Find The Right Temperature

How To Grill The PERFECT Steak Every time! | Cooking Is Easy

Use a digital meat thermometer to find the accurate temperature of flank steak. Because this cut is thinner than others, it might look not quite done enough on the outside but done more than youd like it on the inside. Once you become more familiar with grilling it, youll get a good idea of its look and feel for the level of doneness you like, but the only way to know for sure what temperature it is inside is with a meat thermometer.

Check flank steak on the grill by inserting the probe into its thickest part and comparing that temperature to the remove from heat temperature in the chart above to determine when to pull it from the grill. Then, temp the steak again after resting to ensure that its reached your ideal doneness temperature.

Th Step: Peripheral Preparations

Ensure to wipe with olive oil on the grilling mashes before settling the meat. It will assist the meat to diversify to the temperature of the grills on time placed over the grill.

It will furthermore impede the meat from sticking to the grates as the oil will hinder the explicit contact between the meat and the grills.

Approximately 10 minutes before the chilling duration is over, begin preheating your steam to formal settings.

At the 30-minute mark, eliminate the meat from the refrigerator and spray over some black pepper powder on both walls before cookery.

Tips For Grilling Steaks:

  • Choose the cut thats right for you. There are many good cuts of steak to choose from, depending on your preference. I love rib-eyes, strip steaks and T-bone steaks. If you prefer a thin steak they cook faster and youre not dealing with a big thick piece of meat when you eat. If you cant find the thin cut youre looking for, purchase a thicker cut of meat and ask the butcher at the store to slice it in half, horizontally.
  • Choose high quality steak. The quality of the meat you purchase plays a huge factor in how good your steaks will turn out! Steaks are given different grades based on the marbling and the age the animal was at slaughter. The highest quality meat is younger beef that has the most marbling. At most grocery stores, youll have your choice of the following three grades:
  • Select: cheaper, or sale priced meat.
  • Choice: The best choice for your local grocery store. Higher quality and widely available.
  • Prime: the best of the best. Not found at most supermarkets but you can find prime cuts of meat at Costco!
  • Slice against the grain. After your steak has had a chance to rest, use a sharp knife and slice it against or across the grain in thin, ¼ inch slices. This way, your cutting through the fibers of the meat and the meat will be easier and more enjoyable to chew.

What grilling should achieve is a lovely seared, faintly charred outside edge with the rest of the meat very tender and juicy within. This is the closest thing to cooking on an open fire because, when the meat is placed on a rack, the air circulates and this gives the grilled meat its unique flavour. If youre cutting down on fat, then grill without fat or oil. However, if that is not your priority, it is better to brush very lean meat, such as pork steaks, with a little melted butter, and fillet steaks with a little oil before grilling.

On a domestic grill, what you need to do is pre-heat to the highest setting at least 10 minutes before you want to start cooking, and remember to try and position the meat 2-3 inches from the heat, turning the meat over halfway through to grill the other side. Never season meat before grilling, as salt draws out the precious juices youre trying to keep in .

How To Grill Medium Steak On A Charcoal Grill: Step

  • Prepare your charcoal grill by applying a thin layer of cooking spray to the grates, followed by an even coating of kosher salt. If you do not have cooking spray simply pour some oil onto a paper towel and wipe it over the grates. It is best to apply the salt while the grill is still warm so that it sticks.
  • Light the charcoal with a long-handled fireplace lighter, or with a chimney starter . Place enough hot coals for half of your desired cooking time in one pile on one side of the grill. Place about 1/4 cup of unignited charcoal next to the lit coals. This will be used at the end to create some open flame in order to give your steak that nice charred flavor. Keep in mind that if you are cooking something other than medium steaks then you may want to consider adjusting the fire so that it has two separate piles of heat rather than just one.
  • 3 . Lay 2-3 fist-sized pieces of dry wood chips on top of the hot coals. If you do not have wood chips simply substitute them with dry branches or other items that achieve a similar effect. The type of wood does not matter as much as the fact that it is dry and untreated by chemicals.

6 . Take two large handfuls of dry wood chips and place them directly on top of the coals you just moved. Use your tongs to position the steak near this newly created flame and close the lid once more. Cook it for 4 minutes or until medium-rare, flipping it over halfway through so that both sides become browned and crusty.

How Long Do You Cook A Medium Rare Steak

To get medium-rare doneness, you will normally need to cook your steak for 4 to 6 minutes each side, depending on the thickness of the steak. If youre cooking medium-rare meat, aim for closer to 5 to 8 minutes on each side. Starting with a shorter grilled steak time and testing it with your finger is always the best strategy..

