What To Look For

They are great values and great meat.” And, if you’re devoted to real Texas-style barbecue, you may be lucky enough to get some top-shelf brisket at your favorite joint: “The BBQ guys are getting much more Prime brisket now, thanks to us,” says King.

Trimming Your Prime Rib Roast

Start by placing your prime rib roast on a clean cutting board. You’ll want to have a very sharp knife, like the Victorinox boning knife we use at work and home. Prime rib is a fatty cut, and that’s why it’s so tasty and expensive. High-quality prime rib is nicely marbled with fat and tender to the touch. You can buy an untrimmed prime rib roast and have more control over the amount of excess fat on your roast.

Place the prime rib roast on the cutting board with the fatty side up. The thick area of fat is called a cap. Using your sharp knife, slice the excess fat cap off, leaving one-quarter to one-half inch. Try not to cut into the meat because you’ll be cutting off flavor. When the prime rib cooks, the fat will create juiciness and lots of excellent beefy flavor. You don’t want to remove too much when you are prepping for cutting steaks. Sometimes when you smoke a whole rib roast, you don’t even trim the cap.

Next, flip the rib roast over to the bone side. There is probably a purplish membrane along the bones. Use the tip of your knife to work the edge of the silver skin up, grasp it in your fingers, and pull it loose. You might need to use the belly of your knife to help the skin off.

I havent eaten steaks from all these retailers but I have eaten many, many steaks from Snake River Farms including these prime ribeyes. They do taste much better than any prime steak I have ever gotten from Costco. Will the steaks from the other retailers taste just as good as Snake River? I am not sure. My guess is steaks from Lobels and LaFrieda will both be excellent as will most of the others but for $25-$108 less for a similar grade of steak I would go with Snake River Farms.

Whether you prefer rib eye or prime rib steak, enjoy it in moderation. According to a June 2017 review published in the International Journal of Preventive Medicine, red meat doesn’t significantly raise the risk of heart disease when consumed in moderate amounts. This risk is largely associated with the fat and preservatives in meat. To stay safe, choose unprocessed, lean cuts and trim any visible fat.

Another review, featured inExperimental Biology and Medicine in April 2017, assessed the relationship between red meat consumption and colon cancer.
