On every episode of HBO Max’s “Selena + Chef,” a professional chef shows singer and actress Selena Gomez how to improve her cooking skills by teaching her recipes that feature different cuisines.
When Gomez cooked the steaks, they looked nicely caramelized and tasty, so I wanted to see if I’d be able to achieve similar results at home.
Here’s how the steak turned out.
Most of the ingredients for the recipe are pantry staples for me.
Aside from the New York-style strip steak and fresh rosemary, I had all of the other ingredients such as butter, dried oregano, and cilantro at home.
Preparing the steak was easy.
I seasoned the steak heavily on all sides with flaky sea salt and cracked black pepper.
Though the recipe didn’t state this, I knew from watching the episode that the steaks should be at room temperature to cook evenly. I let the steak sit in the salt and pepper and decided to prepare the chimichurri next.
I didn’t put any oil in the pan yet in case I got distracted preparing the chimichurri.

How Long To Leave Steak Out Of Fridge Before Cooking
All the professionals say to remove your steak from the fridge for about 20 minutes, bringing it to room temperature before preparing it, because a cold steak wont cook.
Bring the meat to room temperature before searing seems most helpful in speeding up cooking. This makes little difference and could even pose a health hazard. In the center of a medium-thickness steak, it takes 2 hours to raise 41° F, and during this time, infection-causing bacteria may have formed on the surface.
Searing meat kills off bacteria on the surface but wont kill all the toxins infused into the meat. When utilizing a thin skillet, the only time it is worth warming meat before cooking is when using a thin skillet a cold steak could drop the pans temperature to below the minimum 284° F needed for browning.
Next I Chopped The Herbs
Ramsay called for “picked” cilantro and parsley. I wasn’t sure what that meant in this context, but I later learned he wanted only the leaves of the herb to be used and not the stems.
Partially because of my laziness and because the stems are edible and flavorful too, I didn’t pick the leaves off. Instead, I chopped the entirety of the parsley and the cilantro.

When shopping for beef, you may have noticed various grades stamped onto the packages. The U.S. Department of Agriculture assigns these grades based on the color, grain, surface texture, fat content, and how the meat is distributed. At the supermarket, the three grades available are Prime, Choice, and Select. We will take a quick look at what these all mean.
Well-marbled beef is a key characteristic of the prime grade. Well-marbled refers to the intramuscular fat that runs through the meat, which produces a rich, flavorful, and tender meat. Only about 2% of graded beef is worthy of the grade Prime. As a result, this type of beef is most often found in high-end restaurants, steakhouses, and quality butcher shops, and it is usually the most expensive out of all the grades.
