Our flavorful TenderBison ribeye case includes 4 ribeye steaks, 10 ounces each. Our ribeye delivers a more tender, richer and sweeter flavor than beef and is hand-cut by our Master Butchers. It also contains more marbling than other bison steaks which gives it an irresistible taste and makes it a perfect fit for grilling. Make sure to cook at low temperatures for best results.

How is my order shipped?Your order will be handpicked from stock held in our refrigerated warehouse. It will be carefully packed in an insulated box with reusable gel packs designed to maintain your items in good fresh condition for up to 48 hours. Orders are shipped frozen via UPS 2 day service Monday- Wednesday, you will receive notification of any delay or cancellation of your order. Please note, however, that frozen items may begin to thaw during transit but as long as the meat and gel packs are still cool you should be able to refreeze the meat and use as desire. All orders received on Thursday thru Sunday will be held for the following Monday.

Reinventing Our Company March 2020

Recently our company goal and business plan was to raise the best bison possible and supply local Colorado front range restaurants. That all changed when COVID-19 hit and all Colorado dine-in restaurants closed and left take out and delivery options only.

Rock River Ranches lost 80% of our business in one week.

On March 23, 2020 Rex places an ad on Denvers Craigslist and wrote an impassioned plea on his personal Facebook page, I need your help Rex wrote. He only had 150 FB friends on his little used FB page. Within one hour there were 1,000 shares, at five hours 12,000 shares and within 12 hours 24,000. Emails and calls to help buy the excess inventory in the cooler and freezer began pouring in from all over the US.

Rexs FB post had gone viral. Earlier on Monday he had told his landlord he could not pay his rent. By Tuesday evening RRR had taken so many orders all the bison meat was spoken for. They had taken so many orders in three days that it will take a month to produce more product and fill all the orders. Three television stations aired Rexs story along with a newspaper and radio station.

This is part of our business is here to stay direct to consumer. It is our way of saying thank you to America and our social media friends. Please watch the news stories about our turn around success.

How The Butchers Prepare Ribeye Steak

Cook on high dry heat to medium rare for the most tender, juicy flavor possible. Oh, and once you take your beautiful Butcher Shoppe ribeye off the heat, let it sit for five to ten minutes before servingvery important! In terms of medium, grill, pan fry, and broiling are the most common preparations.

Ribeye likes high heat, so make sure to preheat your grill accordingly. Season both sides of your steak to your liking . Cook each side for about 4-6 minutes. Time to medium rare will depend on the size of your particular cut, so we recommend using a meat thermometer to get it just right. Finally, keep an eye on the grill in case all that juice fatty deliciousness causes flare ups . For extra-marbled ribeye steaks, consider using a cast iron skillet directly on the grill.

Not terribly different from cooking ribeye on the grill. What were looking for here is that beautiful, crusty, sear. Season your ribeye at room temperature with good kosher salt and fresh cracked pepper generously. Set your broiler to high and move the rack to the second or third position for optimal heating. Put your ribeye on the broiler pan and put it into the broiler, cooking each side about five minutes. That should do it!
