You can pick up an inexpensive instant read thermometer at the grocery store or Amazon, or I am obsessed with this digital probe thermometer you will never overcook any protein again! Instant read thermometers can be temperamental, but this digital probe thermometer retrieves temperature precisely to within ±1.8°f and you leave it in the steak while it cooks, whether on the stove, grill or oven.

How To Grill The Perfect Ny Strip Steak

Serves: 2 | Prep Time: 15 minutes | Cook Time: 5 Minutes

Ingredients2 tbsp compound butter

Step 1: Place the steaks and compound butter on the counter and allow them to come up to room temperature for about an hour.

Step 2: Light grill and set up for high direct heat. Youll want to get the coals as hot and as close to the cooking grate as possible. If using a gas grill, allow the grill to preheat with the lid closed for at least 15 minutes.

Step 3: Evenly coat strip steaks with olive oil and season them liberally with coarse sea salt. Put two pats of compound butter on each plate and set aside.

*Tip I dont recommend putting pepper on at this point as the extreme heat will burn it, producing a bitter flavor. I also dont recommend using a premixed rub as many of them contain sugar which will also burn. Trust me on this one, just use the salt and let the meat shine through.

Step 4: Place steaks directly over hot coals and flip every 20 seconds. With each flip, place the steaks in a different spot on the grill grate. This allows the best searing to take place through conductive heat. The steaks below have been on the grill for about 2.5 minutes total, and you can already see that nice crust forming.

Step 5: After about five minutes of total cook time, use a reliable quick read meat thermometer to check the internal temperature of the steak. Remove steaks from the grill when the internal temperature reaches 115° F for a medium rare steak.

My Method For Grilling New York Strip Steaks

Around The World Restaurant: Easy Grilled Indoors New York ...

Sometimes I’m in the mood for a really simple steak. Today was a salt and pepper day. I simply sprinkled salt and pepper on both sides of my huge steak.

Use a good quality Kosher salt and a coarse ground pepper. none of that table salt for a beautiful steak like this.

Once my grill was heated to the appropriate temperature I added my steak over direct heat. Make sure you have a probe thermometer on hand to monitor the temperature of the steaks throughout the grilling process.

Can I Meal Prep Strip Steak

Yes! Strip Steak makes fantastic meal prep or leftovers if not initially overcooked. If you are cooking steak specifically to reheat later then consider cooking it slightly less than your desired doneness because it will cook a little more when reheated. See a couple sections below for all sorts of ways to leftover steak.

A New York Strip Can Handle Being Grilled In The Medium To Well Done Range Because Of The Fat Content

When grilling a NY strip steak we will follow all the same basic steps as grilling any higher end cut of beef. While using a slightly lower heat and keeping and eye out for flare ups caused by the melting fat from the edge.

Step 1: Remove the strip steaks from refrigeration at least 1 hour before grilling and season to taste. For almost any steak we will only season with either salt and pepper or Lawreys seasoning salt. In either case use just a light dusting that covers the entire steak. If you feel like you must cover your meat while out of the fridge, set a paper towel over the top. Over this hour not only will the steak be reaching room temperature it will be breaking down and absorbing your seasoning.

Step 2: Preheat your grill to a medium high heat, when grilling with charcoal have multiple heat zones available. We use a lower heat then normal here to help slow down the cooking process. If using a gas grill you may preheat to high to get better grill marks, just turn down the heat before the steaks hit your grates.

Step 3: Grill a NY strip steak directly over the flames for 2 to 4 minutes, depending on thickness. Until they no longer stick the grill grates. If you only used dry seasonings they will release on there own when they are ready. If you are cooking a thin cut strip and it takes more then 3 minutes to release from the grates jump to step 5 and check your temperature.

Choose Meat With Marbling

When trying to pick the best cut of beef for New York strip, try to pick out meat that has the most signs of marbling on the surface.

These are the grains of white fat that you often see running through the flesh of red meat. As beef cooks, this fat will start to render and melt and start to tenderize the meat and add more flavor.

Do Steaks Need To Come To Room Temperature

How to Make a New York Strip Steak

Elizabeth Karmel, author of the brand new cookbook Steak and Cake, insists that the need to bring a steak to room temperature before cooking it is a myth. This is a woman who knows her way around a steak, and a grill. She maintains that cooking a steak from a cool temperature is the way to go, and I think there is merit to that, especially if you like your insides rare, and your outside nice charry browned. I think this notion is especially true when it comes to grilling. And again, its very true for thinner steaks, which can benefit from the middle staying cooler long to give the outside a chance to get those lovely grill marks.

A Wagyu Strip Steak is gonna be the best quality but its also the most expensive by a lot. Prime is also a fantastic premium quality that’s a bit more affordable and available locally.

After that we move dow to Choice and then Select. Both are still good steaks but they will be less tender then Wagyu or Prime New York Strip Steaks.

My best recommendation is buy the best steak you can afford. if its just a Tuesday night select or choice will due just fine but if its a special occasion or you want to impress you should treat yourself to a premium steak every once in a while.

The one I got from Snake River Farms is perfect for it, hence I recommend them as I loved the quality of New York Strip Steak from them.

The problem is that it is not that easy to make the meat tender and stay juicy.

That is especially true if you use direct heat from the grill as it can easily burn the crust of the steak.

So you need to be careful and cook the steak at the right temperature and timer to make sure that it cooks all the way through while also making sure that it stays tender and juicy.

The New York strip steak is not the softest cut of meat. It is a great choice since it gives off a meaty flavor, so once you cook it properly, you will have one of the best steak meals at home.

  • Pat the steaks dry, rub them with a high smoking point oil, followed by the spice rub.
  • Make the compound butter while the steaks are resting. Mix all of the harissa butter ingredients together in a medium bowl- thats it! You dont need to form it into a log and refrigerate because we want the butter at room temperature so it melts upon contact with the sizzling skillet.
  • Preheat a cast-iron skilletfor several minutes over HIGH heat until smoking. Add 1 tablespoon vegetable oil.
  • Add the steaks to the hot skillet and let them sear until golden brown, about 3-4 minutes. DONT touch the steaks during this time so they can achieve the crispy, golden exterior.

  • The Two Best Ways To Grill Steak

The ideal grilled steak has an appetizing browned exterior with tender, still-pink meat inside. The tricky part is making sure that you don’t burn the surface of the meat before the inside gets warm enough to eat, or cooking the inside too much before getting those nice surface grill marks.

There are two ways to go about it.

  • Direct grilling: Cooking the steak over high heat, and flipping occasionally until the meat reaches the desired internal temperature .

  • Reverse searing: Cooking the steak slowly at a low temperature with indirect heat to get the meat 10 to 15 degrees from the final desired internal temperature, then finishing by cooking over high heat to get browning and grill marks.
