There’s no technical definition of “steak tips” according to the USDA glossary, so the meat can really be trimmings from any other cut of beef. Typically, steak tips come from two parts of the cow. One kind comes from tender, expensive cuts in the middle of the cow, such as the tenderloin. While these are a superior cut, they are not what you typically find labeled as “steak tips” in the grocery store. More often, true steak tips come from various muscles in the sirloin and round and cost about $5 per pound. Most often, you’ll find this cut labeled as “sirloin steak tips” or “sirloin tips,” which is a single muscle that butchers call flap meat.

Choosing The Right Cut Of Steak

Cuts of steak can be broken down into three sections. Startingon the upper back and moving down to the mid-back are the ribs, theshort loin and the sirloin.

  • The rib area contains cuts such as the Rib-eye Steak, the RibRoast, and the back ribs. This is the least tender section of thethree.
  • The short loin area produces the T-bone, Top Loin Steak, Tenderloin and the Porterhouse.
  • The Sirloin gives the Sirloin Steak, and the Top Sirloin.
  • Other steaks like the chuck, round, and flank come from those areas and tend to be tougher cuts of meat.
  • Strips steaks, such as New York Steak are cut from the T-bone area.

If you are looking for the most tender cut of beef, it is thetenderloin. Other cuts from this area are filet mignon,chateaubriand and tournedos. Though these are the most tenderthey are also less flavorful.

The rib-eye, or rib steak can be a little less tender but far moreflavorful. Small streaks of fat throughout the meat mean moreflavor. So with more marbling you get less tenderness but moreflavor.

Finding a balance between the two, gives you the best steak. Top loin and sirloin are slightly less tender but have more flavor thantenderloin. With cooking cuts of meat such as these there is noneed to marinate or even cook past medium rare.

Some of the most flavorful but least tender cuts of beef aretri-tip or flank steaks. These are also favorites on thebarbeque. Your best bet is to marinate these cuts beforecooking. Also, leave the fat on until after the meat is cooked.

Grilled Steak Tips Marinade Ingredients:

  • Soy sauce
  • Dried ginger powder
  • Honey
  • Oil
  • Green onions

Step 1: Prepare the Grilled Steak Tips Marinade

First, whisk together the soy sauce, rice vinegar, ginger, honey, garlic and oil.

Step 2: Marinate

Add the steak tips and the green onions, and then toss to coat. Refrigerate the meat while it marinates for at least 30 minutes.

Step 3: Grill Steak Tips

Heat a grill over high heat. Remove the steak tips from the marinade, place directly on the grill, and grill for about 4-5 minutes per side. You do not need to close the grill while cooking the steak tips.

Phantom Gourmet: Dom’s Sausage Company In Malden

MALDEN – A family tradition started three generations ago has grown into a massive meat emporium in Malden. That’s where Dom Botticelli, his wife Ashleigh, dad Buddy, mom Nancy, and his uncle Steve run Dom’s Sausage Company.

“Our tag line is family, food, and tradition. We keep with the tradition that my grandfather started back in 1936 as a small sausage company,” Dom said. “He served his sausages and became famous with that, and ever since then, my father took off with the full service deli and butcher shop, and has really made the marinated steak tips famous. That’s what people really know us for today.”

While this place is still named Dom’s Sausage Company, these days, it’s all about the steak tips.

“It kind of just happened that way, you know? We started as Dom’s Sausage Company, but then people just talk about the steak tips, and everybody wants to come here for the steak tips,” Ashleigh said.

So what makes these tips so tasty? It’s the marinade, created by Dom’s dad.

“The flavor is very unique. It’s a sweet flavor, but it has like hints of caramel and a smokiness to it as well. And when people have it they just never had anything like it before,” explained Dom.

The recipe is such a secret, even Dom’s wife doesn’t know it.

“I just know that there’s some sort of smokiness to it, there’s some sort of sweetness to it, and it all just goes so well together,” Ashleigh laughed.

“It’s unique, it’s different, it’s old school, but people like that,” Uncle Steve echoed.

  • Allow at least 30 minutes for the steak tips to marinate. If it’s more convenient, you can leave the steak tips in the marinade overnight.
  • Leftover grilled steak tips will keep in an airtight container in the refrigerator for 3-4 days. Tuck the meat inside sandwiches the next day, or slice it and use it to top a steak salad!

Total grilling time will depend on the size, shape and thickness of your steak tips, as well as the desired level of doneness. Here’s a handy chart that will help you determine the correct amount of time for your beef however, keep in mind that a meat thermometer is always the most reliable way to know when the steak is ready.

  • For medium-rare steak tips: about 4 minutes on each side, or an internal temperature of 130-135 degrees F.
  • For medium steak tips: about 5 minutes on each side, or an internal temperature of 135-145 degrees F.
  • For medium-well steak tips: about 6 minutes on each side, or an internal temperature of 145-155 degrees F.
