What Cut Of Meat Is Best For Philly Cheese Steak

There are a few important factors to create the Best Philly Cheese Steak recipe starting with the cut of meat. Ribeye is the traditional cut of beef and if we werent marinating the beef, I would highly recommend only that for its fat/marbling which keeps the meat moist and flavorful BUT because we are marinating the beef, feel free to substitute a less pricey cut such as top sirloin or skirt.

What Makes A Cheesesteak Authentic

Is this an authentic cheesesteak from Philadelphia? Short answer – no.

However, I can tell you that this is an amazing, flavorful, and delicious steak sandwich. Authentic or not, I think you’ll enjoy it.

What makes a Philly cheesesteak authentic? First of all, it probably needs to be made in Philadelphia – hence the name. Second, traditional cheesesteak is made with thin sliced ribeye steak and cheese, served on an amoroso roll. Onions are a common topping for authentic cheesesteak sandwiches.

Depending on where you buy your cheesesteak, it may be topped with American cheese, provolone cheese, or cheese whiz.

In places of the country other than Philadelphia, bell peppers and mushrooms are common toppings. If you do not like these toppings, they are completely optional and can be omitted.

So What Is A Montana Cheesesteak

A Montana cheesesteak is one that pays respect to the flavor of the steak first and foremost. It will leave your taste buds ringing from here to the Liberty Bell.

I’m lucky that when I go to the grocery store or local butcher, I have access to some amazing local beef. The beef I use for this recipe is from a small mom-and-pop ranch near Livingston, Montana.

Felton Angus Beef cowboy ribeye steak

Felton Angus Beef Ranch lies along the banks of the Yellowstone River in the heart of Montana’s Paradise Valley. It’s an area that I’ve floated and fly-fished many times.

When I watch the television show Yellowstone based on the fictional Dutton ranch in that same area, I cannot help but applaud them for making the locations look shockingly similar to what I’ve seen while rowing a drift boat or hucking a hopper at an unsuspecting trout.

Even better, the scenery and many of the locations in the program are actually shot in Montana. And for good reason. The area is a true west coast gem even if it’s located remotely in the mountain west.

For these cheesesteak sandwiches, it’s important that I use the highest quality cut of beef and there’s no one I trust more than Felton’s.

How to Reheat a Cheesesteak in the Oven

  • Take a tray and put aluminum foil on top of it.
  • Preheat the oven to 375 degrees Fahrenheit.
  • Place the tray with the cheesesteak in the center of the oven.
  • Allow the cheesesteak to heat for about 25 minutes.

The Perfect Philly Cheesesteak At Home (2 Ways)

A cheesesteak always one word consists of a long, crusty roll filled with thinly sliced, freshly sautéed ribeye beef and melted cheese. The art of cheesesteak preparation lies in the balance of flavors, textures and what is often referred to as the drip factor.

For many fans, the definitive cheese of choice is Cheez Whiz®, but American and provolone are widely accepted alternatives. Other common toppings include sautéed onions, cooked mushrooms, ketchup and sweet or hot long hots peppers.

There are lots of creative takes out there on this regions specialty sandwich, too, but here we focus on where to get the classic Philly cheesesteak.

    How To Reheat Philly Cheesesteak

The plain meat and vegetables can easily be reheated on the stove or in the microwave. Once you assemble the sandwiches, theyre best enjoyed right away.

    • Stove: Heat steak and veggies over medium heat, stirring occasionally until heated through. Assemble sandwiches and bake in oven as directed.
    • Microwave: Transfer smaller servings of steak and veggies to a microwave-safe dish, cover with a microwave-safe lid or paper towel. Microwave for 30 seconds, stir, then continue to microwave for 15-second intervals, if needed.

Tips For Making Homemade Philly Cheesesteak

    • Ribeye steak should be marinated for at least 6 hours in order to reap the benefits of the tenderizing properties. For the maximum benefit, however, marinate overnight.
    • Dont poke holes: In contrast to popular belief, you should NOT poke holes in the steak before marinating. This actually drains out the valuable juices and will result in less juicy steak.
    • Always marinate steak for a prolonged period of time covered in the refrigerator and not at room temperature to avoid food-born illness. Only remove it from the fridge to the counter 60 minutes before youre ready to grill to help bring it to room temperature so it cooks evenly.

