Once in Tuscany, you have to taste the traditional bistecca alla fiorentina, and which restaurant is your best bet? About 40 kilometers north-west of Florence, you find this little gem owned by Paolo Mugnai. The chef cooks the two fingers thick bone-in piece of meat right in front of you, so you can have a feast for your eyes, as well as for your taste buds.

You would think the steak has many different seasonings to give it that amazing taste, but you couldnt be more wrong. All he adds is a little sea salt and a drop of their amazing Tuscan Olive oil, and thats it. Enjoy!

Cut Beverly Hills: Tasting Of New York Sirloin

Wolfgang Puck needs no introduction. His name is as synonymous with the growth of American fine dining, and the original location of his Cut steakhouse in the Beverly Wilshire may be one of the most-extravagant experiences in his empire of dozens of restaurants. The most expensive steak on the menu is naturally their pure-bred Japanese wagyu from the Miyazaki Prefecture at $26 an ounce, but for our money, the better value is their Tasting of New York Sirloin, still a hefty price tag at $140, featuring three preparations of sirloin, including a USDA Prime dry aged for 35 days, American Wagyu from Snake River Farms and a two-ounce slice of that $26-per-ounce Miyazaki beef.

Epic Steak San Francisco: Wagyu Flight

San Francisco’s Epic Steak doesn’t hold back. In-the-know diners kick off time there at the upstairs Quiver Bar with views of the Bay for the Holy Cow! Happy Hour, before heading down to get serious with some seriously decadent meat, in six-ounce portions. Their Wagyu Flight is the beef experience of a lifetime essentially a tour across Japanese prefectures to taste the diversity of their meticulously raised cattle. The Imperial Wagyu uses cows who’ve developed for at least 400 days, Miyazakigyu A5 has the tightest marbling of the lot, and their Snow Beef A5 comes from the northern-most point of Japan in Hokkaido, raised in freezing conditions which result in an extra-low melting point. It’ll set you back $180, but its a trip across Japan on a plate.

The Most Expensive Steak In The World: The Vintage Cote De Boeuf Rib Steak

While all the above steaks are extremely expensive and rare, they can still be obtained to be cooked at home. There are, however, steaks that are so rarified, they can only be found in select restaurants and for a very hefty price tag. More specifically, we are referring to the the Vintage Cote De Boeuf Rib Steak from Boucherie Polmard in France, which is without a doubt one of the most expensive beef cuts on the market today.

But what makes this steak so expensive and so exclusive?

For one it can only be purchased from one butcher in Paris known as Polmard Eleveur Boucher. There the head butcher, Alexandre Polmard, hibernates the beef, essentially aging it for 15 years. For comparison purposes, most beef you can buy around the world is aged for about 21 days.

Once slaughtered, the beef is stored in Boucherie Polmards on-site food laboratory where it is air chilled down to -45 °F. This is done by a special technique of blown super chilled air onto the meat at exactly 47 mph.

After 15 years of aging, the beef develops a rich and unique taste that has made it a favorite of Michelin-starred establishments around the world.

A simple ribeye will set you back a whopping $3,200 . While you can technically purchase one of these steaks directly from the butcher, due to the slow and limited production, restaurants like have years of stock backordered, making it extremely difficult to simply walk in and buy a few cuts.

If you’re looking to feed a family, you might think it makes sense to visit Hoss’s Family Steak and Sea. However, despite having the word “family” in their name, there’s really nothing family-friendly about this eatery. First of all, the dining experience isn’t overly comfortable. Secondly, while their steak prices aren’t the highest on this list, their meat is definitely overpriced for the second-rate quality. The only family-friendly aspect of Hoss’s Family Steak and Sea is their reasonably priced kid’s menu.

Beef Grading : How The World Grades Beef

As you know by now, the degree of of marbling on the RibEye is the primary determinator of beef quality grade.

Each country grades their beef differently. In the US, we follow the USDA grading while others use letters and numbers like A4. Restaurants, supermarkets and butcher shops tend to mix-and-match these grades in their menus which can be very confusing.

The three predominant grading systems are the US, the Japanese and the Australian.

Here is a useful chart on how these systems compare to each other:

BMS stands for Beef Marbling Score and it is the easiest way to compare accross the different major grading standards.

The first thing you will notice is that the Japanese grades go above and beyond the US grades. That is because of Wagyu beef.

Wagyu beef is generally regarded as the highest grade due to its extreme levels of marbling.

Angus beef, which is the most predominant beef in America, averages a BMS of 2 but reaches a maximum BMS of 5. Grass Fed beef will grade Choice at best

Wagyu cattle averages BMS 4-6 but depending on genetics, nutrition, and age at time of slaughter, can go all the way up to BMS 11-12.

Do note anything above BMS 9 will be rare and extremely expensive. We recently sold a A5 Whole Tenderloin for over $1,400!!

Buck Knives is an odd name to show up in the kitchen cutlery, and theyve entered this part of the knife industry in a very Buck Knives style.

On these knives you get the standard Buck 420HC steel with the Paul Bos heat treat, which is technically a lower grade material but I would be more than ready to put it up against 440C or any of the kitchen knives rolling out with the German 1.4116 steel.