Is It Important To Let The Steaks Rest

How Long to Grill a Steak on a Charcoal Grill

Yes. The steak actually continues to cook during those few minutes. This continuation of cooking is great because it doesnt dry out the steak, as it would by simply leaving it on the grill longer. Cutting into the steak interrupts that last little period of cooking by releasing the heat inside the steak. Trust me, let it rest a few minutes and your steak will turn out perfect.

To prepare steaks for the grill you will need to:

  • Remove from refrigerator: remove steak from the fridge and let them come to room temperature.
  • Pat them dry: pat steaks dry with a clean paper towel to remove excess moisture. This helps the steaks get a better sear on them.
  • Season or marinate: whether you use salt + pepper or a great marinade, I would definitely recommend adding a little seasoning!
  • How To Cook Medium Steak

If you are grilling for a large group of people, this level of doneness often pleases most everyone. A medium-cooked steak should have a thick band of light pink through the middle but have more browned meat than pink overall. The sides should be a rich brown color and the top and bottom charred darkly . This steak will have some play through the middle, but feel firm to the touch.

For a 1-inch steak, place steak on a hot grill for 6 minutes. Turn and continue grilling for another 4 minutes until an internal temperature of 140 to 150 F is reached.

How To Measure Steak Doneness By Touch

You may have read about the “poke test” for determining whether a steak is done. The idea is that you find a place on your body that corresponds to a steak doneness level. You press that place sometimes a part of the face, sometimes a fingertip, sometimes the meaty part of your hand below your thumb note the “springiness,” then touch the steak to see if it has the corresponding “springiness.”

Chefs who cook many steaks a day, usually of similar cuts on the same equipment indoors, can get pretty good at using simple touch tests to see if steaks are done.

But as an outdoor griller, you’ve got other factors to consider, including the outside temperature, the cut of the steak, whether you marinated it or not, how soft your hands are so unless you cook the exact cuts of meat, prepared the same way, at the exact temperature, many, many times, the poke test will let you down.

Thats why recommend using a digital thermometer so you can nail the perfect doneness every time.

    Th Step: The Grilling Proper

How to Cook a Steak on a Gas Grill

The process on how to grill a thin steakrelies on three factors: the time, the temperature, and the looks.

The time portion is highly dependent on the thickness of the slab of meat to be cooked. In this case, for grilling thin steaks, how long would it take?

As for the meats temperature indicator, to be utterly specific, use a meat thermometer to check the temperature. It can give more accurate grill results.

For medium-rare steaks, the temperature ranges from 120° to 125° degrees Fahrenheit or 49° to 52° degrees Celsius.

As for the looks, the outside must have a smoky-gray looking feel with no burns except the grill marks on the thin steak. Make sure to cover the steak with aluminum foil first for approximately 5 minutes before consumption.

It will allow you to have time to prepare the table for your family. Plus, it will also let the heat be trapped and infiltrate the thin steak more.

Once you remove the foil and slice the steak open, the meat should show two distinctive layersone grayish-brown layer on the outside indicating the crisp cooked feel.

Another layer on the inside that is pinkish with juice that drips when pressed. There you have your medium-rare thin steak.

Pitmaster, Meathead Goldwyn, came up with an awesome technique: the afterburner grilling method which he calls extreme. I guess its fair to say that anything resembling the afterburner of a jet engine is extreme!

This is about as hot as it gets short of actually throwing the meat into the fire. Were talking intense.

    How To

With this method, you take the charcoal chimney that you would usually use to light a charcoal grill, light it up good and hot with coals on the inside and paper underneath, put a grill on top and cook these thin steaks over the chimney for about 2-3 minutes each side. Super hot. Super fast.

The only drawback with this method is you cannot cook many steaks at the same time because your cooking surface is only as big as the opening of the chimney.

Check out this short video for an excellent introduction to the afterburner method of cooking steaks.

This step is a no-brainer but does make a difference. As this article from Americas Test Kitchen states, the rub is the seasoning that will provide the most impact on the final flavor.

If youre looking for a simple rub, try using salt and pepper. You can add your favorite spices or herbs to give it some extra flavor. Just make sure they are dry before you apply them to your steak. One of my favorite rubs includes olive oil, minced garlic, and onion powder.

We recommend pairing your grilled chuck steak with a side of roasted vegetables or potatoes if you want a balanced meal.

How Long To Cook Steak Chart

I havent gone into great detail in this post about cooking times and done-ness of the steak. Generally I like my steaks to be cooked to medium, especially rib-eyes which dont do so well cooked less as the fat doesnt have chance to melt.

I wont ever understand wanting a well done steak, I was raised on these and thankfully I saw the light as a teenager. I much prefer the taste and texture of non rubbery steak. But you cook your steak however you or your guests like it. Being dictatorial about how someone should eat their steak is counter-productive to enjoyment.

I dont use a temperature gauge and generally rely on touch. The firmer the steak when you press on it with your finger, the more done it is in the middle.