You Can Now Have Geno’s And Pat’s Cheesesteaks Shipped To Your Door

There always seems to be a lot of debate in the cheesesteak world whiz vs. provolone is always , and Geno’s vs. Pat’s is the classic debate if you live on the East Coast. These two icons of Philadelphia have set up shop right across the street from each other, and tourists love them.

Philly locals will tell you all about Tony Luke’s and Jim’s Steaks, but as a non-Philadelphia native that has tried them all, I still gravitate towards Geno’s and Pat’s. They’re great cheesesteaks, and you can just walk across the street for a post-dinner cheesesteak after you finish your first cheesesteak. Perfect, right?

Once, when I had a friend visiting me from Philadelphia, I had her grab a cheesesteak before she got on the plane, and I had a mostly hot Pat’s cheesesteak delivered to me an hour after it was prepared. Now I’m not dating her anymore, so how do I get my Philly cheesesteak fix? Thankfully, a site called Goldbely is here to help.

The website offers up local delicacies from around the US that are shipped to you overnight, and they just offered up a “Battlebox” of 4 cheesesteaks for sale two from Geno’s and two from Pat’s, for $79 shipped anywhere in the US overnight. It’s a limited run of 250, and the package includes:

    Awesome.

It’s a limited run, so if they run out of the Pat’s and Geno’s Battlebox, you can try another Philly favorite from Campo’s Deli as well. In all honesty though, the battle really comes down to Pat’s vs. Geno’s for the tourists.

    Enjoy your cheesesteaks.

How To Make Philly Cheesesteaks With Peppers And Onions

    Get Game

The process is easy! Youll need a large, deep sauté pan to start. If you dont have any large sauté pans, a Dutch oven will do the trick.

I love to add bell peppers and onions to add a burst of color and a ton of flavor to these tasty cheesesteaks.

Heat vegetable oil over MEDIUM-LOW heat and sauté thinly sliced onion and bell pepper. You want to avoid browning the peppers and onions so if they do begin to brown, reduce the heat under the pan a bit. When they are nice and tender, transfer them to a large dish and set aside.

Add additional oil to the pan and then add half of the chopped sirloin to the hot pan. Season with a little Lawrys Seasoned Salt, or your favorite all-purpose seasoning, and a little garlic pepper. Cook and stir until browned and then transfer this first batch of browned beef to the dish with the peppers and onions.

Repeat the process with the remaining beef and seasoning. Transfer the second batch of browned beef to the dish and drain any juices from the pan.

Return the pan to the heat and transfer the cooked veggies and beef to the pan. Place sliced provolone over the top and cover the pan to allow the cheese to melt

Use tongs to mix the melted cheese throughout the beef and veggie mixture and its time to load up those hoagie rolls!

What Meat Is Used To Make A Philly Cheesesteak

There are many different types of meat that can be used to make a Philly cheesesteak, but the most popular is ribeye steak.

Ribeye is a cut of beef taken from the prime rib roast.

Having the rib eye thinly sliced allows the meat to brown and caramelize more quickly, which makes for a delicious sandwich.

It packs a lot of flavor, because it’s well-marbled with intramuscular fats.

For cheesesteaks, the beef is raw and sliced thin, then seared quickly on a flat-top like the Blackstone griddle.

The flash-searing gives the meat a deliciously flavorful crust. Yet, despite the heat, it remains tender and juicy.

Different variations of the sandwich use different meats.

Thinly sliced roast pork, chicken, and lamb, as well as other cuts of beef, are common when making this type of sandwich.

Its kind of funny because if we were ranking their different food options , it would be higher up. Their breakfast offerings, chicken cutlet sandwiches and roast pork are actually pretty good! Why does their cheesesteak not follow similar high standards? Last time I went I clearly saw frozen beef being used and there is no pet peeve bigger than that being used in my cheesesteak. Perhaps theyve gotten better in the years Ive avoided this place? The Original location on Oregon Ave remains under Tony Luke Sr. and Nickys ownership with Tony Luke Jr. having parted ways a few years back. With better options available and closer by, not sure why you would bother going other than to cross another one off the list.
