What Is Beef Grading

The U.S. Department of Agriculture administers the beef-grading program and certifies the score given each cut of beef.

USDA inspectors determine the quality rating of beef by considering the following characteristics:

    Of course cooking a steak on a grill outdoors is a special thing. Sometimes the weather won’t allow for that. So when cooking a steak indoors I always do it on cast iron.

    How To Cook Baseball Steak On The Grill

    If you dont like cooking in the oven, you can try cooking on the grill.

    Using the grill for the top sirloin cut is actually better as you will end up with better results if you follow the correct cooking times and temperatures.

    1) First, turn on the grill and heat it to a medium-high setting. While you wait for the grill to heat, you can season the meat and brush some melted butter on it.

    2) Then, take the meat and sear it for 2-3 minutes on each side over the hottest part of the grill.

    3) After that, move it to a lower heat side and close the lid, allowing the meat to continue cooking for another 6-10 minutes, depending on your preference.

    Even when using the grill, it is recommended to use a meat thermometer to monitor the meats internal temperature, so it is perfectly cooked.

    Cooking Baseball Steak Sirloins

    A medium rare top sirloin steak is the most common doneness for this cut because it helps preserve the texture and juice within. You can reach a medium rare cook the best by cooking in the oven or on the grill. If your heart is set on a pan sear, dont worry you can still sear your steak in your cast iron skillet. But, since its so thick, youll need to finish it off in the oven.

    The first way were going to look at is in the oven. Before you do this, youll want to ensure that you have defrosted your meat thoroughly and added seasoning.

    If youve already defrosted your meat and added your seasoning, you can place it in a skillet to sear with some butter. Youll want to sear it on each side for about four minutes.

    While youre searing the beef, turn the oven on and heat it to 450ºF. At this temperature, you can cook the meat without drying it out. A dry out piece of baseball meat isnt something you want.
