    I always recommend the american company Lodge for their cast iron. High quality, American made, and won’t break the bank.

    • Griddle – For small steaks like these ones, a grill works perfectly fine. A grill is always the perfect vessels for hamburgers. Both steaks and burgers are easy to flip on a griddle because the sides are so shallow.
    • Skillet – A skillet will have high sides. Good for making cornbread in. And can be do a steak proud as well. Not as easy to flip as in a griddle but a skillet is more versatile.
    • Grill Pan – If you want those nice grill marks turn to a grill pan. They have ridges that will give you that very appetizing looking grilled appearance.

    Use Salt To Tenderize Sirloin Steak

    Dry brine is the process of using salt to tenderize beef steak or any other piece of meat, for that matter. Its an extremely simple method that can be done at home with just one ingredient salt.

    Dry brine is used for tougher cuts of steak such as sirloin steak, flank steak, hanger steak, skirt steak, etc. The salt helps to break down the tough muscle fibers in the meat, making it more tender and juicy. Heres how it works in simple terms: the salt pulls the moisture out of the steak and then re-absorbs it, making the steak more tender. The process is called osmosis.

    Its important to know which salt is best for dry brine. The two most popular types of salt are kosher salt and sea salt. By far the best one is coarse kosher salt as its easier to find and has a more coarse grain which makes it easier to control the amount of salt that youre using, unlike table salt, which is very fine and can easily make your steak too salty.

    Season sirloin steak with a generous amount of kosher salt and wrap it with a plastic wrap or place it in a ziplock bag. Remove as much air from the bag as possible. Let it sit in the fridge for at least 1 hour, up to 12 hours. The longer you let it sit, the more tender your steak will be however, dont let it sit for more than 12 hours, as the salt will start to draw out too much moisture from the steak and make it too salty.

    When Grilling Steaks How Hot Should The Grill Be

    1. Preheat your grill for 10 to 15 minutes with all of the burners on high or the dampers open and the lid closed.

    2. While your grill is heating up, take your steaks out of the fridge, season them, and let them come to room temperature.

    A steak that is room temperature will cook faster than one that is cold, and shorter cooking time means less time for the steak to dry out. Furthermore, when you put a cold steak on the grill, it contracts more, allowing more juices to escape.

    3. Clean your grills grilling grates and set it to direct, high heat. Steaks should be cooked at a temperature of 450F to 500F.

    4. Place your steaks on the grill, close the lid, and cook for 2 to 3 minutes, depending on how thick your steak is.

    5. Move your steaks to a different part of the grill. Theyve already absorbed heat from the region of the cooking grate where they were first placed. Moving them to a new location ensures that the cooking grate remains hot enough to create those gorgeous sear marks.

    6. Check the doneness of your meat.

    7. Remove the steak from the grill when its done to your preference and let it rest for 30 to 40 percent of the time it was on there.

    **A thicker steak will require more time to cook. If thats the case, sear your steaks according to steps 1-5, then finish them in an indirect zone. This will keep the outside from burning before the inside has finished cooking.
