really like their meat department and if you can get the Top Sirloin on sale it will be one of the best values.

    I don’t see prime Top Sirloin steaks at Costco all the time, in fact as of writing this post this was the first time I saw them. I think that would be a great choice to try out Prime beef and see if it is really worth it to you to get it over choice beef.

    The prices at Trader Joe’s are too high on sirloins as well as any steak really. $12.99 for a Top Sirloin. That is Ribeye prices! I think they are just overpriced at Trader Joe’s and should be avoided. There is better value elsewhere.

    Sometimes you can find USDA Prime graded Top Sirloin at Costco. A great option for trying prime beef.

    Dry Rub Chimichurri Skewers

    • Serving: 4 Servings
    • tbsp corase black pepper
    • tbsp granulate garlic
    • tsp toasted sesame seed
    • scallions, thinly sliced


  • Combine 1/4-cup soy sauce, egg whites and Shaoxing wine in a mixing bowl whisk thoroughly. Cut top sirloin cap steak into 3-inch by 1/2-inch strips stir into marinade and refrigerate 30 minutes.
  • In a small mixing bowl, make a sauce by whisking together remaining 2-tablespoons soy sauce, honey, rice wine vinegar, gochujang and sesame oil. Set aside.
  • Preheat deep fryer or Dutch oven with oil to 375°F. In a shallow pan combine flour and corn starch and add marinated beef. Stir beef in breading until well coated and dry to the touch.
  • Dust off excess breading and fry in batches 4-5 minutes until crisp and golden brown. Remove from fryer and allow to drain briefly of any excess oil. While still hot, toss in honey gochujang sauce garnish and serve!
