Monarch Beach Resort Unveils Bourbon Steak Orange County

DANA POINT, CALIF.Monarch Beach Resort has opened BOURBON STEAK ORANGE COUNTY, the propertys new Michael Mina restaurant and bar that is a modern, seasonal take on the classic steakhouse. After closing the successful Stonehill Tavern last December in order to create BOURBON STEAK, Monarch Beach Resort has set out to further enhance the resorts dining scene with a new look and modernized culinary concept.

Executive Chef Bryan Brown, Sommelier Michelle Morin, and General Manager Amber Ault led the opening of the first BOURBON STEAK in Orange County. The menu highlights Chef Michael Minas signature butter-poached and dry-aged prime steaks along with dishes showcasing locally-sourced, seasonal ingredients. Brown helms the kitchen, with signature dishes unique to its coastal Southern California location including Smokin Hot Shellfish Platter, Beet Tartare, and The OC Lobster Salad. The spirits program pays homage to classic cocktails and the restaurant offers a tableside martini cart.

After much anticipation, we are happy to officially open BOURBON STEAK ORANGE COUNTY, Ian Pullan, vice president and general manager of Monarch Beach Resort, says. Chef Minas talented culinary team, along with Chef Brown, has been working closely together to create a lively dining destination for Orange County residents, members, and resort guests alike.

About Our Chef: Michael Mina

Born in Cairo, Egypt, and raised in Ellensburg, Washington, Chef Michael Mina has enjoyed a love affair with the kitchen, creating memorable dining experiences for guests from a very early age.

Chef Minas epicurean journey began in 1987 at the Culinary Institute of America in Hyde Park. During those 18 months of formal schooling, he spent his weekends sharpening his natural talents with hands-on experience in Charlie Palmers kitchen at the upscale Aureole in New York City.

At the start of his career, Chef Mina was presented with the opportunity of a lifetime with then-executive chef of the Bel Air Hotel in Los Angeles, Chef George Morrone. The two were asked to develop a concept and create a menu for an upscale seafood restaurant in San Francisco the city Chef Mina had dreamed of calling home one day.

Welcomed to San Francisco by a major earthquake his second day in the city, he was unfazed and went to work immediately under Chef Georges direction. Chef Mina dedicated himself to creating a complete dining experience training the entire kitchen staff personally and refining the menu as chef de cuisine. AQUA opened to rave reviews and national acclaim in 1991. Chef Mina served as AQUAs executive chef from 1993 to 2002, where he was awarded Rising Star Chef of the Year in 1997 and Best California Chef in 2002 by the James Beard Foundation.

We ate at this bourdon steak because we were in the hotel. this is our second bourbon steak experience. The first one, near where we live was good . This was so above and beyond. First, the staff were fantastic. I can’t stress enough how wonderful and helpful they were. One even ran down the hotel to catch my scarf that blew off my lap.Also the food was perfect, cooked exactly as we asked and there was so many little extras. Last, the view was fantastic. Will be back when we visit the hotel again. It was wonderful

We were not happy with our table as they had squeezed in our table in an area that had a high traffic next to the service station . We asked to be moved but they refused even though we saw a few empty tables near the windows. They just crammed too many tables in a relatively small area. The food was very good but I expected exceptional premium steakhouse setting which clearly this restaurant is missing. The dishwasher and silverware dont measure up to a 5 star steakhouse quality . The server was very polite and attentive. Overall we enjoyed it but I have been to better steakhouses in South Orange County .

Just the best steak place ever! The mashed potato purée is ridiculously good and the chef will alter anything to make it better. Get the shrimp cocktail best ever!! And of course the dink g room captain Lyle and GM Aaron along with waiter Ryan were amazing.

A memorable experience. The ambience was great, the service above par and the food was delectable. Will be back.

The food and the wait staff were impeccable. The only minor annoyance was the noise factor as i was very crowded and LOUD!

Amazing food and service. Probably the best restaurant around for anything special in your life. Lyle and Marissa made us feel so welcome and the food was fabulous. Thank you for a truly wonderful dining experience.

