Grilling steak over charcoal can be tricky. It’s difficult to know the exact temperature of the cooking surface, and that temperature can vary depending on the type of charcoal you used and how evenly you spread the charcoal.

Briquette charcoal can give you temperatures of around 500 degrees Fahrenheit. Lump charcoal may be able to generate higher temperatures. If you add dry wood chips, they could flare up and burn your steak. If you add soaked wood chips, they will cool down the charcoal. A foil pack added before cooking is probably your best bet.

You want your grill to be hot so that when you place the meat on the grill rack it will sear on contact, not stick.Tip: If you dont know your grills temperature, you can use your hand to help gauge the heat. Place your open palm about 5 inches above the grill rack and start to count the number of seconds you can hold your hand in that place before moving your hand. If the fire is hot, youll move your hand in 2 seconds. You will be able to keep your hand there for about 5 seconds if its medium heat. If its a low temperature, you will move your hand in about 10 seconds.
  • Remove the steaks from the grill when they reach your desired temperature. Use a meat thermometer! Its the only real way to tell if meat is done.
  • Your steaks will continue to cook after you take them off the grill.
  • Make sure you let the meat rest. Not resting meat is one of the biggest mistakes people make with steak. If you dont let meat rest and you cut into it immediately, your plate will be full of steak juice and your steak will be drier.
