How Do I Season A Steak For The Grill

How to Grill the Perfect Steak | Weber Genesis II Gas Grill | BBQGuys Recipe

The best grilled steaks are seasoned two ways: with salt, before cooking, and with butter, added to the steaks while they rest.

Youll start by generously seasoning each steak on all sides with kosher salt before you even light the grill. Plan on at least 1/2 teaspoon per half pound of steak. For thick strip steaks that weigh in about 12 ounces each, thats roughly 3/4 teaspoon per steak, but dont fuss too much over exact measurements just salt generously. Once salted, return the steaks to the fridge, uncovered, for at least 2 hours or overnight if needed. As they sit, the salt permeates the steak, making them juicy. It also draws some of the proteins and sugars to the surface of the steak, giving it that crave-worthy crust youre after.

How Long Do You Cook A Tomahawk Steak In The Oven

If you dont want to grill your tomahawk, you might instead choose to cook it in the oven. To do this, you will need to begin by setting your oven to 225 degrees Fahrenheit before leaving it to pre-heat.

When your steak is prepared and the oven has preheated, you can then place your tomahawk in the oven. To do this, you should place the steak on a cooling rack, and then place the cooling rack in a baking sheet. You might choose to cover your baking sheet with foil to make cleaning up easier.

Then, all you need to do is cook your steak in the oven for around 45 minutes, or until it reaches an internal temperature of 125 degrees Fahrenheit. This temperature will give you a medium steak, so if you prefer your steak cooked differently, you will need to leave it in the oven for longer or take it out earlier.

Fourth Position And Testing For Doneness

As you prepare to turn the steak for the last time, it’s time to start checking for doneness. The steak should show no red around the side and the top side should have a rich brown color. As you pick the steak up to rotate it 45 degrees , feel the density of the steak. A medium-rare steak should be firm but still have a good amount of give. Close the lid of the barbecue and continue grilling.

After this last position, turn down the heat on your grill and, if needed, test the temperature of the steak. The internal temperatures for different levels of doneness are:

  • Rare: 120 to 130 F
  • Medium Rare: 130 to 135 F
  • Medium: 140 to 150 F
  • Medium Well: 155 to 165 F
  • Well: 170 F or higher

If your steak needs more cook time, leave it where it is and continue grilling on medium heat until done.

What Is The Reverse Sear Method

A traditional sear is an old trick for cooking steaks, whereby youd sear the steak in a hot pan or on a hot grill and finish it in the oven at a lower temperature. This helped prevent overcookingin partbut also created a delicious crust. The reverse sear is the opposite of that: you cook the steak in a low-temp environment first until it is about 15°F below your target pull temperature. Then you sear the steak to give it that tasty crust and to finish the cooking.

How Long To Grill Ribeye For Medium Rare And Medium Doneness

Rib eye steaks are usually between 1 ¼ and 1 ½-inch thick, so theyll typically need more time on the grill than a New York Strip, for example.

Rib eye steaks should be cooked to 130 degrees for medium-rare doneness, which typically takes about 5 minutes on each side. For medium doneness, cook a grilled ribeye steak to 140 degrees for about 7 to 10 minutes on each side.

Is A Traditional Or Reverse Sear Better For Tomahawk Steak

We tend to lean towards a reverse sear because it generally makes it easier to get a more consistent, uniform inside of the steak. If you dont get a traditional sear right or leave it on too long at the beginning, the outside portions of the steak might end up slightly overcooked compared to the inside.

Gas grilling – How to grill a porterhouse steak

I wanted a juicy steak with a nice crust that was big enough to slice and serve family style, and that had a little finesse.

While cooking, I basted the steak in an herbed butter sauce. The sauce added a fresh, light flavor that balanced the richness of the meat. In the end, I had a steak everyone raved about, and that felt special but not overly fussy. It was the perfect main course for my Fourth of July party plans.

How To Make My Steak Juicy And Tender

  • : it is so nice to add in that little extra flavor!
  • Pierce with fork : this isnt necessary, but piercing the steak with a fork to create some tiny holes allows either your salt and pepper or your marinade to penetrate the meat much faster.
  • Sear on both sides: The sear is the key and then you can move to indirect heat to finish cooking. This seals in all those juices and leaves a nice char on the outside.
  • Do NOT over-cook: remember that your steak will continue to cook after you take it off the grill, so really you should shoot for about 5 degrees under where you ultimately want to be when you take the steaks off the grill.
  • Let rest: Your steak will continue to raise about 5 degrees while resting and this allows the juices to redistribute evenly throughout the piece of steak so when you do cut into it, it will be juicy and perfect!

Indirect Cooking on a Gas Grill

In the world of backyard grilling, nothing tastes better than a grilled steak. There is a lot of controversy over the best way to grill, i.e., using charcoal, wood pellets, or gas. All three will deliver heat, the pellet and gas maintain a constant temperature, and the charcoal and pellet add smoke. You can also add smoke with a gas grill by making a smoking packet and placing it above the burners or by using a smoke tube. • Take the chill off the steaks. About an hour before grilling, remove the steaks from the fridge. This window between the chill of the fridge and the screaming-hot grill makes for a better sear and a more evenly cooked steak. This is also the best time to lightly brush the steaks with a tiny bit of oil.

    Starting With The Steak

You need to know what kind of steak you are cooking to cook it perfectly.

There are different cuts of meat that you can get and there are some specific features to look for.

Understanding the different cuts of steak will help you set the temperature, timer, and accessories you need to cook it.

Research a bit before you head to the supermarket to buy.

    So lets talk about steaks.

My favorite and perhaps the most common cut of steak you will find in butcher shops and supermarkets is the filet mignon, also known as the tenderloin.

It is the most tender cut that you will find in any cut of meat on the market. It is soft so when you cook it, it requires the most delicacy from you so it does not stick to the grill or come out overcooked.

The next common type of steak you will find is the top sirloin steak.

It is also known as the New York strip or the Kansas City strip which contains a beefy flavor and is slightly tender.

It is not as tender as the tenderloin but it is up there.

When you get a New York strip, the advantage you get is the flavor as it does not have too much marbling and is full of meaty flavors.

The T-bone steak or the porterhouse steak is one of the largest cuts of steak.

It comes from the upper rib which also means that it has decent marbling and is softer when cooked.

Ribeye is also one of the more common cuts of steak and it is up there when it comes to my favorites. Flank steaks and skirt steaks are also there for my fajitas and meat fillings.

What Are The Best Types Of Steaks For Grilling

Out of all proteins, steak is particularly well-suited to the grill. The high heat delivers a gorgeous sear, caramelizing the exterior and quickly heating the interior. That said, each kind of steak requires a slightly different method.

This particular recipe works best with boneless strip steaks that are at least 1 inch thick, but 1 1/2 inches is even better. Strip steaks are a great starter steak because they are well-marbled, meaning theyll cook up juicy every time, but not be full of fat that you have to worry about flare-ups. Plus, theres no bone to work around.

To grill a tomahawk steak, your grill will first need to let your grill heat up. You should then place your steak inside the grill, but keep it as far away from the open flame as possible. Once inside, it will take roughly 45 minutes for your tomahawk steak to grill in indirect heat. During this time, you should flip the grill every 10 minutes or so.

It can sometimes be difficult to tell when your tomahawk is done when you are grilling it. The best way to find out is to test the internal temperature of it. When the inside reaches 130 degrees, your tomahawk steak is cooked.
