I have been looking into sources where I can buy bison meat. It’s not as readily available as beef, so I have had to search out some sources. It was quite a search that is still ongoing today since I orginally wrote this post back in 2012.
I’m glad to say that it is becoming more readily available.

Unlike most cattle, bison are pasture-raised on good quality forages native to the ecosystem. Our bison are given a feed program that provides them the freedom to more or less choose what they want to eat. For the majority of their lives, they will feed on grass, natural weeds and forage in the open pasture. In addition, ranchers also give them Timothy Hay or Alfalfa Hay. Prior to harvest, they are also given a small amount of grains . This helps to create a more consistent quality and flavor of bison for the consumers.
Bison Or Buffalo Whats The Difference
For many years, bison and buffalo have been used interchangeably. However, they are in fact different in their physical make up, their diet and how they are used by man. Product that is labeled as buffalo is commonly water buffalo, an entirely different species of animal that is mostly domesticated, like cattle, and can be found in Europe, Asia and Australia. Bison, on the other hand, is considered wild or game meat, as bison are raised in their natural habitat and arent domesticated. There was a time when buffalo were endangered, but worry not, these animals have made a huge comeback. Citing information from the Canadian Bison Association: In 1996 when the first census of the bison industry was taken, there were just over 45,000 bison on 745 farms in Canada. That had grown to an estimated 145,000 in 2001 on almost 1,900 farms. The number of farms raising bison remained at just under 1900 in 2006 and the herd grew to almost 200,000 head.
In 2011 the census reported just over 125,000 animals on 1,211 farms and ranches. Most bison are located in Manitoba, Canada where there are tracks of land with thousands of acres being used to raise bison. Our bison graze of these enormous tracks of land. They do not live in barnsever. In winter, they supplement their feeding with hay laid down for them but mostly these hardy, healthy beauties dig right through the snow to find grass. The environment is faring better with bison making such a comeback due to the enormous areas of land now being reserved for these magnificent and tasty creatures.
