How to grill Tri Tip Steaks with Potato Bombs | Recipe

You want to slow grill your tri tip for the best texture. It benefits from a slower cook. Doing this is really easy if you have a grill with a two-sided heating element. You can set the left side to medium high and keep the right side turned off.

You will sear the meat on the hot left side grill and then remove it to the right side where it will receive indirect heat.

During the slow cooking, you dont want the heat of the grill to go over 375° to 400° F with the lid down. This will keep the heat low enough to slow cook the tri tip.

Once the grill is preheated to at least 375° F, set the tri tip on the hot side of the grill and close the lid. Cook the roast for roughly 5 minutes per side to sear the meat all around and get some nice dark grill marks. Searing ensures the rub forms a nice crust and locks in all the juices and flavor.

Once the searing is done, move the roast to the cooler side of the grill, off of the direct heat. If you have a leave-in grill thermometer probe, stick that into the thickest part of the meat and close the lid. Watch that the temperature in the grill doesnt go above 400° F.

The tri tip is done when the instant-read thermometer reads 130° F , for medium-rare. If you want medium, continue cooking to 135° F.

Take the meat off the grill and let it rest for at least 10 minutes wrapped in tin foil. This allows the meat to come up to the proper temperature.

To serve, slice the roast against the grain in thin slices.

Preheat your oven to 400°F. Line a rimmed baking sheet with foil and place an oven-safe roasting rack on top. Heat a large skillet over medium high heat. Add 2 tablespoons of olive oil. Place the roast on the cooling rack. Put the roast in the oven and bake at 400 degrees for about 20-30 minutes, or about 10-15 minutes per pound. Remember rare is 130-135 degrees F. Medium rare is 135-145 degrees F. Remove the roast from the oven, cover with foil and let rest for 10-15 minutes. Slice to serve. See above instructions for carving the meat.

Should I Wrap My Tri Tip In Foil

Definitely dont wrap your tri tip in foil for grilling, lets just put that out there right now. You want those crispy, smokey edges. If youre a big foil-fan, Im begging you. At least take the foil off for the last minutes of cooking!

For baking in the oven, the baking time in this recipe is designed for having no foil. If however, toward the end of the baking time, the internal temperature is lower than 135 degrees, but the meat is already getting crispy and black, protect against overcooking by folding aluminum foil into a tent shape and placing it over the tri tip.

Grilling a tri-tip is a great way to cook up some delicious, succulent meat. However, there are a few things you should consider before grilling your tri-tip. first, make sure that you have an effective grill pan. If your pan does not have a tight fit on the meat, you may end up putting too much heat on the outside of the Tri-tip and this will cause it to start smoking.

Second, make sure that your grill has plenty of oil or fat in it. This will help keep the steak from sticking to the fire and giving you an even cooking surface. Finally, remember to use indirect heat if possible so that all of the carcinogens from the grill do not come into contact with your food.