Chris Sanchez Promoted To Executive Chef At Michael Minas Award

In March of 2020, Chef Michael Minas Bourbon Steak Orange County celebrated its second anniversary. Named the #1 Restaurant in Orange County in 2018, and #2 in 2019 by Orange County Register critic Brad A. Johnson, the acclaimed steakhouse, complete with panoramic views of the Pacific Ocean, is considered a crown jewel in Dana Point. After the statewide mandate for restaurant closures, Bourbon Steak has reopened with expanded outdoor dining overlooking Monarch Beach Resorts Grand Lawn. Now, the critically acclaimed restaurant enters into its third year with the promotion of their new Executive Chef, Chris Sanchez.

Chef Chris, who most recently served as the restaurants Executive Sous Chef, opened Bourbon Steak Orange County in 2018 and helped lead the restaurant to incredible success during its first two years. His journey with the Monarch Beach Resort began back in 2010, formally known as The St. Regis Monarch Beach, working as a sous chef for the premier propertys various outlets. Before joining the resorts culinary operations team, Chef Chris worked at some of Orange Counties most prestigious culinary locations, such as Patina Group, Marche Moderne, and the Disneyland Resort.

Ny Strip Steak With Orange Bourbon Glaze

1 NY strip steak
Orange Bourbon Glaze, recipe follows
2 tablespoons diced shallots
2 seedless oranges, peeled and segmented
1/2 cup brown sugar

Steps:

  • Preheat grill to high and oven to 350 degrees F.
  • In a medium bowl, combine Cajun seasoning, cayenne, salt, pepper and 2 tablespoons canola oil. Rub mixture on both sides of the steak. In a saute pan, sear steak for 7 minutes on both sides. Place steak in a plastic bag to marinate for 1 hour in refrigerator. After marinating for 1 hour, remove steak from refrigerator and let sit for 15 minutes. Grill steak for 12 minutes . Remove from grill with tongs and let rest for 8 to 12 minutes. Using a serving spoon, add Orange Bourbon Glaze to steak.
  • In a medium saucepan over medium-high heat saute the shallots in 2 tablespoons of butter until caramelized. Whisk in the bourbon, oranges, brown sugar, salt and pepper. Bring to a simmer over medium-high heat. Reduce heat to medium-low and add beef stock. Simmer until mixture is a sauce-like consistency. Remove from heat. Whisk in the remaining 2 tablespoons of butter.

Inventive yet classic, outstanding service, exquisite food and flavors of interest. Thomas was our server and seemed to be able to read our mind at every step of our experience. He was wonderful and knew the menu very well. It felt like he got to…know us quickly and was able to provide the best possible experience. We loved every moment. To start, they serve complimentary fries that come with their own seasonings and sauces. Ive never experienced anything like it. All of them were delicious. They also served a roll with butter and truffles- also amazing. My husband ordered a red wine, and I didnt feel like a whole glass. Thomas was so nice and gave me a little splash since it was my birthday. Like I said – exceptional service!!We decided to order the char broiled shrimp with butter and the ribeye trio special- and both were so delicious. We loved the snake river steak the most. The sauces paired with the steak so nicely . We also couldnt resist the truffle mac and cheese, which was absolutely delicious. We took some of our food to go, since we just couldnt finish it. We also received a complimentary birthday dessert- a yummy spice cake and ice cream. Thomas also provided complimentary chocolates and popcorn to take home. Wonderful experience!!! Better than chain luxury steakhouses such as Capital Grille, no question.More

I was looking forward to thatAs our county is changing, there are creeps everywhere. The restroom is very very far from the restaurant and I had a creep scared me at the restroom entranc showe I will make phone calls to the manager this week, now that I had time to collect myself, but be aware if going to MM at the Astoria in Dana Point make sure to use the «buddy system» when going to the restroom. Also both doors going into the women’s restroom is «locked» open. It made me uncomfortable Overall, service was ok not great, and the fish they served me wasn’t that great and the steak ordered by my husband wasn’t at all as good as other MM locations 0
