One of the things that we get asked often is, Is prime rib and ribeye the same thing? or Prime rib vs ribeye which one is best?. Our answers? Prime rib and rib eye are similar, but no, they arent the same, nor is one technically better than the other. Both rib eye and prime rib are excellent steak cut options for different purposes. Theyre both incredibly flavorful, have fantastic marbling, and are both prime beef options with just the right amount of fat to improve taste and texture.
Unlike some of the other steak cuts we prepare, these cuts of steaks come from the same primal cut of beef. A ribeye is the section of the rib roast that is cut before being cooked, but lets dig a little deeper to find out more about each cut and each difference that separates them.
How To Cook The Perfect Steak
1. For steaks that are 1-inch thick or greater: grill or sear for 3 minutes per side for medium-rare, 4 minutes per side for medium.
2. For steaks that are less than 1-inch thick: grill or sear for 2 minutes per side for medium-rare, 3 minutes per side for medium.
3. Use a meat thermometer to properly cook your steak. Just insert it horizontally into the side of the cuts center while making sure not to touch any bones or fat.
- Medium Rare: 145°
- Medium: 160°
- Well Done: 170°
4. To avoid releasing the juices of a steak when using a meat thermometer, test for doneness using your hand. With your left hand, palm facing up, touch the tip of your thumb to the tip of your pinky finger. Using your right index finger, press the muscle at the base of your thumb. This is what well-done feels like. Compare to the feel of your steak. Touch your thumb to your ring finger for medium-well, middle finger for medium and index finger for rare.
5. Meat continues cooking even when removed from heat. To achieve desired doneness, all steaks should rest for at least 5 minutes.

How To Cook Ribeye
As we mentioned, you can cook ribeye using a variety of cooking methods, including pan-searing, grilling, or reverse-searing. Basically, any kind of cooking method that works for other steaks will also work for a ribeye.
However, one of the best and easiest methods remains pan-searing. With this method, you can get a rich, golden-brown sear on the ribeye while achieving a tender, medium-rare cook inside.
Heres how to do it. Start by leaving the ribeye at room temperature for about 30 minutes. Use this time to season the meat generously with salt and freshly ground black pepper. Meanwhile, preheat your skillet a cast iron skillet is best if you have one with a little bit of oil over medium-high heat.
Now, add the ribeye steak to the pan and sear for 2-3 minutes until a golden-brown crust forms. Flip the steak and do the same to the other side.
Turn the temperature down to low to allow the steak to continue cooking inside without browning more on the outside. Melt about 2 tbsp of butter and add it to the pan. While the ribeye cooks, occasionally spoon the butter over the ribeye to keep it moist and warm.
Again, use our steak temperature guide to ensure the steak comes to the right temperature for your level of doneness using a meat thermometer. When ready, remove the steak from the pan, tent with foil, and let rest for 5-10 minutes before enjoying.
How Much Prime Rib To Buy
The butcher will recommend you purchase about one pound per person, so if you are feeding 5 people, a 5-lb. roast is perfect.
I purchased a 5-lb. roast and it was perfect for my family which consists of my husband and me, two teenagers, and a ten-year-old. We did not have any leftovers. If you want leftover meat, consider buying a larger roast.
When selecting a ribeye roast look for good marbling and try to find one that has even fat distribution.
My cut was a little on the fatty side, so it made for a delicious roast.

This post will be your guide to finding a Ribeye steak for a good price. Notice I didn’t say the cheapest price – we already know who won that one. I am defining a good price as being the price you pay for a good, not necessarily top of the line steak.
Are Their Flavors Different
Because the prime rib and eye portions are similar pieces of meat coming from the same part of the cow, youre not going to find significant differences in their flavor. Theyre both filled with rich, beefy flavors thanks to their fat and muscle content. However, the prime rib typically contains more bone and fat, which might give it a slight edge over the eye in terms of flavor. Bone-in ribeye, though, also benefits from the natural flavoring that comes from being cooked with the bone, so its flavor doesnt stray far from the prime rib.

Its helpful to understand that the label prime can refer to two different things.
Knowing what both are will help you order the right prime rib from a butcher. The label can either refer to the cut or the grade. The cut relates to which part of the cow its from, while the USDA determines the grade.
The best grade of beef has the most marbling its tender and flavorful. Its designated as USDA Prime. This is what you want. And you should let the butcher or the person attending to you at the supermarket know this. Because its expensive, Prime often ends-up in high-end hotels and restaurants.
The next grade below Prime is Choice this is not what you want if you want the best. You could simply walk-in and talk to a butcher, or if its a first-rate butcher, you could place an order online.

