What Grade Is Sushi Grade Tuna
A sushi grade fish is the highest quality available at the store, and one that is confident to be eaten raw is the one that is labeled sushi grade. In the case of tuna, for example, wholesalers inspect and grade the product. Grade 1 is usually what is sold as sushi grade, and the best ones are assigned that grade.
Can You Use Ahi Tuna Steaks For Sushi
Any sushi or sashimi-grade ahi tuna can be used for sushi, be it fillet or steak cut. A steak has simply been cut thicker and differently than a fillet but offers the same taste and texture as sushi.
If you cant find sushi or sashimi-grade tuna, dont be tempted to just freeze the fish you buy.
To kill the parasites, fish must be frozen at -4°F or below for 7 days at a minimum. Your fridge at home just isnt going to go that low. You can, however, sear the ahi and use it that way.

The trick to cooking tuna steak perfectly is a screaming hot skillet so you can sear the outside nicely while keeping the inside raw. It has to be super-hot because its only on the stove for 2 1/2 minutes!
Oil and season steaks Rub oil on the tuna steak then sprinkle with salt and pepper. I like to use olive oil because it has a bit of flavour, but any oil is fine here
Preheat skillet until smoking hot Use a heavy-based skillet so it can be preheated until its so hot that you see smoke coming from the pan.
TIPS:Do not use a non-stick fry pan. These are not made for high heat cooking and you will ruin the non-stick coating Do not oil the skillet before preheating. It will smoke out your house! If its a well-seasoned* cast iron pan or grill pan, as I have used, then theres no need to add oil into the skillet because weve oiled the tuna If you need to oil a skillet , wait until it is super-hot then lightly brush with oil. Use either a heat-proof basting brush, paper towel lightly dipped in oil, OR take it off the heat then spray lightly with oil. Never spray a screaming hot skillet with oil ON a gas stove if you value your eyebrows and your house its a fire hazard!!* A seasoned pan is cast iron or carbon steel pan that has developed a natural non-stick patina through repeated use. It should also be kept lightly oiled to stop it from rusting

How To Make Ahi Tuna Steak:
1. Take the Ahi Tuna out of the refrigerator. Remove the packaging, and set aside.
2. In a large dish, mix all of the marinade ingredients together. Reserve about four tablespoons of the marinade. Add the tuna steaks to the dish, and turn them until theyre well-coated. Set aside, and let them rest at room temperature for about 20-30 minutes.
3. Heat up a non-stick skillet over high heat. Sear the tuna steaks for about 1-3 minutes on each side, or until the steaks reach their desired doneness.*
4. Place the cooked steaks on a cutting board, and slice against the grain into ½-inch thick slices. Transfer the steak slices to a serving plate and drizzle with the reserved maple-mustard marinade. Serve immediately.
*It is best to leave the middle of the tuna steak raw. Searing time will depend on your personal preference and on how thick your tuna steaks are. I like to stay and watch the steaks closely while searing. It is easy to see how the steak changes color as it cooks, so when it looks like its 25% cooked on the bottom, I flip it and cook it for the same amount of time on the other side.

Sushi-grade tuna was cleaned and frozen immediately following being caught while still on the boat which reduces the chance of parasitic infection from eating it raw or seared. Regular tuna may or may not be cleaned or previously frozen, so cooking is necessary to ensure any parasites are killed before consuming.
But sushi-grade is not a regulatory term.
In other words, its unlike Prime Beef, where the USDA has certain criteria that must be met. But what exactly happens to tuna on the boat to make it sushi-grade?
Sushi grade Tuna has undergone Parasite Destruction Guarantee, while regular Tuna hasnt.
While the FDA doesnt provide guidelines for determining which fish is sushi-grade and which isnt, it has procedures in place that must be followed if fish is to be consumed raw.
Parasite Destruction Guarantee is to ensure the fish has no parasites before theyre eaten raw. Its about doing the following:
- Freezing and storing at an ambient temperature of -4°F or below for 7 days

Any product sold as sushi-grade will likely follow FDA guidelines for freezing, regardless of whether there is a legal requirement.

If youre nervous about eating raw fish, you should use your best judgement. You can always choose to cook these ahi tuna steaks all the way through to be well-done.
But tuna steaks are usually served seared on the outside and raw on the inside. Look up any seared ahi tuna recipe and you will see that it is almost always cooked this way. If you order it a restaurant, its bound to be cooked medium-rare as well.
Id recommend getting over your fears and jumping on this bandwagon . Fully cooked tuna can be a bit dry , but when the outside is a crispy, salty, savory layer and the inside is a supple, soft, tender layer, it enhances the taste so much and the texture is amazing.
Plus, many of the bacteria that makes raw foods more risky to eat is usually found on the surface of the foods. If you sear the outside, as in this recipe, youre killing off the bacteria that may make you sick. Same goes for a good seared steak.

There are three varieties of tuna: yellowfin, bluefin or albacore. When you buy fresh yellowfin or bluefin tuna from a seafood counter or fish market, it should have a firm texture and rich, red color. When you buy albacore tuna, it should also have a firm texture but a pale color. All three varieties have similar taste profiles and textures.
It is best to get steaks that are at least 1 1/2inches thick, if you plan on grilling or broiling your tuna steaks, so that they wont dry out easily. You can also buy a large tuna roast, like a pork or beef roast, if you prefer to cut it up yourself.

How Do You Know If Ahi Tuna Is Sushi Grade
To know if ahi tuna is sushi-grade, read the label, or confirm with a fishmonger at the grocery store that the ahi tuna you intend to buy has been frozen on the boat immediately following being caught.

Fresh tuna is a great choice for the grill, but since it can be expensive, its important to know how to tell if youre getting your moneys worth.
The best-tasting tunabluefin, yellowfin, bigeye, or albacorewill range in color from deep red to pink. Ideally, tuna will be displayed as a whole loin, and steaks will be cut at your request. But if your store displays steaks already cut, look for moist , shiny, almost translucent meat. This means the steak is fresh and recently cut. Cut steaks will begin to oxidize and turn brown fairly quickly. If they look dull and matte, or very brown, then theyre probably old. Another sign of age is gapping, when the meat of the muscle starts to separate into flakes. If youre in doubt about freshness, ask for a smell the fish should have a fresh sea-air smell, not an overly fishy odor.
All tuna steaks will have a strip of darker meat running through them. This nutritious meat is perfectly edible but has a strong flavor that many people dont like. You can cut it out, or better yet, choose steaks with a minimal amount of it.
