How To Grill Ribeye Steak Medium Well, well done, The Country Cookin Show

Grilling with or without a lid If youre searing steaks and need to keep an eye on the situation, leave the lid open. Once youve switched it to indirect heat, you can close the lid and let the smoke do its work for you. Quick-cooking meals can normally be cooked with the lid open the entire time.

Place Your Meat On The Grill And Keep An Eye On It

The cut of meat you choose, its weight and the temperature you desire will determine how long you grill it. Use your meat thermometer to check the temperature, and remove the steaks when they are within 5 to 10 degrees of the desired doneness. They will continue to cook after they are removed from the grill.

Use these temperatures to determine doneness:

  • Rare: 120°F

  • Medium-well: 150°F

  • Well done: 160°F

Many grill enthusiasts like to baste their meat. To baste, simply add your favorite sauces to a bowl and brush the meat with a basting brush each time you flip it.

How To Season Steak

Beef purists may prefer to take in the unadulterated, rich flavour of a quality steak by adding nothing more than a sprinkling of salt and a generous twist of pepper. Contrary to popular belief, seasoning your steak with salt ahead of time doesn’t draw out the moisture but actually gives the steak time to absorb the salt and become more evenly seasoned throughout. Salt your steak in advance 2 hrs for every 1cm of thickness. For a classic steak au poivre , sprinkle lots of cracked black pepper and sea salt on to a plate, then press the meat into the seasoning moments before putting it in the pan.

Some people like to enhance flavour and tenderise meat with a . Balsamic vinegar will reduce down to a sweet glaze, as will a coating of honey & mustard.

Lots of chefs add whole garlic cloves and robust herbs like thyme and rosemary to the hot fat while the steak is cooking, which adds background flavour to the steak subtly, without overpowering it.

How To Select The Right Temperature For Sous Vide Steak

Medium Well PORTERHOUSE Steak/ Ninja Foodi XL Grill – #3145

The doneness of a steak is by and large determined by the maximum internal temperature it reaches during cooking. For instance, so long as a strip steak does not rise above 130°F , it will never cook beyond medium-rare. With traditional cooking methods, there is a very short window of time during which your meat is perfectly cooked. A minute too long will mean overcooked meat. With sous vide cooking, on the other hand, that window of time is stretched into hours, which means your steak will be hot and ready to go whenever you’re ready to sear and serve it.

Temperature can have a major impact on the juiciness and texture of a steak. Here, I’ve collected juices expelled by three nearly identical steaks cooked to different temperatures:

The one cooked to 160°F lost more than 10 times as much juice as the 120°F rare steak. Additionally, with the well-done steak, you can see a distinct layer of rendered fat floating on top of the juices. I recommend cooking steak in the rare-to-medium range, so that you minimize juice loss while also keeping those fats inside the steak where they belong, adding flavor and juiciness to each bite.

Here’s a rough breakdown of how steaks feel at different degrees of doneness.

Steak Doneness By Internal Temperature

How do you know when the center of your steak has reached the proper temperature? The best way is to measure the internal temperature.

Steak is safe to eat when it reaches 145° internally, which is considered medium-well. But to achieve your desired doneness, you may have to alter the temperature accordingly.

  • Rare steak 120-130 °F internally, with a red center. At 400°, cook for 2:30 minutes per side.
  • Medium steak 135-145 °F internally, with some pink in the center. At 400°, cook for 4:30 minutes per side.
  • Medium-well steak 145-155 °F internally, light pink center. At 400°, cook for 5:30 minutes per side.
  • Well-done steak 155-165 °F internally, primarily brown center. At 400°, cook for 6:30 minutes per side.
  • “What Have You Done?” steak 165 °F+ internally, a brown center. At 400°, cook for 8 – 10 minutes per side.

For the best steak every time, invest in a digital thermometer with a thin probe and know for sure when that pricey cut is at the peak of perfection.

Now let’s talk about how to get there:

How To Choose The Best Steak

It may seem overwhelming when you head off to the store to pick a great steak to cook. There are so many options! So what exactly do you want to look for? Here are a few clues:

  • Check out the marbling of a steak as the white streaks of fat that are visible on a cut of meat is what gives it flavor. Look at the grade given to the piece of meat by the USDA. This rating is given to steaks to reflect the overall quality.
  • The thickness of the meat will obviously be an indication of the cooking time required to cook the piece through for doneness. Plan on a thicker cut of meat requiring more time to cook on the grill.
  • Choose the cut of steak you want to cook. Popular cuts that are available include chuck or rib eye steak, flat iron, tenderloin or filet mignon, flank, strip steak, skirt, porterhouse and T-bone steak.

Amp Up The Flavor With Butter Sauce

When I first began work on this recipe, I tried dry rubs, oil, and simple salt and pepper. All of these are wonderful things to put on steaks, but I felt like it needed more.

I settled on basting the steak with an herbed butter sauce. First, because butter. Second, because I have an extensive herb garden and it didnt require a trip to the store. I was worried that the butter might burn on the grill, and leave an acrid flavor, but it didnt.

It was pure deliciousness. The herbs added complexity without masking the meatiness of the steak.

After cutting the meat, you need to season it properly or marinate it. Marinating the meat ensures a more flavorful taste hence it is the best option. Another important thing is the duration of marination. For a more delicious taste, a minimum of 4 hours of marination is required.
