Find The Right Temperature
Use a digital meat thermometer to find the accurate temperature of flank steak. Because this cut is thinner than others, it might look not quite done enough on the outside but done more than youd like it on the inside. Once you become more familiar with grilling it, youll get a good idea of its look and feel for the level of doneness you like, but the only way to know for sure what temperature it is inside is with a meat thermometer.
Check flank steak on the grill by inserting the probe into its thickest part and comparing that temperature to the remove from heat temperature in the chart above to determine when to pull it from the grill. Then, temp the steak again after resting to ensure that its reached your ideal doneness temperature.

- Prime: the best of the best. Not found at most supermarkets but you can find prime cuts of meat at Costco!

If you are grilling for a large group of people, this level of doneness often pleases most everyone. A medium-cooked steak should have a thick band of light pink through the middle but have more browned meat than pink overall. How To Measure Steak Doneness By Touch
You may have read about the “poke test” for determining whether a steak is done. The idea is that you find a place on your body that corresponds to a steak doneness level. You press that place sometimes a part of the face, sometimes a fingertip, sometimes the meaty part of your hand below your thumb note the “springiness,” then touch the steak to see if it has the corresponding “springiness.”
Chefs who cook many steaks a day, usually of similar cuts on the same equipment indoors, can get pretty good at using simple touch tests to see if steaks are done.
But as an outdoor griller, you’ve got other factors to consider, including the outside temperature, the cut of the steak, whether you marinated it or not, how soft your hands are so unless you cook the exact cuts of meat, prepared the same way, at the exact temperature, many, many times, the poke test will let you down.

Th Step: The Grilling Proper
The process on how to grill a thin steakrelies on three factors: the time, the temperature, and the looks.
The time portion is highly dependent on the thickness of the slab of meat to be cooked. In this case, for grilling thin steaks, how long would it take?
As for the meats temperature indicator, to be utterly specific, use a meat thermometer to check the temperature. It can give more accurate grill results.
For medium-rare steaks, the temperature ranges from 120° to 125° degrees Fahrenheit or 49° to 52° degrees Celsius.
As for the looks, the outside must have a smoky-gray looking feel with no burns except the grill marks on the thin steak. Make sure to cover the steak with aluminum foil first for approximately 5 minutes before consumption.
It will allow you to have time to prepare the table for your family. Plus, it will also let the heat be trapped and infiltrate the thin steak more.
Once you remove the foil and slice the steak open, the meat should show two distinctive layersone grayish-brown layer on the outside indicating the crisp cooked feel.
Another layer on the inside that is pinkish with juice that drips when pressed. There you have your medium-rare thin steak.

With this method, you take the charcoal chimney that you would usually use to light a charcoal grill, light it up good and hot with coals on the inside and paper underneath, put a grill on top and cook these thin steaks over the chimney for about 2-3 minutes each side. Super hot. Super fast.
The only drawback with this method is you cannot cook many steaks at the same time because your cooking surface is only as big as the opening of the chimney.

Condiments And Sides To Cook Chuck Steak On The Grill
This step is a no-brainer but does make a difference. As this article from Americas Test Kitchen states, the rub is the seasoning that will provide the most impact on the final flavor.
If youre looking for a simple rub, try using salt and pepper. You can add your favorite spices or herbs to give it some extra flavor. Just make sure they are dry before you apply them to your steak. One of my favorite rubs includes olive oil, minced garlic, and onion powder.
We recommend pairing your grilled chuck steak with a side of roasted vegetables or potatoes if you want a balanced meal.
How To Cook Steak

I havent gone into great detail in this post about cooking times and done-ness of the steak. Generally I like my steaks to be cooked to medium, especially rib-eyes which dont do so well cooked less as the fat doesnt have chance to melt.
I wont ever understand wanting a well done steak, I was raised on these and thankfully I saw the light as a teenager. I much prefer the taste and texture of non rubbery steak. But you cook your steak however you or your guests like it. Being dictatorial about how someone should eat their steak is counter-productive to enjoyment.
I dont use a temperature gauge and generally rely on touch. The firmer the steak when you press on it with your finger, the more done it is in the middle.
