If You Must Have Lean Burgers
I like my burgers juicy so I grind the meat myself to about 25 to 30% fat.
If you like your burgers lean, you risk dry, hard hockey pucks. To combat this, finely chop onions and mix them in the patties. They add moisture. Or grind in bacon!
The smart folks at Americas Test Kitchen and Cooks Illustrated have come up with a very clever way to keep lean beef from drying out, by adding a panade to the ground beef. Heres how:
For 2 burgers, remove and discard the crust from half of one slice high-quality white sandwich bread, and chop it into 1/4 pieces, to make about 1/4 cup. Add 1 tablespoon whole milk and mash it into the bread until you have a paste. Mix this in with the meat. As strange as it seems, this mash holds moisture in well done burgers.
How Long Does Omaha Steaks Foods Stay Good In Their Packaging
Weve held on to frozen Omaha Steaks meat for over 3 months since purchasing it and havent had any issues cooking it after. Its important to note that the meat has to stay frozen through this whole time, since it can spoil thawing and being refrozen. Omaha Steaks says that their meats are vacuum sealed to last for up to three months in a properly working freezer.
Do You Cook Omaha Steak Burgers Frozen Or Thawed
Omaha Steak Burgers can be prepared in a variety of ways. They can be grilled or pan-fried. Since they are individually sealed and flash-frozen, they dont need to be thawed before cooking. Cooking time depends on the desired level of doneness.
To cook Omaha Steak Burgers from frozen, you can place them directly on the grill. However, they will take longer to cook. It is important to keep in mind that a frozen burger can release more water than one that has been thawed. This makes it harder to judge when the burger is fully cooked. If youre not careful, the burger could catch on fire and burn. To prevent this, make sure you move the burger to a safe zone before cooking it.
When cooking Omaha Steak Burgers, its important to follow cooking instructions on the packaging. This is especially important when it comes to frozen Omaha Steak Burgers. Follow the instructions on the packaging, but make sure to preheat your grill to 450degF. Its also important to keep an eye on the cooking chart on the box. The burgers should be cooked for at least 60% of the recommended cooking time.

The Best Meat For Burgers Our Omaha Steaks Burger Taste Test
Whats the best meat for burgers, and can we even tell the difference?
We spent our Memorial Day testing that out.
Omaha Steaks offers fifteen types of burger patties, from beef, to pork, to veggie. In the beef category alone, there are nine types of beef patties.
We decided to hold a blind taste test for five different kinds of Omaha Steaks beef burgers: Signature, Ground Beef Rib, Ground Tenderloin, Ground Brisket, and Wagyu.
Here is what we found out.
To construct this experiment, we labeled five different kinds of beef patties numbers one through five.
All patties were seasoned with salt and pepper and cooked for the same amount of time, to a perfect medium doneness. We taste tested the burger patties on their own and four judges gave a score of 1-10 to each burger patty.
Yeah, as you can see, we took this burger patty experiment very seriously. Or should we say sear-iously?!?
We also constructed each burger with cheese, lettuce, tomato, red onion, and a brioche roll. This was only for consumption after the burger patty judging was complete.
We even made Omaha Steaks smokey bacon jam and sweet bourbon onions as an optional topper once the taste test was wrapped up.
Just simply pop the metal tins on the grill for 6-8 minutes to heat up the topper. Its super easy and clean up is a breeze. We couldve eaten the bacon jam by the spoonful, perhaps we did.
Here are our rankings from our burger patty cook off.
Saturated Fat In Hamburger Meat
Many calories in ground beef come from fat. 3oz of 85% lean ground beef has 12g of total fat, out of which 4.5g is saturated fat .
Unfortunately, this is the bad kind of fat. Saturated fat can lead to heart disease, increased cholesterol, and other cardiovascular diseases.
You should limit saturated fat intake to under 10% of total energy. Ideally, it should be 5% to 6% of daily calorie intake.
So, if you eat recommended 2,000 calories a day, you should eat less than 20g of saturated fat, ideally no more than 13g.
The good news is that not all fats in hamburger meat are unhealthy fats. 3oz serving size of 85% lean ground meat has 6g of monounsaturated fat and 0,4g of polyunsaturated fat.
Hamburgers should be cooked to a safe minimum internal temperature to destroy harmful bacteria that may be present. Use a food thermometer to be sure they have reached a safe minimum internal temperature of 160 °F. If youre cooking turkey burgers, they should be cooked to 165 °F.
There are several ways in which you can lower the amount of saturated fat in your hamburger meat. If you prepare hamburger meat with vegetable oil, you can avoid having too much saturated fat.
Plus, youll have juicy meat. Generally, a good way to control how much saturated fat you intake is to go for leaner beef cuts. Also, cut down on mayo and cheese.

