The Cuban Twist Marinade

Cuban cuisine is rich with citrus, cumin, and spices. This steak marinade goes well with strip steak and a tropical salad

What You Need

  • 1/4 cup of orange juice
  • Juice of 1/2 fresh lime
  • grated lime zest

What To Do

Combine the marinade ingredients together in a bowl. Add the steak and turn, coating both sides.

Refrigerate a minimum of 30 minutes.

Heat 2 teaspoons of olive oil on medium-high in grill pan. Grill the steak for about 4 minutes on each side, until meat is as well done as you prefer. Slice and serve.

Can You Make These Steaks Into Shish Kabobs

Yes! Sirloin is one of the best cuts of steak for making shish kabobs. When using this marinade to make kabobs, I recommend cubing the steak, then adding it to the marinade. This means, more of the steak surface area gets to soak up the delicious marinade.

After marinating the cubes of steak for at least 20 minutes, skewer the steak by itself or with veggies like bell peppers and onions. Grill the steak shish kabobs over medium-high heat for 4-5 minutes, flip and continue grilling for an additional 4-5 minutes.

When choosing a steak to buy, keep in mind that cuts closer to the hooves and horns tend to be tougher than those further away. We find that steaks from the leg and shoulder areas are ideal for marinating because these are the muscles that work the hardest on a cow. Flank steak, hanger steak, tri-tip, bottom round and eye of round are all great if youre looking for the best steak to grill and marinade.

The hubby and I LOVE to grill steak for special occasions and this marinade is always our go-to. And best part? It only required 4 ingredients. We got it from a neighbor years ago, and Im not sure that well ever find another Steak Marinade Recipe that beats it!

Can You Use This Marinade On Other Steaks

Yes! Because this marinade contains vinegar, which is a steak tenderizer, you can use it to tenderize and flavor any of your favorite cuts of steak. I do not recommend marinating an already tender cut, like a filet mignon.

For more tender steaks, like the sirloin pictured throughout this post, a ribeye or New York steak, I recommend a quick marinade between 20 minutes and 2 hours. For a tougher cut of steak, like a flank or strip steak, I recommend marinating for 4-8 hours.

Try the marinade with any of these cuts of steak.

How To Make The Perfect Steak

You need 3 things in order to have a delicious steak:

  • A good cut of steak Ask your butcher for recommendations. If you will be cooking steak in the oven, you want a different cut of beef than one for grilled steak.
  • You must have a good meat marinade. Done. Its right here. The BEST Steak Marinade in Existence! This recipe will give you enough marinade for 4 to 5 pounds of meat.
  • You must know how to grill a steak properly. Dont undercook it, and dont burn the poor thing. My husband is the grilling master of our house. If you dont have someone to grill for you or you cant do it, check out this post on how to grill steak.
  • Once you have these three things, make this homemade steak marinade. It really is delicious! I am seriously now thinking of buying enough rib eye or tri tip to last me the entire week so I can eat more of this!

    How To Cook The Steaks In A Skillet

    If you dont have a grill handy, you can also cook these steaks in a hot skillet on the stove. I recommend a cast iron skillet, if you have one, but if not, any heavy-bottomed skillet will work.

  • Place the skillet on the stove and turn the heat on the stove to high. Wait for the skillet to get hot before adding the steaks. Just like when cooking steaks on the grill, adding them to a hot skillet will ensure that perfect seared crust on the outside of the steaks.
  • Add a small amount of oil to the skillet to prevent sticking and give the steaks a nice sear. Depending on how large the skillet is, 1-2 teaspoons will do.
  • Pat the steaks dry before adding them to the skillet. When placing steaks on the grill, any excess marinade will drip through the grill grates. When cooking the steaks in a skillet, the marinade has no where to go, so it will stay in the skillet and you wont get that beautiful sear on the outside of the steak.
  • For a perfect medium rare steak, cook a 1 inch thick steak in the skillet for 4-5 minutes per side. For a steak that is 1 1/2 inches thick, add 1-2 minutes to the cooking time per side.
  • Insert an instant read thermometer into the steak. Remove the steak once it reads 130°F for a medium rare steak. For a medium steak, wait until it reaches 140°F and for a medium well steak, wait until it reaches 150°F.
  • Sugar Completes The Flavor Profile

    How to Marinate a Steak

    Something sweet balances out the flavor profile of the marinade. I love to use honey, brown sugar, coconut sugar or agave. Fruit juice can be a delicious and flavorful addition. Anything sweet will do the trick some recipes even call for soda. Another hidden benefit of some sugar in your marinade is that it creates a better sear on the meat. The sugar will caramelize and form a delectable, crispy crust that gives meat great texture and multidimensional flavor.

    Those four components create a great basic marinade that will achieve tender, juicy success. However, theres endless options for adding herbs, spices and other ingredients to customize and enhance the flavor of the meat. Onions and garlic are reliable classics simply finely chop and mix them into the marinade. Other herbs like thyme, rosemary and sage can add layers of flavor and savory goodness. More unusual ingredients like coffee or beer can complement the rich flavors of a great steak in a really memorable way.

    What Is Steak Marinade

    Steak marinade refers to a combination of ingredients added to steak to tenderize and add flavor. Steak marinade can be made of liquids, like my recipe below, or a combination of dry ingredients thats most often referred to as a dry rub. When I make a marinade, I aim to combine the following: an acid to tenderize + an oil + flavor. For my acids, I usually use soy sauce, lemon juice, orange juice or even Dr.Pepper or Coke. I prefer using a light olive oil in my marinades. I always add some salt for flavor, but I also like to add garlic, onion or onion powder and dried seasonings. There are so many types of marinade its always fun to try new recipes!

    Then, place the marinade and meat in a sealed plastic bag or glass container so that the beef can sit in the liquid. We like to use 1 gallon Ziploc bags since it makes it easy to periodically flip the beef so that the marinade works in evenly. We dont recommend using a metal container since the acidic ingredients can react with metal.

    Lastly, make sure to place the container in the refrigerator as the beef marinates. Never marinate beef at room temperature.

    Other Beef Cuts Other cuts of beef are totally acceptable with this marinade. Other good choices would be tri-tip, flank, skirt or sirloin. Honestly, any cut of beef that youd grill would be a great candidate for this steak marinade.

    Root Beer, Dr. Pepper or Sprite- You use soda pop in a meat marinade simply for its delicious flavor and all that liquid sugar. It is able to penetrate the meat so deliciously! If you find yourself in a pinch, you can use Root Beer, Dr. Pepper or even Sprite in place of Coca Cola. Steer clear of diet sodas- they dont taste the same after being grilled. Im talking about you, weird after taste.

    Lime Juice or White Distilled Vinegar You can substitute lime juice if you dont have lemon juice on hand. You can use it as a one-to-one replacement.

    Vegetable Oil- If you dont have canola oil, vegetable oil or any light colored oil with a higher smoke point will work just as well.
