How To Cook Tomahawk Steak On A Grill Or Smoker

Because its so big we need to slowly warm him up rather than sear it straight off, because the edges will char, and the inside will be raw. So here I will suggest using the reverse sear technique.

I also suggest investing in a good instant-read thermometer if youve not already got one, to make sure its cooked to the doneness level you want and not a degree more!

Here are our grilling instructions:

  • Remove the steaks from the fridge and bring to room temperature, this will take around 1 to 2 hours, and then pat dry and add your seasoning.
  • Light your coals in your chimney, and once theyre at temperature and ashy, slide them to one end of the grill leaving the other side empty of coals. Place your tomahawk on the grate above the empty side of the grill.
  • Flip every 5 minutes or so, including onto the sides, still ensuring its on the empty side of the grill away from the direct heat source.
  • After 15 minutes, use your thermometer and check the inside, and once the inside has reached 115f to 120f pull it off and cover it in foil, leaving it to rest for around 15 minutes.
  • Now to get searing, so bring more heat to your grill by adding more coals to your chimney, and once ready put them into the grill above the original coals. Let the grate heat up for 3 to 5 minutes, and once hot, place your tomahawk directly above the coals.
  • Serve straight away and enjoy!

    Hybrid Grilling Your Tomahawk Steak

    Another good option is to follow the steps above for the low and slow section, and then finish the steak off in a hot pan.

    This is a good option if youre grill or smoker is set up for low and slow and you dont want to reconfigure it for searing.

  • Set up your grill, as above, using the two-zone grilling method.
  • Once the steak reaches a temperature that is about 15-20 degrees away from your desired level of doneness, remove it from the heat and set it to one side.
  • Heat up a cast-iron skillet until it is smoking hot. If your grill has a side burner, its best to do this outside, so you dont set off all the smoke alarms.
  • Put your steak direct into the pan to get that all-importantMaillard reaction and turn them regularly to avoid scorching the surface.
  • Once your steak is about 5 degrees away from done, remove it from the grill and set it aside to on a wire rack with a plate underneath to rest for around 5-10 minutes.
  • Just before serving, heat up the juices in the pan with those on the plate until smoking hot and then drizzle over the steaks for the extra burst of flavor.

    To grill a tomahawk steak, your grill will first need to let your grill heat up. You should then place your steak inside the grill, but keep it as far away from the open flame as possible.   • Heat up a cast iron pan until it starts smoking from the high temperature. If possible, do this outdoors so that you dont fill your home with smoke.
  • Put the steak in the hot pan to start the browning reaction , and turn it over frequently to avoid scorching its surface.
  • When the steaks temperature reaches about 5 degrees from the desired temperature, remove it and set it on a wire rack with a tray or plate underneath to rest.
  • Let it rest for 5-10 minutes, so it finishes cooking itself and reaches the perfect doneness temperature.
