Should I Coat Steak In Olive Oil

Ultimate Guide to Grilling a STEAK on a Charcoal Grill

If youre like most people, you probably dont think about oiling steak before seasoning. But if you do, you may be doing it wrong.

Over-seasoning steak can make it tough and rubbery. And thats not good. You also run the risk of getting bacteria on your meat and causing spoilage. Heres why: When meat is fresh, the oils and fats are mixed together and work to create a balanced sauce that keeps food moist and flavorful.

As the meat ages, these beneficial components slowly break down and separate. This causes the meat to dry out, which makes it tough and rubbery. The result: Unsatisfactory beef that tastes bad, bad for your health, and bad for your wallet.

Is It Important To Let The Steaks Rest

Yes. The steak actually continues to cook during those few minutes. This continuation of cooking is great because it doesnt dry out the steak, as it would by simply leaving it on the grill longer. Cutting into the steak interrupts that last little period of cooking by releasing the heat inside the steak. Trust me, let it rest a few minutes and your steak will turn out perfect.

    How To Prep The Grill

How Long to Grill a Steak on a Charcoal Grill

Just like you spend time preparing your meat with marinades and rubs, take the time to get the grill ready. If your grates are dirty from the last cookout, its more likely that your food will stick and have off flavors. The best way to prep your grill before cooking is to clean it really well after cooking or just before cooking, when the grates are hot. If you grill regularly, give it a good scrub with those long handled brushes and some elbow grease before it has a chance to cool down. Not grilling that often? Give it a good scrub once the grill has fully preheated and remnants from the last grill session should scrape right off.
