Cooking steak can be intimidating, I know it used to intimidate me. I think it was because steak is usually a more expensive cut of meat and I did not want to mess it up. Steak on its own has incredible flavor and texture. This skirt steak marinade enhances the natural flavors of the steak without overpowering it. Using the right marinade for your cut of steak can elevate it from great, to absolutely amazing. And this marinade does just that for skirt steak.

Adding marinades to meat does a few things that make it a must when cooking steak. First of all marinades tenderize the meat, helping to break down the fibers that make meat tough. Marinades add flavor. Allowing the meat to sit in the marinade for even as little as 30 minutes will infuse it with intense flavor, guaranteeing a scrumptious meal. And then it adds moisture, helping to ensure your meat is moist and tender.

How To Tell When A Steak Is Done

It comes down to personal preference to know when a steak is done. But remember there is a recommend safe temperature from the USDA of 145 degrees to kill off any harmful bacteria.

To tell when its done to your liking always use an instant read thermometer and insert the thermometer through the side of the steak horizontally and go to the center of thickest portion. Keep in mind color isnt always the best way to judge doneness as some steaks are just naturally lighter than others to begin with, and you dont want to cut into a steak during cooking or youll lose some of the juices.

  • In the Refrigerator: Store your cooked steak in an airtight container. It will keep in the fridge for up to 3 days.
  • In the Freezer: You can either wrap your steak in plastic wrap or keep it in an airtight container. It will stay good for up to 2 months.
  • Reheating: First, thaw your steak overnight in the fridge. Next, let it sit at room temperature for 30 minutes. You can then warm it up in a skillet until internal temperatures reach at least 120 degrees Fahrenheit.

How Long Is Too Long To Marinate Steak

Ideally, you should not marinate a steak for more than 24 hours especially if you have a tender cut of steak. Any longer than that and the muscle fibers will break down and the texture will become mushy.

Some types of steak, like skirt steak, are naturally not very tender and should be left to marinate for a longer time in order to tenderize. For tougher cuts of beef, I recommend you prepare the marinade the night before and let the steak tenderize and soak up all the flavors overnight. Then, just grab and cook.

How Long Should You Marinate Steak With This 3

You dont need to marinate a steak for as long as you might think. In our first 3-ingredient steak marinade test batch, our top sirloin steak was in the marinade for only 30 minutes before cooking it. Was it long enough? You bet! The flavor coated the exterior of the steak, seasoning each slice to the perfect amount of flavor. The flavors were stronger when we extended the marinade time to four hours but not necessarily any better or worse than our 30-minute marinade.

You certainly dont want to marinate the steak for longer than 24 hours. The acidic component of the marinade will work overtime. Instead of tenderizing the outside of the meat, it will turn it to mush. Thats not exactly the texture were hoping to use to describe our steak. The salt in the marinade can also become too intense over time, so try to keep your marinade time between 30 minutes and 12 hours for the best results.

  • If you make your steak marinade in advance, keep it sealed and refrigerated and use within 3 days.
  • The marinade can be frozen for later use in a heavy-duty freezer bag for up to 3 months.
  • You can freeze uncooked steaks in marinade. The steaks will marinate as they thaw in the fridge overnight before cooking.

Even though I swear by the 20-minute time on this marinade, you can soak it for longer. For example, if you have extra time or want to make this marinade in the morning or the night before, you can either make it and marinate it longer or put it all together 20 minutes before you are ready to grill.

If you are using a lesser cut of steak, you can go longer to really tenderize it. If you get in a real pickle or forget about it, your steak will still be good to cook for up to 24 hours in a marinade.

How To Cook The Steaks In A Skillet

If you dont have a grill handy, you can also cook these steaks in a hot skillet on the stove. I recommend a cast iron skillet, if you have one, but if not, any heavy-bottomed skillet will work.

  • Place the skillet on the stove and turn the heat on the stove to high. Wait for the skillet to get hot before adding the steaks. Just like when cooking steaks on the grill, adding them to a hot skillet will ensure that perfect seared crust on the outside of the steaks.
  • Add a small amount of oil to the skillet to prevent sticking and give the steaks a nice sear. Depending on how large the skillet is, 1-2 teaspoons will do.
  • Pat the steaks dry before adding them to the skillet. When placing steaks on the grill, any excess marinade will drip through the grill grates. When cooking the steaks in a skillet, the marinade has no where to go, so it will stay in the skillet and you wont get that beautiful sear on the outside of the steak.
  • For a perfect medium rare steak, cook a 1 inch thick steak in the skillet for 4-5 minutes per side. For a steak that is 1 1/2 inches thick, add 1-2 minutes to the cooking time per side.
  • Insert an instant read thermometer into the steak. Remove the steak once it reads 130°F for a medium rare steak. For a medium steak, wait until it reaches 140°F and for a medium well steak, wait until it reaches 150°F.

    How To Make Steak Marinade

    Making the marinade itself takes practically notime! You will need a bowl and cling film or a Ziploc bag.

  • Make the marinade. In a mixing bowl or large Ziplock bag, combine cup of soy sauce, cup of lemon juice, cup of olive oil, 2 tablespoons of Worcestershire sauce, 1 tablespoon of garlic, and ½ a teaspoon each of salt and pepper. Add 1 ½ pounds of steak and seal or cover the bowl with plastic wrap.
  • Marinate the steaks in the refrigerator for at least 1 hour, preferably overnight, but no more than 24 hours.
  • Cook your steak. Grill or pan sear your steaks until they reach your desired doneness.
  • Rest and Serve. Transfer to a plate or cutting board and top each steak with 1 tablespoon of butter. Loosely tent foil over the top and let rest for 10-15 minutes before eating.