Is ribeye the same as prime rib for cookings sake? It can be, but it depends on the way in which the ribeye and prime rib are cut.
Rib eye is generally cooked like a steak. That means you can grill it or pan-fry it to your hearts content, and itll be just as delicious and full of beefy flavour no matter what you do. A few minutes on high temperature in a cast-iron skillet and seasoned with a little salt and pepper gives the eye a gorgeous, crispy sear and just the right seasoning. The marbling cooks down through the process to keep the cut tender and juicy.
A roast is different, though. Youll want to make sure your roast is completely thawed and seasoned before attempting to roast it in the oven or grill it. Steak University offers easy instructions for roasting or grilling a prime rib roast.
As we mentioned in the previous section, you have a lot of options for cooking both ribeye and prime rib, but the prime rib as a roast has virtually innumerable options. One of the best ways to do it is to season it with salt and pepper and slow-roast it in the oven with low heat until its close to coming to temperature. Then, boost the heat for the last few minutes to sear the outside. Itll cook thoroughly without getting dry while turning the outside crispy.

What Is A Ribeye Steak
Before we get into talking prices, I want to take time to describe what you are getting in a Ribeye. Time to pull the cow diagram.
Ribeye steaks come from the rib section of the cow. This is in the middle of the cow closer to the front. The middle of the back doesn’t get much work, so the meat is tender. Since it is closer to the front it contains more fat.

What Is Ribeye And Where Does It Come From
You may see ribeye referred to in several ways, like ribeye or rib eye and rib steak. Dont get too hung up on the names the ribeye has many names, but they all generally refer to the same cut. As stated earlier, this cut comes from the rib area of the animal, hence the rib portion of its name. The cut is from the rib roast, aka prime rib. To be considered a ribeye, the steak must be cut before the roast is cooked. The cuts are then sold as ribeye steaks. Prime rib cuts are larger than ribeye cuts since they include the ribeye and the bone.

How To Make Prime Rib
Let the roast come to room temperature before cooking. This could take up to one hour. This step ensures the roast will cook evenly without hot spots on the top and raw meat in the middle.
Tying Up Prime Rib Roast: It is important to tie the prime rib before roasting. If left untied, the outer layer of meat will pull away from the rib-eye muscle and overcook. To prevent this problem, tie the roast at both ends, running the cooking twine parallel to the bone.

In a small bowl, combine softened butter, garlic, rosemary, thyme, kosher salt, and black pepper.
Pat the roast dry with paper towels to remove excess moisture.
Rub the butter mixture all over the roast and place the roast into a roasting pan.
Add chopped celery, onions, and carrots to the roasting pan and add 1 cup of beef broth to the roasting pan. Season the vegetables with salt and pepper and a drizzle of olive oil.
Preheat oven to 500º.
Cook the roast for 20 minutes uncovered at 500° to get a gorgeous crust and sear the meat. This also locks in the juices and is an essential step in cooking a prime rib.
Look at that crust after 20 minutes.
What Is The Best Prime Rib To Buy
Go for a roast thats brightly-colored, and that has milky-white fat.
Flee from those that are dull-colored and full of yellow fat! Yes, the fresher, the better. You want to choose the most marbled meat. This is a critical criterion in the grading because the more marbled prime rib is from young, well-fed breeds.
You must stay a little wary to ensure you get the genuine article, because the label Prime, alone, does not prove that youre getting both USDA Prime grade beef in addition to prime rib.
But in all honesty, USDA prime alone doesnt always mean better.

The best is sometimes the most expensive . But not always. So, choose Prime in most cases, or grass-fed choice. But, if youre short on budget, then opt for Choice. Prime is the highest USDA grade. Its followed by Choice, and lastly, you have Select.
I would recommend you steer clear of select, or any beef that doesnt tell you the grade.
In a nutshell, be guided by the USDA grade shields, theyre so simple and easy to see. Dont believe that simply because you saw the word prime, that youd got the best. Only about 2% of all beef qualifies as USDA Prime. But, if you can afford it, thats the best prime rib to buy.
