What Is Tri Tip

Tri tip roast is a triangle-shaped cut of beef roast that comes from the lower part of the bottom sirloin. Most tri tips are purchased trimmed from the butcher and weigh around 2-3 pounds. Untrimmed, a tri tip will have a large fat side and layer of silver skin and can weigh nearly 5 pounds.

Tri tip is most popular in Western America, with possible origin ties to California, but it is becoming much more available across the rest of the United States.

[Homemade] Smoked tri

Tri tip can be bought from the butcher trimmed or untrimmed. While its generally cheaper to buy the latter, make sure you have a knife sharp enough at home to trim it yourself otherwise its probably worthwhile spending a few extra dollars per pound/kilogram to have the butcher do it for you. You can also buy tri tip steaks individually, which are ideal for smaller households.

Just like a brisket, you want to cut off any ragged ends and silver skin, trimming down the fat as much as possible. Its fine to leave a little fat on, but get rid of any thick chunks of fat so that you are left with a lean, boneless, boomerang-shaped piece of meat.

When it comes to seasoning, tri tip is incredibly versatile and takes well to both dry and wet rubs. As its a fairly thick cut, you want to season it aggressively with salt, pepper and your favourite spices. To help the seasoning stick, first rub it with a neutral oil and coat it in your preferred spice mix.

    Things You’ll Need

    • Salt and pepper, to taste

    • Other spices such as garlic, parsley, cilantro or paprika

If you want to make the most of your meat, you can smoke tri-tip steak to mouthwatering perfection. Many chefs say that smoking tri-tip steak is the best way to cook it, as it adds flavor and preserves moisture.

Tri-tips can be tenderized by marinating them in the refrigerator for 2 to 3 hours or overnight. When they’re ready to cook, here’s how to do it.

    1. Rub your tri-tip steaks with salt and pepper and other spices, if desired.

    2. Place your steaks in the smoker on the top shelf in medium heat for about 45 minutes, turning once halfway through to brown both sides.

    3. Move the steaks to the bottom shelf of the smoker and sear for about 3 minutes on each side.

    4. Remove the steaks from the smoker when the internal temperature reaches 130 to 140 F for medium-rare, and cover them immediately with aluminum foil. The meat keeps cooking after it is removed from the heat and covered.

    5. Allow the steaks to rest for 10 minutes before slicing and serving.

How To Make Air Fryer Tri Tip

A tri tip is meant to be cooked to medium rare inside. Its at its most tender when its cooked to only 140°F inside, so the slices are pink. Not everyone loves their steak this way, so feel free to cook it to medium or medium well if you like that better. However, this steak isnt meant to be cooked like a roast until its fall apart tender.

Take the tri tip out of the refrigerator at least 15 minutes before cooking so it can come up to room temperature. This will ensure a more even cooking.

Mix together all the seasonings with the olive oil in a bowl. Coat the tri tip with the rub. I use my hands to do this. Just sort of massage it into the steak until its coated. You can put it back in the fridge to marinate for 30 minutes to a couple of hours to impart more flavor, or just go ahead with cooking.

Spray the basket of your air fryer to keep it from sticking to the bottom and place the tri tip inside.

Note that this is a recipe for a 2-pound tri tip. That means if you have one thats smaller or larger, the cook time will vary. Keep checking the internal temperature with a meat thermometer to make sure it comes out the way you want it. Dont just trust the timing here. All air fryers are different.

Cook at 380°F for 14 minutes, flipping it over halfway through. Then check the internal temperature. It should be:

    • 145-150° for medium
    • 160° for well done

How To Cook Tri Tip In The Oven

Tri-tip roasts range from 1 1/2 pounds to 4 pounds. A 1 1/2 lb roast will serve around 3-4 people, depending on appetite. I try to buy a 2 1/2 pound roast so theres some left overs.

The cooking time will vary based on the size of the roast. Plan on about 10 minutes per pound. The best way to make sure the meat is cooked to your preference is to use a thermometer to test the meat.

If you have a digital oven thermometer that can be left in the meat while it cooks, thats the best way to ensure it doesnt over cook.

For medium-rare you want 135 degrees F. For medium its 145 degrees. Be sure to take into account the 5-10 degrees from carryover cooking . I dont recommend going over 145 degrees for this cut, but if you like well done meat, thats up to you.

I always find that it rises 10 degrees after removing the tri tip from the oven, so I take it out at 125 degrees, so it rises to the perfect medium rare. I prefer medium rare for tri tip, so it will rise to 130-135 degrees F after removing from the oven.

    Interesting Facts About Tri

    Tri Tip

Many butchers used tri-tip for ground beef until the 1950s and 1960s — the American outdoor grilling boom. Needing more grillable cuts to satisfy public demand, butchers in California began trimming away this triangle-sized muscle from the bottom sirloin.

Most cuisines around the world cook tri-tip whole. In French cuisine, the entire cut is roasted. In Germany, it is boiled with horseradish. Central Californians have claimed the tri-tip as their own, the “Santa Maria Tri-Tip” is considered a delicacy of the region.

Food scientists have measured tri-tip as the 9th most tender cut, even more tender than ribeye.

The National Cattlemen’s Beef Association identifies the tri-tip with UPC number 1430. You may see this number in the UPC code on the beef package label at the supermarket.
