Wood Pellet comes in various flavors, and this will go a long way in affecting the outcome of whatever is grilled with it, especially your steak. Here are some of the best-flavored wood pellets for a steak that you can choose from.

    • Mesquite
    • Hickory

Mesquite and hickory produce a prominent flavor on the steak. Mesquite has more potent smoke than hickory. Because of the beefy nature and strong cut of steak, it can hold up nicely to strong smoke flavor, and this also helps to cook the meat.

If you want to spice things up, then you have Pecan at your service. It is less smoky compared to mesquite and hickory, therefore less appreciated for grilling and smoking. It has this vanilla and nutty finish that just made the steak flavor awesomely complex.

Once the pellet grill is up to the highest temperature you can set it too, usually around 400-450°F, and the Grill Grate are heated up as well, you can gently place your steaks on the Grill Grates.

Space them comfortably apart so that they cook individually with air circulation all around each one, rather than as one large meat mass.

Never apply cooking oil or spray directly to the grill grates. It will immediately smoke up and leave an acrid tasting residue or worse, ignite and pose a safety hazard.

Instead, oil the meat itself and then place it on the hot grill.

Once you have put your steaks on the grill, resist the temptation to flip them in the first 1-2 minutes. Let the maillard reaction occur and each side fully cook.

If you want fancy looking cross hatch grill marks, turn them 90° after about 2 minutes. Then repeat when you do the other side.

Do not walk away during this crucial time, 1-2 minutes too long on any side can result in burning and carbonization which will destroy the taste of your meat.

You want crispy brown and sizzling rendered fat, not black ashy meat.

How to Reverse Sear a Steak on a Pellet Grill

Many pro and amatueur chefs alike swear by the reverse sear.

The idea is that by searing the steaks at the end, the fat is already partially rendered and the steak now has less excess moisture than when it was raw.

Therefore you will get a crispier, more crusty sear on the exterior.

    Pit Boss Pellet Grill Steaks

    Pin on Grilling

My first pellet smoker grill was a Traeger Lil Tex Elite. It was a great unit for me to start with. After about 4 years with it, I upgraded to a Pit Boss Austin XL. It was quite a step up, but the operation was pretty much the same. Today its my grill of choice and where I grill my steaks. Check out my steps to grilling a great steak above and youll see my personal magic formula.

Grilling steaks on a pellet smoker is part science, part art, and part preference. Be willing to experiment. Dont expect a cheap cut of lean meat to be as tasty as a thick well-marbled ribeye because it wont be, no matter how much you spent on your grill. But cheap cuts like chuck eye steaks are great to practice with. You can fine-tune your time and temperature formulas that way. Practice and learn how your grill cooks. Find any hot and cold spots on your grill. Try different pellets because some are smokier than others. Some burn hotter than others. Some are real hardwoods and some are fillers and artificially flavored with oils.

With practice and patience, youll develop a good working relationship with your pellet grill. Let that partnership make you the dynamic grilling duo people request for their BBQ!

    How To Grill Great Steaks

    • Be picky about what cut of meat you grill. My favorite is ribeye and t-bone, but Ive grilled up some very tasty chuck eye steaks as well. Get well-marbled quality meat to start with and youre halfway to an amazing steak experience.
    • Be deliberate about what seasonings and rubs you use. Dont just pick them out because of the label. Use the seasonings you like and experiment to find new ones.
    • Allow your pellet grill to get to the desired temperature and let it stay there for a few minutes. Dont get impatient like I have and end up undercooking the meat because the grill wasnt ready.
    • You may need to experiment with the timing and temperature of your specific grill because theyre all a little different. For me and my Pit Boss Austin XL, I set the temperature to 450, let it get there and hold steady, then I put my seasoned steaks on the center of the grill, close the lid, and let it go 4-5 minutes per side. I keep the slider plate closed no direct flame. This will yield a medium-rare to medium steak.
    • When the steaks come off the grill, let them rest for at least 3-5 minutes to let the meat relax before cutting into them. If you dont, the juices will flow out, leaving the steak dry.
    • More recently, Ive experimented with seasoned garlic butter. Add a little of that to the top of your steak while its resting. Yum!

Put Your Steak To Test For Doneness Of Meat

Theres nothing worse than a raw steak. Cooked to lower interior temperatures, an undercooked meat can get you sick.

To check if your steak is done according to your preference you can use these methods.

Cut the steak so you can see its center. A red center indicates rare slightly red center turning into pink means medium-rare, whereas a medium-well would be a mostly grey or brown color throughout.

Touch test could also be handy. Rare will feel soft and just slightly springy, with nearly no resistance. Medium rare will seem tight and springy, with some resistance against your finger. Medium well will be tight and firm when pressed.

Or you can simply use a meat probe. A minimum interior temperature of 145 degrees is recommended by USDA when cooking steaks.

How Long Those It Takes To Cook Steak On A Pellet Grill

Cooking a steak on a pellet grill can be fun and challenging, but the result is satisfactory when done correctly. It takes time and skill and depends on you-yeah, you!

Depending on your choice of cook: rare, medium-rare, medium, medium done, well-done, and the method you chose to use, whether it be the traditional method or the reverse method, all these add up and make the time of cooking varies.

As a person who adopted the seared crust method, you will be saving yourself time compared to the reverse sear method. However, the detailed flavor and correct tenderness that comes from the reverse sear method cannot be competed with by the seared crust method.

At least you will spend up to 45minites using the reverse approach.

How To Know When Your Steak Is Done

ZGrill Pellet Grill | Top Sirloin Beef Steak Sandwich

There are a lot of different ways to know when your steak is ready to come off the grill, but the most reliable way is to use an instant-read thermometer.

I use a Thermoworks Thermapen MK4, and I love it. The temperature readout is almost instant. Anytime I make steaks I get a quick internal temp readout using my Thermapen after 45 minutes of taking on smoke, and then after the first flip.

I pull my steaks at 125 degrees for medium-rare, and I pull my wifes steaks at 140. The Thermapen makes it easy to know EXACTLY what the temp is.

What Is The Perfect Temperature To Cook Steak On Pellet Grill

Knowing and following the required temperature will go a long way in achieving a concise and appreciated result without any regret of ever venturing on steak grilling.

For the searing crust method , at the initial preheating stage before placing your steak on the grill, your grill thermometer must read up to 3600F before you place your steaks on it.

This is because you need a sizzling hot grill grate to make the perfect sear on the steak.

For the reverse method, a preheat temperature of 1800 is required to set the grilling in motion. After about 15 minutes, take off the steaks and increase the grill temperature to 5000F till your steaks get done.

Note that you should keep your griller covered when preheating. This will help reach the targeted temperature faster than when left open.
