    You can cook grass fed steak on a stove top using pan sears. Youll need to start the sear before you begin to grill the steaks. Once youre ready to go, youll want to turn off the burner and cover the skillet with foil to keep the steam from escaping. Then, place the lid on top of this and cook the beef over medium heat for about 5 minutes per side. This will take care of any excess grease that may have built up on both sides of your steak during the cooking process. If you dont have a skillet, try using a cast iron skillet. Or, if your skillet is already seasoned, simply add a little olive oil to it and put it over the hot pan. Cook the onions and peppers until they are tender, about 3 minutes. Add the garlic and saute for another minute or two.

If you dont want to use the marinating time, you could simply pour the liquid over top of sliced meat and let it sit for about 10 minutes before serving.

  • Preheat oven to 300 degrees and place rack in center of oven.
  • Prep all ingredients so they are ready to go when needed.
  • Sprinkle both sides of steak with sea salt and pepper.
  • Place cast iron skillet or other heavy pan on medium/high heat and allow to heat for several minutes.
  • When pan is hot add enough olive oil, butter or ghee to generously coat bottom of pan.
  • When oil or butter are hot add meat to pan. You should hear the PSHHHHHH sound when meat is placed in pan.
  • Add 2 tablespoons butter to hot steak pan, add shallots and turn heat down to medium.
  • Sauté, stirring frequently for three minutes, loosening any browned bits from the pan with spatula or spoon.
  • Add mushrooms and garlic, stirring until mushrooms release most of their juices
  • Carefully add white wine to pan and sauté for 1 more minute, stirring. Sprinkle with a little sea salt and pepper.

    Sous Vide Grass Fed Top Sirloin Steak

    Tonight Im lagging because Im returning to work after having 3 weeks off. Argh! As a result, for dinner I made lots of veggies and a big sous vide grass fed top sirloin steak so Id have lots of leftovers to pack for work.

    In preparation for my workweek, I started sous viding like a mad woman on Tuesday morning. I laid out all my proteins on my kitchen counter and seasoned and vacuum sealed them with my Foodsaver. I try to combine as many meats as possible that cook at the same temp, so I set my SousVide Supreme to 140 F and plopped in 4 seasoned pork chops and 2 bone-in, skin on chicken breasts. After they had cooked for 2.5 hours, I took them out and placed them in an ice bath so I could store them in the fridge for later in the week. I added cold water and turned down the temp to 120 F to cook my frozen wild sockeye salmon for lunch. After taking out the salmon, I increased the water temp to 130 F and dunked in my grass fed top sirloin steak which I seasoned with Sagemary finishing salt and pepper.

    The steak was going to cook in the SousVide Supreme for about 30 hours and I was going to take it out at dinner time on Wednesday.

    On Wednesday morning, I cooked the worlds best braised cabbage and prepared some cauliflower, garlic, and bacon that I was going to roast off when I woke up. I stored the vege and swine bits in a Ziploc bag in the fridge.

    Voila! All of this was on the table within 1 hour and I have 3 boxes of lunch in the fridge .
