Now preheat the Traeger to 225 with the lid closed for 15 minutes. and You can prepare side dishes alongside. When the Traeger reaches the desired temperature, take the steaks out of the fridge and let them rest at room temperature for about 30 minutes.
While the smoker is heating, I grab my steaks and rub them with a light drizzle of olive oil.

Ingredients For Traeger Steak
Steak: I used a USDA prime New York strip steak. It has a nice amount of marbling. The key is to have a steak at least an inch thick. The thicker the steak, the more wood-fired flavor your outer crust will collect while still hitting that doneness target you are hoping to achieve. My steak was about an inch and a half. You can also use a ribeye or filet mignon. Whatever steaks you have on hand.
Salt: I like to use coarse sea salt or kosher salt. The larger piece of salt tends to season the steak better. I also like the texture.
Pepper: Freshly ground black pepper is my favorite. A little dusting for flavor, go a little heavier if you are looking for a kick of heat in each bite.
Pellets: I used a mixture of cherry and hickory wood pellets for this smoke. I originally attended to do it on hickory but had some cherry pellets to use up too. The combination was perfection. I loved the results.

Step : Prepare The Steaks
I dry brine the steaks the night before or a few hours before grilling on the Traeger grill. To dry-brine your steaks, add a good amount of salt and set it in the fridge for a couple of hours or overnight. This will tenderize and flavor the meat, and remove excess moisture, making it taste even better.
Remove the steaks from the fridge and place them in a shallow dish.
Step : Seasoning The Steaks
You can customize the amount of marinade you put on sirloin steaks to your own personal preference.
Put the steaks on a plate and use your hands to press the peppercorns all over. Now sprinkle some garlic powder on steaks.
Allow the steak to rest for a minute on the pan and then return it to your refrigerator for a few minutes.

Can You Smoke The Steak On Your Traeger
Absolutely you can. A different recipe will cover that. Here we are using the Traeger as a high heat grill. I have smoked a large ribeye steak on the Traeger smoker at low heat for about 45 minutes, and then reverse sear it on high heat in the preheated cast iron pan to give it a nice sear. This way does give more of a smoky flavor and is delicious. But it does take more time. I recommend trying to cook them both ways to determine which you prefer. I like variety, I go back and forth between both depending on the time I have and what else I am cooking.

Tips And Tricks For A Better Steak On Pellet Grill
Do you want to cook the perfect steak on a Pellet Grill? You just need to check out below some tips and tricks for a better steak:
- Preheat your grill before adding the steaks. This will help them cook evenly.
- Season the steaks generously with salt and pepper. This will give them flavor and help to prevent them from sticking to the grill.
- Use high-quality olive oil for the balsamic glaze. This will make a difference in the flavor of the finished dish.
- Use good-quality balsamic vinegar for the glaze. Avoid using cheaper vinegar, as it can be harsh and acidic.
- Use beef broth instead of water for the glaze. This will add more flavor to the dish.
- Garnish with fresh parsley leaves, if desired.
- Use Dijon mustard instead of regular mustard for the glaze. The flavor is more complex and will complement the other flavors in the dish.
- Mince the garlic finely so that it doesnt overpower the other flavors in the dish.
- Cook the steaks for 6-8 minutes per side or to desired doneness. Baste them with the balsamic glaze during the last few minutes of cooking.
Finally, remove the steaks from the grill and let them rest for 5 minutes before serving. This will allow the juices to redistribute, making them more tender and flavorful.
Serve the steaks with the balsamic glaze spooned over them.

Traeger Grill has a new project theyre doing with charcoal grill King. The project is called the Kingfisher and Kingfisher grill. The Kingfisher comes with an automatic chimney, that allows you to cook your meat without having to physically add wood to the fire. The Kingfisher is a set of starter grill plus a chimney. So, youll need to put your meat on the grill to get it cooking, then you will need to switch on the chimney. The chimney will start burning the charcoal, and will put the fire to the right temperature and place. When you want to finish the cooking, you can manually light the fire through the grates. The Kingfisher grill will be made from stainless steel, and will be able to cook up to 6 lbs of meat at once. You will be able to have 4 zones on the grill for perfect cooking. The zones are the fire bed, the direct heat, the indirect heat, and the flare. The flare is when the chimney lights the burners. The Kingfisher grill can cook up to 3 hours per side. This time can be increased by having the grill off for 5 to 10 minutes every hour. With this grill you wont have to stand around and have to manually adjust the fire.

How To Reverse Sear Steaks On The Grill
Once youâre confident with traditional searing, why not move on to reverse searing your next steaks? Reverse searing is exactly like it sounds â you cook the inside of the meat first and sear the outside last.
Youâll still go through all the general steps of searing, although with the reverse sear method, you can get away with a shorter time for the steaks to come to room temperature since they will be exposed to a lower heat before the sear. However, instead of bumping up your pellet grill to 500 degrees at the beginning, youâll bump it up at the end. In other words, youâll prepare your steaks, pop them onto the grill, let them get to your desired level of doneness and then give them each a three-minute searing job.
Hereâs the lowdown on the general rules to follow:

How To Measure Steak Doneness By Touch
You may have read about the “poke test” for determining whether a steak is done. The idea is that you find a place on your body that corresponds to a steak doneness level. You press that place sometimes a part of the face, sometimes a fingertip, sometimes the meaty part of your hand below your thumb note the “springiness,” then touch the steak to see if it has the corresponding “springiness.”
Chefs who cook many steaks a day, usually of similar cuts on the same equipment indoors, can get pretty good at using simple touch tests to see if steaks are done.
But as an outdoor griller, you’ve got other factors to consider, including the outside temperature, the cut of the steak, whether you marinated it or not, how soft your hands are so unless you cook the exact cuts of meat, prepared the same way, at the exact temperature, many, many times, the poke test will let you down.
Thats why recommend using a digital thermometer so you can nail the perfect doneness every time.

Do You Flip Tuna On The Grill
Place the tuna steaks on a hot grill. Leave that side out for 1-2 minutes to brown and crisp. Then, while the heat is still on, return to the other side and sear for another 1-2 minutes. Its now possible to remove it from the grill or continue to cook it to your liking.
Place the fish on a flat surface and rub it with olive oil, salt, and pepper. Grill each side for 2 to 2 1/2 minutes. If the tuna is tough and dry, it should be cut into halves, as it is raw sushi. A cast-iron or heavy-bottomed pan can be used to cook tuna steak at a high temperature. The cooking instructions for medium-rare, medium-rare, and medium-rare ahi tuna can be found below. When lightly seared on the outside, the inside of ahi tuna is tender and raw, and the outside is moist and supple. The internal temperature of a food thermometer is 115 degrees Fahrenheit, which means the internal temperature should be 115 degrees Fahrenheit.
When the fish is done cooking, season it with salt and pepper. When fish begins to flake with a fork after baking for 4 to 6 minutes on a thickness of 4 inches, it has still pink in the center. Grill each side in between 2 and 2 1/2 minutes. Rest for 5 to 10 minutes after serving.
