Whether it be Kansas City Strip or New York Strip listed on the label, be sure your steak is completely thawed. We recommend thawing in the refrigerator for at least 24 hours. Allowing your steak to rest will give the juices time to sink back in and throughout the meat, keeping it moist and flavorful.
  • To check the degree of doneness, use a meat thermometer to measure the internal temperature of your steak.

¼ cup kosher salt

1 tablespoon freshly ground black pepper

6 cloves garlic, minced

6 sprigs thyme, minced

4 tablespoons extra-virgin olive oil

4 Kansas City or New York strip steaks

In a medium glass or plastic container with a lid, mix salt, pepper, garlic and thyme. Stir in olive oil. Rub steaks into mixture on both sides, cover container and set aside about an hour, until steaks come to room temperature. Note: The rub can be mixed with a food processor to form a paste.

Preheat grill to 400 degrees, and oil grill grates. Place meat on grill close lid and cook 4 minutes. Rotate steaks 45 degrees and cook another 2 minutes.
