I first had this dish years ago at Olive Garden. It is one of those dishes that I grew to crave. There is a lot going one here, but somehow it all works.

Instead of the traditional chicken with alfredo, it’s filet mignon medallions. There’s a delicious balsamic reduction drizzled over the top to add a sweetness to offset the savory components. Spinach is added directly to the sauce to wilt and add color and texture.

When I made this Olive Garden Steak Gorgonzola and tasted it for the first time, I was transported to Italy. Just kidding, but I was transported to having it at Olive Garden. It’s just as good, if not better than the restaurant version. And, by making it at home everyone in the family can enjoy it at a fraction of the price. Plus, if they aren’t going to bring back Olive Garden Steak Gorgonzola, I needed a way to still enjoy it.

The Olive Garden Steak Gorgonzola Alfredo is a recipe that so many of you have requested that I would do, so I knew this had to be a delicious recipe to try to recreate.

If you love steak and alfredo sauce, this may be the perfect last meal for you. This method includes a perfectly seared steak served with the famous Olive Garden Alfredo Sauce. This recipe also includes a touch of fresh spinach and just a hint of rich gorgonzola cheese that you will love.

When I first tried this in the Olive Garden, I was blown away with the complexity of the dish. And we are adding just a couple of extra ingredients to make this dish taste amazing.

Gorgonzola is a type of blue cheese. It is stronger than your everyday blue cheese. So you can use blue cheese with this recipe if you desire. Gorgonzola cheese can be found in most grocery stores. If you cannot find gorgonzola, you can use blue cheese.

One of the things I like most about recreating a recipe at home is I get to make choices when I cook. For the steak, I used a ribeye cut when I prepared this delightful dish. I cooked my steak as a whole, then cut it into large pieces and placed it on the pasta.

The Olive Garden cuts their steak first and then cooks it. I like my steak rarer so by cooking the steak as a whole I feel I can get more of a rare portion of the steak. You can cook the steak as you desire, and best of all you can use the cut of steak you like the most.

Beef With Cheese Tortellini

Oh. Mah. Gawd. It’s so unbelievably good. Tons of food too, and it’s rich – so there’s always leftovers. It’s got asiago cheese tortellini, and little braised beef medallions and mushrooms/diced tomatoes, in a marsala-basil cream sauce.

Totally! While this recipe has a few more bells and whistles, making alfredo sauce at home only takes a few simple ingredients: butter, cream, and parmesan cheese. Freshly grated parmesan melts perfectly into the sauce and adds a perfect saltiness to the dish. Simply omit everything else and you have a simple alfredo sauce at home.

Selecting Your Cheeses For The Alfredo

Cheese is definitely the star here, so ideally you want to get good quality cheese, especially the Parmesan. None of that ground, canned stuff!

I love to buy wedges of Parmesan Reggiano cheese and use one of my favorite tools, a food processor, to shred the brick and then I keep it in my refrigerator in plastic bags so that I always have fresh, quality cheese shredded on hand.

The cheese makes a difference here, so I strongly recommend buying the fresh cheese.

True Parmesan cheese can be expensive, but there are variations that taste very similar.

I tend to get Romano or Parmesan Romano for the same taste with a lower price tag.

And while the recipe calls for Gorgonzola cheese, any type of blue cheese works great!

What makes this dish so amazing is truly the balsamic.

The acidity cuts through all of the richness, plus balsamic is just amazing in general. On everything. So good.

And yes, this dish is quite rich, being made from cream and all.

But I find that because it is heavy, I eat a lot less of it so it is not all that bad, right??!?

Plus, the tomatoes, spinach, and steak make it stretch pretty far as well

I also love to use this quick and easy balsamic glazeon top to help cut through the richness of the sauce.

Well, Kelsie has an allergy to tomatoes, so we omit this ingredient. However, you can purchase the jar of sundried tomatoes, and place ¼ cup chopped sun dried tomatoes right at the end, before you plate up.

Place your balsamic vinegar in a small pot and heat to boiling. Once it reaches boiling, reduce to a simmer for 15 minutes or so. Your looking for a slightly thickened texture.
