I like my burgers juicy so I grind the meat myself to about 25 to 30% fat.

The smart folks at Americas Test Kitchen and Cooks Illustrated have come up with a very clever way to keep lean beef from drying out, by adding a panade to the ground beef. Heres how:

For 2 burgers, remove and discard the crust from half of one slice high-quality white sandwich bread, and chop it into 1/4 pieces, to make about 1/4 cup. Add 1 tablespoon whole milk and mash it into the bread until you have a paste. Mix this in with the meat. As strange as it seems, this mash holds moisture in well done burgers.

Weve held on to frozen Omaha Steaks meat for over 3 months since purchasing it and havent had any issues cooking it after. Its important to note that the meat has to stay frozen through this whole time, since it can spoil thawing and being refrozen. Omaha Steaks says that their meats are vacuum sealed to last for up to three months in a properly working freezer.

We spent our Memorial Day testing that out.

Omaha Steaks offers fifteen types of burger patties, from beef, to pork, to veggie. In the beef category alone, there are nine types of beef patties.

We decided to hold a blind taste test for five different kinds of Omaha Steaks beef burgers: Signature, Ground Beef Rib, Ground Tenderloin, Ground Brisket, and Wagyu.

Here is what we found out.

To construct this experiment, we labeled five different kinds of beef patties numbers one through five.

All patties were seasoned with salt and pepper and cooked for the same amount of time, to a perfect medium doneness. We taste tested the burger patties on their own and four judges gave a score of 1-10 to each burger patty.

Yeah, as you can see, we took this burger patty experiment very seriously. Or should we say sear-iously?!?

We also constructed each burger with cheese, lettuce, tomato, red onion, and a brioche roll. This was only for consumption after the burger patty judging was complete.

We even made Omaha Steaks smokey bacon jam and sweet bourbon onions as an optional topper once the taste test was wrapped up.

Just simply pop the metal tins on the grill for 6-8 minutes to heat up the topper. Its super easy and clean up is a breeze. We couldve eaten the bacon jam by the spoonful, perhaps we did.

Saturated Fat In Hamburger Meat

Many calories in ground beef come from fat. 3oz of 85% lean ground beef has 12g of total fat, out of which 4.5g is saturated fat .

Unfortunately, this is the bad kind of fat. Saturated fat can lead to heart disease, increased cholesterol, and other cardiovascular diseases.

You should limit saturated fat intake to under 10% of total energy. Ideally, it should be 5% to 6% of daily calorie intake.

So, if you eat recommended 2,000 calories a day, you should eat less than 20g of saturated fat, ideally no more than 13g.

There are several ways in which you can lower the amount of saturated fat in your hamburger meat. If you prepare hamburger meat with vegetable oil, you can avoid having too much saturated fat.

Plus, youll have juicy meat. Generally, a good way to control how much saturated fat you intake is to go for leaner beef cuts. Also, cut down on mayo and cheese.

If quality is your goal, whenever possible you should ask your butcher to grind your meat while you wait. You pick the steak, and she grinds it.

Pre-ground meat, even some of the better cuts of pre-ground meat, such as ground chuck, may have been ground miles away and days ago. Once meat is ground, it begins to oxidize.

If you want to buy ground meat, try to buy it at a store with a butcher in the back room who can grind for you. Cooking sous vide starts by placing the food in a plastic bag. Normally the goal is to remove as much air as possible from the bag, which typically requires the use of a vacuum pump. But with burgers, using a pump can lead to problems like this:
