BUY NOW $152190 Although billed as a santoku, if you compare the shape and width of this blade to the chai dao above, its pretty similarthe main distinction being a straighter cutting edge. And it has a similar scoopability factor, too, all good things.

On the Sur La Table website, the Epicure santoku is tagged a cooking class favorite. Although Im perpetually wary of hype, having taken it for a test drive in the store, I can totally see why its so popular with the class. It nestles into your palm like it belongs there, and its uniquely handsome to boot. It suffers none of the bulkiness I felt with the Epicure chef knife.

But it is pricey. If youre looking for pure cutting power, there are better values to be had. Otherwiseif youre seeking a kitchen knife thats well-made, stylish, and most of all comfortable, the Wusthof Epicure santoku is highly worth investigating.

Which Wusthof Line Is The Best

When it comes to the best lines of Wusthof, the Classic Ikon is the best set of knives. This is largely due to the look and design. However, they use the same steel on all knives the only difference is whether you want forged knives or stamped knives .

Beyond that, you will need to determine which knives you want and if a complete knife set makes sense instead of just buying the ones you know you will definitely need. There are certain kitchen knives every home should have, but that doesnt mean you need them all right now.

Given the price points of all of them, the Classic Ikon set has several block options and is a beautiful, meticulous knife set.

    • Polyoxymethylene which has a tighter molecular structure to resist fading and discoloration
    • Each knife blade is buffed and polished by Hand
    • Block has room for other knives

    Cons:

    • Fewer knives than other knife sets at this price point.
    • Higher priced than other sets

Overall Review of the Wusthof Classic Ikon 12 Piece Set :

Were kicking off our Wusthof kitchen knife set reviews with a great set! When I look at this set, it screams high end. The custom-designed handles look like they fit your hand nicely, and the quality of the steel means you should have no problem using them for years to come.

This set is also available in a cream color called Wusthof Classic Icon Creme. You can see it here.

    Wusthof Epicure Chef Knife

BUY NOW $130190 The Epicure was custom-designed for Sur La Table in partnership with Epicurean . Thus, the recycled-wood-fiber handle thats made of the same material as Epicureans Richlite boards. The Wusthof engineers went back to basics and retooled everything, not just the handle. Notice the subtle, continuous arc of the spine, the shape of the blade , and the full-sized bolster . Its even got a ceramic coating for protection and to help prevent food from sticking.

The blade is a touch wider than both the Classic and Ikon which means it will offer more knuckle clearance. The handle is roomy as well. So, if you have large hands and are always feeling cramped, the Epicure is worth checking out.

For me, I have reservations: 1) My hand tends to swim in the handle, and 2) the balance tips forward too much. Some folks may not mind this, or even like itI prefer a knife more evenly balanced. Bottom linealthough I love the look of the Epicure, I still favor the Ikon series or the Classic. Small collection: 8 knives total including 6-, 8-, and 9-inch chef knives and a 7-inch santoku which I lovebecause the handle feels better and it balances perfectly. Bottom Line: Which Should You Choose

    Wusthof® Classic Ikon 4

The three main differences between the Wusthof Classic, Ikon, and Classic Ikon lines are material, design, and price. To decide which line is best for you, you need to consider each of these differences carefully and prioritize the ones that matter most to you.

Wusthof Ikon handles are made of a beautiful natural wood that requires a little bit of extra care, but it adds an elegance that Classic and Classic Ikon knives lack.

Wusthof Classic handles have flat sides and a distinct curve near the butt end of the handle. Wusthof Ikon and Classic Ikon handles are more rounded and have smoother curves.

Wusthof Classic knives have a full bolster while the Ikon and Classic Ikon have a half bolster between the blade and handle and another bolster at the butt end of their handle.

Both designs are undoubtedly beautiful, but the best one for you is a matter of personal preference. Its tough to decide by looking at pictures, so I highly recommend ordering one knife and testing it out before committing to an entire set.

Lastly, Wusthof Ikon knives are significantly more expensive than Wusthof Classic knives. If youre in love with the shape and design of Ikon and are okay with a black synthetic handle, Classic Ikon is a great option that wont break the bank.

If youre still not sure which ones are best for you, Classic, Ikon, and Classic Ikon are available on Amazon, where you can learn more and read hundreds of reviews.

Wusthof Chef And Paring Knife Sets

This is my favorite type of knife set to recommend because you get two out of the three core knives every kitchen should havea chef and a paring knife. Pure muscle, no fat.

The sets below feature an 8-inch chef and a 3 1/2-paring knife. An 8-inch chef knife is the standard for home kitchens and theres a reason whyits big, but not too big. These sets run from around $120 to $200. There are cheaper chef-paring knife sets that feature 6-inch chef knives. But unless you know for sure you want a shorter chefs, I dont recommend them.

    Wusthof Classic 2-Piece

As Ive already mentioned, santoku knives can stand-in for traditional chef knives. The size I recommend is a 7-inch blade. And thats the size that comes with the sets below.

    An Overview On Steak Knives

If youre a carnivore, youll want to consider adding a set of steak knives to your dining set.

Meat-eaters only need apply when we are talking about steak knives, says our expert , dining editor of Better, a lifestyle website and print magazine. need to be kept super sharp to cut through thick proteins.

This is especially important if your main source of protein comes from meat and poultry. Traditional dinner knives arent going to be sharp enough to cut through a thick steak or chicken breast.

As you shop for the best set of steak knives, keep the following features in mind:

Start off examining the steak knifes blade. Most are made from a quality stainless steel that resists rust and corrosion. Depending on the how the knives are forged, however, they may come sharpened with the need to be resharpened every so often, or they may not require sharpening at all, like the AmazonBasics Kitchen Steak Knife Set, 8-Piece.

Youll also want to check the blades edges. Straight edges are nice if youre looking for clean cuts, while micro-serrated edges are designed to assist you with cutting through tougher meats. There are also models, like the Emojoy Steak Knives, that feature rock-hollow dimples, which help guide the beef and poultry off the knife after its been cut.

Budget Pick: Chicago Cutlerys Walnut Tradition Set

Wusthof Ikon vs Wusthof Gourmet Steak Knife.

Chicago Cutlerys Walnut Tradition steak knife set is the best low-cost set out there. The knives are not perfect by any metric: the blade-edges are coarse and uneven at 60 grams/2 ounces, theyre a bit lighter than wed like and the fit-and-finish is indifferent. In fact, they appear just to be industrial-grade boning knives with steak knife handles slapped on. Put it this way: if the Messermeisters give you more than you pay for aesthetically, these give you exactly what you pay for, and not a penny more.

They work far better than the serrated blades you usually have to settle for at this price.

But theyre built to last and they work perfectly welland, more importantly, they work far better than the serrated blades you usually have to settle for at this price. Theyre a great choice for outfitting a crowd, taking along on country picnics, or while car camping. Not fancy, perfectly functional, and if you lose one, youll shed no tears.

Upgrade Pick: Wsthof Classic Ikon Set

*At the time of publishing, the price was $300.

Our testers all favored the Ikons classic understated elegance.

The Wüsthof Classic Ikon steak knives arent cheap, but they are the cheapest of the three high-end sets that we tested. With little to distinguish between the high-end sets on performancewhich was universally exceptionalaesthetics played the largest role in this pick, and our testers all favored the Ikons classic, understated elegance. Their razor-sharp blades have the ideal upswept shape. The unique double-concave curves of their satiny black POM handles fit the hand wonderfully both our smallest and our largest tester found them the most comfortable to hold of all the knives we tested. Their full-tang construction adds strength and, at 77 grams/2.6 ounces, pleasing heft. Lastly, their construction is flawlessas it should be for the price. Because in truth, its the flawless fit-and-finish, more than anything else, that separates an exceptional luxury steak knife from a really great mid-priced oneand that you pay for.

One criticism: the Ikons come in a simple, clear plastic box. Its sturdy enough to use for knife storage but left us wishing for something more distinguished-looking, particularly if the knives are intended to be a gift. For about $100 more, the blackwood-handled Ikon steak knives come in a walnut case its unfortunate that this is not an option for the standard model.

The 3 Major Types Of Steak Knives

Steak knives can be classified into three distinct classes according to their type of blade. The three major types of steak knives include:

  • Serrated Blade Steak Knives: These are steaks knives that have jagged edges. They require more effort to cut and they tend to leave ragged edge on the meat. The only advantage of the serrated steak knives is that they do not need to be sharpened.
  • Straight Edge Blade Steak Knives: Their cutting edge does not have serrations. These types of steak knives cut easily and leave a smooth edge on the meat. They however need to be sharpened frequently. The straight edge blade steak knives are the most commonly used types of steak knives.
  • Hollow Edge Blade Steak Knives: These types of steak knives are characterized by measured indentations along the blade. The indentations help to create air spaces that between the blade and the meat. These air spaces help to prevent meat from sticking on the blade and also allows for finer slices. Hollow-edge blade steak knives are not so common like the straight edge blade steak knives.

Classic Vs Ikon: What Are Their Similarities

As I mentioned in the beginning, Wusthof Classic and Wusthof Ikon knives are more similar than they are different.

They are both manufactured the same way using the same material for their blades. They are sharpened to the same degree, and the metal of their blades have the same hardness. Lastly, they come with the same limited lifetime warranty that is standard across all Wusthof forged knives.

In the following sections, I provide more detail on these similarities so you can learn even more about Wusthof knives before investing in a set.