Buy Meat And Have Your Butcher Grind It For You
If quality is your goal, whenever possible you should ask your butcher to grind your meat while you wait. You pick the steak, and she grinds it.
Pre-ground meat, even some of the better cuts of pre-ground meat, such as ground chuck, may have been ground miles away and days ago. Once meat is ground, it begins to oxidize.
If you want to buy ground meat, try to buy it at a store with a butcher in the back room who can grind for you. In grocery stores, butchers usually come in early in the morning, and leave before 5 p.m. They are probably not on duty on Sunday. Find out when your butchers are in, and get to know them by name. Ask them to grind meat for you.
You want at least 20% fat, not 15% as called for in many cookbooks and online recipes. Many top chefs now recommend 20 to 30% fat, especially if you cook the meat to USDA recommended safe temps of 160°F. Thats right, you do not want lean burger because fat brings a lot of flavor, moisture, and crispness to the party, and it helps hold the patty together. Face it, burgers are not diet food so we cant eat them every day. But when we do crave one we want a good one, and that means at least 20 to 30% fat.
The easiest thing to do is pick a nice looking choice grade chuck, with plenty of fat, and if necessary, ask the butcher to add some fresh white fat trimmings to get the blend up to 20 to 30%. Go ahead. Get it 30%. Especially if you plan to cook it well done.
How Long Are Omaha Steaks Good For Once Thawed
The nice thing about thawing your steaks in the fridge is that it gives you some time before you have to cook them. If youre not in a hurry to prepare steaks for dinner, theyll stay good inside the fridge for up to 5 days. Or in case you changed your mind and would rather serve something else, you can safely refreeze your Omaha Steaks within that period as long as you didnt remove them from the fridge.
But if you used the quick thaw cold water method, you have to cook them right away to prevent the growth of harmful bacteria. As youre thawing, youve got to decide if youre going to grill, pan sear, or sear roast your quality meat right after. It shouldnt be too hard. Just follow their easy-to-follow cooking instructions and you should be able to indulge in their fine meats in no time.

The Types Of Food Omaha Steaks Offers
While steaks are in their name, Omaha Steaks offers way more than just steak. In fact, they offer nearly every cut of beef, chicken, turkey, and pork imaginable. But thats just a portion of the foods they offer. They also now offer seafood, pastas, sides, desserts, and even wine.
To give you an idea of the immense variety they offer, here are some of their most popular foods they sell from each category:
- Brussels sprouts with bacon and shallots
- Roasted mixed vegetables
The examples above are really just the tip of the iceberg. In fact, I found one of the hardest parts of ordering to be deciding what to get.
While they offer a lot of meats that you cook, a good portion of the items they offer are premade foods .
This enormous variety, coupled with their premade options makes Omaha Steaks a great option for special occasions where you may need to feed a lot of people a nice dinner but you dont want to have to spend hours cooking everything. Emily and I have considered using Omaha Steaks for when we host future family holidays.
How To Seal Burgers
Cooking sous vide starts by placing the food in a plastic bag. Normally the goal is to remove as much air as possible from the bag, which typically requires the use of a vacuum pump. But with burgers, using a pump can lead to problems like this:
Serious Eats / J. Kenji López-Alt
This burger was sealed using a FoodSaver-brand vacuum sealer, which sucks air out of the bag with a pump before sealing it. That little bit of extra compression may not seem like a big deal, but it can end up overly compressing your meat, giving you a burger that is dense and heavy rather than juicy with a nice, loose texture.
A much better approach is the water displacement method, an ingeniously simple trick I first learned from Dave Arnold. Essentially, you place your food in a plastic zipper-lock bag, close up all but the very edge of the seal, then slowly dip it into water, pressing the air out as you go and keeping the open corner out of the water for as long as possible. Once your food is almost fully submerged, you zip up the last bit just before it reaches the water level. Youre left with food in a nearly airless bag, but with very little compression.

How Long Do You Cook Omaha Hamburgers
If you want to cook Omaha hamburgers properly, you need to follow the correct cooking instructions. First, you should preheat your oven to 425 degrees Fahrenheit. This will also heat the grill or pan that you will cook the burgers on. Once the oven has preheated, put the greased baking tray into the oven and wait for 15 minutes before placing the burgers on the pan. Cooking the burgers for longer can cause them to become dry or burnt.
Once you have the right temperature, you can start cooking Omaha hamburgers. When using a grill, it is best to cook the burger on medium high heat. Once it reaches this temperature, you can flip the burgers and cook them for another 5 minutes. After this, you can season the burgers as desired. They will take about 15 to 20 minutes to fully cook.
Alternatively, you can purchase frozen Omaha hamburgers. In that case, you need to make sure to press the burger to release juices. This will equal the flavor of the burger. Once the burgers are flipped over, you can move them to a medium heat zone. When cooking them on a grill, you can place them over flames so that the grill marks will become more visible.
How Long Can Omaha Steaks Stay In The Shipping Cooler Before Spoiling
Weve left our meat in its Styrofoam container for upwards of 6 hours from when it arrived on our doorstep . So this means that the meat was in the cooler for over 30 hours and there was still a huge block of dry ice in it. My rule of thumb for anything being delivered frozen is to ensure it is frozen when I open the box or else I consider it spoiled and contact customer support.
